Аннотация
Mycotoxin contamination in food systems, particularly in edible oils derived from mouldy oilseeds, remains a persistent safety challenge due to the hydrophobic and viscous nature of oils. Conventional detoxification approaches often suffer from limited selectivity, inefficient mass transfer, and risks of quality deterioration. Metal-organic frameworks (MOFs) have recently emerged as promising methods for mycotoxin removal, owing to their tunable porosity, redox activity, and interfacial compatibility. This review summarises recent advances in MOF-based strategies for mycotoxin detoxification in food systems, with a particular focus on synergistic adsorption and oxidative degradation mechanisms. Key pathways, including adsorption-catalysis coupling within confined porous environments, enzyme-mimetic redox reactions, and photocatalytic generation of reactive oxygen species, are critically analysed. The performance of MOFs in oil-phase food matrices is evaluated in terms of hydrophobic compatibility, stability, reusability, and food safety considerations. Finally, current challenges and future perspectives for translating MOF-enabled detoxification strategies into practical food applications are discussed.
