Аннотация

Food-hydrocolloid performance depends on polymer architecture and processing history rather than ingredient name alone. This critical narrative review evaluates CAZyme-guided modification of cactus-derived pectic materials and related regional polysaccharides for food hydrocolloid applications. Opuntia mucilage and pectic fractions are the focal substrates; non-cactus pectins provide the closest mechanistic evidence, and arabinoxylan is retained only as a bounded comparison for substitution and oxidative crosslinking. Starch is considered only as a limited process benchmark and is not used to infer cactus-polysaccharide behavior. The evidence is organized as four incomplete links: candidate selection, enzyme-to-edit, edit-to-property, and application validation. No study yet completes this chain for a food hydrocolloid, and cactus-associated microbiomes have not been shown to be superior CAZyme reservoirs. Candidate selection therefore requires reaction-specific annotation, multidomain and genomic-context analysis where relevant, expression, real-substrate kinetics, edit-state measurement, side-activity testing, and comparison with conventional hydrocolloids. Metagenomic discovery is treated as one prospective route to new catalysts, not as the evidentiary foundation of the current enzyme-to-material literature or as a validated production platform.
