Harmful manipulation by large language models (LLMs) is now a regulatory concern, yet the empirical evidence remains difficult to assess. Harmful manipulation involves multiple features: an influence goal, tactics that bypass reasons or exploit vulnerabilities, limited target awareness, successful influence, and harmful outcomes, which existing studies rarely capture together. To improve soybean meal's flavor, this study explored the effect and mechanism of dual-enzyme hydrolysis combined with γ-glutamylation on the flavor characteristics of soybean meal. Sensory evaluation revealed dual-enzyme hydrolysis significantly enhanced umami, saltiness and sweetness, while γ-glutamylation further strengthened umami and kokumi sensations.
