Аннотация
Oleogels have garnered significant attention as a substitute for plastic fats to diminish the levels of saturated and trans fatty acids. This study examined the impact of varying ratios of monoglyceride stearate (MG) and beeswax (BW) on the physicochemical qualities, oxidative stability and formation mechanism of rice bran oil-based oleogels. The results demonstrate that the oleogel formulated with a high gelator concentration displayed a more stable crystalline network. MG-based oleogels showed higher brightness, hardness (5.195 ± 0.333 g), oil-binding capacity (89.26 ± 0.12 %), and oxidative stability. This was attributed to the fact that van der Waals and hydrogen bonds were more pronounced in MG-based oleogels. Furthermore, the reduced proton mobility of liquid oil in MG was attributable to the tighter binding of MG. Overall, these findings provide valuable insights into the advancement and application of the rice bran oil-based oleogel.
