Foodborne and Waterborne Disease in Canada - 1978 Annual Summary.

Data on foodborne disease in Canada in 1978 are compared with data for 1977. A total of 836 incidents, comprising 642 outbreaks and 194 single cases, causing illness in 5960 persons was reported for 1978. The number of incidents and cases increased by 7.5% and 23.9%, respectively, from 1977 to 1978. Like the previous year, Salmonella spp. were responsible for more incidents (67) and cases (2171) than any other agent. Other incidents were caused by Staphylococcus aureus (31), suspect mold and yeast (17), Bacillus cereus (9), Clostridium perfringens (7), Clostridium botulinum (6), and Shigelli s

Treatment of anaerobic infections.

The anaerobic syndromes of gas gangrene and tetanus are due to systemic intoxications that develop following infection with clostridia at some site of trauma. Classically, these conditions developed as complications of accidental trauma, the spore-forming anaerobes being derived from the inanimate environment. While tetanus remains typically an exogenously derived disease, gas gangrene more frequently presents as an endogenously derived complication of elective surgery. Their treatment is briefly discussed, including the role of antimicrobial therapy. During the last decade there has been an i

[Relations between food poisoning and ascariasis].

During the examination of faeces for the causative agents of food poisoning, the search was also extended to the occurrence of worm eggs. Ascaris lumbricoides eggs occurred six times more frequently in persons affected with food poisoning than in consumers who were not harmed by the intake of poisoned food. This relationship was observed in non-specific cases of food poisoning and in those of unknown aetiology, whereas it was less pronounced in cases of specific poisoning. This difference has not been confirmed for Trichuris trichiura. It is safe to say that Ascaris infection increases the dis

Foodborne and Waterborne Disease in Canada - 1977 Annual Summary.

Data on foodborne disease in Canada in 1977 were compared with data for 1976. A total of 777 incidents, comprising 660 outbreaks and 117 single cases, causing illness in 4810 persons was reported for 1977. The number of incidents and cases decreased by 9.7% and 10.4%, respectively, from 1976 to 1977. Unlike previous years, Salmonella spp. were responsible for more incidents (32) and cases (763) than any other agent. Other incidents were caused by Staphylococcus aureus (23), Clostridium perfringens (14), suspect mold and yeast (13), Bacillus spp. (11), Clostridium botulinum (5), Shigella sonnei

Foodborne Diseases in the United States Associated with Meat and Poultry.

Surveillance data from 1968 to 1977 indicate that meat and poultry and products made from them were vehicles in over 50% of reported outbreaks of foodborne disease. The three most commonly identified vehicles were ham, turkey and roast beef. Ground (cooked) beef, pork, sausage and chicken were also frequently reported as vehicles. These foods were mishandled to the extent that outbreaks resulted in foodservice establishments (65%), in homes (31%) and in processing plants (4%). The most frequently identified factors that contributed to these outbreaks were improper cooling of cooked foods (48%)

Epidemiology of Foodborne Diseases Transmitted by Fish, Shellfish and Marine Crustaceans in the United States, 1970-1978.

Fish, mollusks, marine crustaceans and marine mammals were implicated as vehicles in approximately 11% of foodborne disease outbreaks reported in the United States during the years 1970-1978. Tuna, clams, oysters, shrimp, and crab frequently were vehicles. These animals can acquire the dinoflagellates responsible for ciguatera, paralytic shellfish poisoning and neurotoxic shellfish poisoning from their marine habitats. Many common marine organisms found in and on fish can decarboxylate histidine to histamine, and do so during improper storage of fish. Vibrio parahaemolyticus and Clostridium bo

Laboratory diagnosis of foodborne diseases.

Many bacterial species are responsible for sporadic cases and outbreaks of foodborne intoxication and infection. The foodborne diseases are classified on the basis of the pathogenetic mechanisms involved into four categories: performed toxin, enterotoxin formed in the colonized small intestine, mucosal invasion (enterocolitis) and mucosal invasion with bacteremia. Invasive and toxigenic strains of enteropathogenic Escherichia coli are discussed. In vivo test systems for the identification of enterotoxigenic organisms and tissue culture assays for the heat-labile enterotoxin of E. coli are desc

Clostridium welchii and Bacillus cereus infection and intoxication.

Clostridium welchii type A is a common agent of food poisoning when allowed to proliferate to large numbers in cooked foods, usually meat and poultry. The main factors of importance are survival of the spores, frequently found on raw products, through the cooking process, and possible contamination of cooked meats transferred to unclean containers; subsequent germination of spores and rapid multiplication of the vegetative cells during long slow cooling and non-refrigerated storage lead to heavy contamination. The toxin responsible is different from the soluble antigens, and its formation in t
