Postbiotics: A Biobased Frontier for Enhancing Food Safety, Functional Foods and Human Health.
Аннотация
Postbiotics are preparations of inanimate microorganisms with or without additionally adding their components that confer a health benefit on the host. Their non-viable nature can provide advantages over live microbial products with respect to processing, storage and formulation. However, safety and functionality remain dependent on the microbial strain, preparation method, composition, dosage and application matrix. This review critically examines current approaches for postbiotic production, mechanisms of biological activity, applications in food safety and functional foods, interactions with food matrices, safety assessment, standardization and regulatory conditions. Recent reports provide evidences from food models which indicate that selected postbiotic preparations can inhibit foodborne pathogens and relieve digestive system related diseased conditions. In contrast, immunomodulatory, metabolic, antioxidant and gut-barrier effects remain heterogeneous and are supported by a combination of in vitro, animal and emerging human evidence. The review also distinguishes between postbiotics preparations and purified microbial metabolites, quantitative characterization, preparation-specific safety and challenges of translating laboratory findings into reproducible food and human applications.
