This study assessed the concentrations and temporal trends of perfluorinated compounds (PFCs) in the muscle and liver tissues of Baltic cod (Gadus morhua) from 2017 to 2023. The Environmental Quality Standard (EQS) for biota and the Estimated Weekly Intake (EWI) for human consumers were calculated to evaluate potential health risks associated with PFC exposure. Significant variations in PFC concentrations were observed across different compounds and sampling years. Perfluorooctanoic acid (PFOA) had a mean concentration ranging from 0.03 ng g⁻1 wet weight (ww) to 0.17 ng g⁻1 ww (mean: 0.093 ng

Given the high toxicity of N-(1,3-dimethylbutyl)-N'-phenyl-p-phenylenediamine (6PPD) derivatives, such as 6PPD quinone (6PPDQ) to salmon, as well as their ubiquitous presence in the environment, the contaminant of aquatic food products has drawn significant attention. However, analytical methods for p-Phenylenediamines (PPDs) and their transformation products (TPs) in aquatic products remain underdeveloped. In particular, the degradation of some compounds and strong matrix effects complicate detection. In this study, we present a stable, rapid, and sensitive method combining salt-out assisted

Human exposure to arsenic and other toxic elements such as cadmium, lead and mercury may lead to a wide range of adverse health effects. In relation to this, it is well established that the diet is the main route of exposure to both essential and toxic trace elements. In recent years, the levels of toxic elements in foodstuffs have been measured in numerous studies conducted all over the world. Scientific databases show that, in the current century, China and Spain have been the countries where the most surveys on this topic have been carried out. Regarding Spain, Catalonia is the region where

Heavy metals in the marine environment are significant contaminants that readily bioaccumulate in the tissues of aquatic organisms, particularly in filter-feeding animals such as bivalve molluscs. Human exposure to elevated concentrations of heavy metals, including essential elements such as Fe, Cu, and Zn, through the consumption of seafood can lead to various pathological effects. Research has demonstrated that among bivalve molluscs, mussels are the most effective indicators for monitoring marine pollution. Consequently, this study focused on the species Mytilus galloprovincialis to evaluat

Ocean plastic pollution is a global concern, exacerbated by the distinctive physiochemical characteristics of nanoplastics (NPs), making it crucial to study the impacts on marine animals, particularly fish, given their ecological and economic importance. Both trophic transfer and waterborne exposure are potential modes of NP entry into seafood for human consumption Although the majority of studies have focused on in-vitro impacts of NP exposure in fish, in-vivo methods can offer a more holistic understanding of these impacts. This study investigates polystyrene NP transfer to Coryphaena hippur

Microplastics, a fast-growing environmental concern, play a crucial role in developing the major pollution crisis that affects nearly the entire surface of the planet. Microplastics are tiny particles, measuring less than 5 mm which are ubiquitous, in occurrence, and found in a wide array of products including plastic packaging, synthetic textiles, seafood, fruits, vegetables, salt, sugar, bottled water, and even personal care products. The presence of microplastics in our environment and the potential adverse health effects they may cause have made them a significant perturbation in recent ye

Determining dietary recommendations for seafood consumed during pregnancy, lactation, and childhood requires consideration of the known nutritional benefits and potential harm due to toxicant exposure as they relate to child outcomes. This study aimed to describe the scope of the evidence associated with seafood-related toxicant exposure and child outcomes and to identify toxicant-outcome pairs that may have sufficient evidence to conduct a systematic review. We included studies examining seafood toxicant exposure during pregnancy, lactation, and childhood, and child outcomes. In total, 81 stu

Glucosamine (GlcN) and GlcN-based supplements, e.g. glucosamine hydrochloride, glucosamine sulfate, and N-acetyl glucosamine (GlcNAc), provide symptomatic relief to osteoarthritis patients and have been used as one of the most popular nutraceuticals. To meet the increasing demands, scientists have explored cost-effective methods for GlcN and GlcNAc production using low-cost raw materials such as seafood waste. However, the commercially available GlcN and GlcNAc production methods are environmentally harmful because of the use of toxic reagents. Moreover, the raw material used might be unsafe f

The expansion of economic activities in coastal areas has significantly increased chemical contamination, leading to major environmental challenges. Contaminants enter the human body through the food chain, particularly via seafood and water consumption, triggering biomagnification and bioaccumulation processes. The gastrointestinal tract (GIT) acts as a selective barrier, protecting against chemical pollutants and maintaining homeostasis through a complex network of cells and immune responses. This study assessed impact of tributyltin (TBT), a highly toxic organometallic compound used in anti

Fish allergy is the important food allergies in childhood, often persisting into adulthood. It can cause severe hypersensitivity reactions, including fatal anaphylaxis; furthermore, avoiding-fish diet has negative nutritional and psychological effects. Recent research studies focus on epitope structures and aim to develop sensitive and specific diagnostic tools, which have a better correlation with clinical reactions. Protocols with hypoallergenic parvalbumin or other recombinant antigens are also under study and will likely lead to new immunotherapy protocols. IgE-mediated fish allergy differ

Umami peptides have currently become the research focus in the food umami science field and the key direction for umami agent development. This is because umami peptides have good processing characteristics, umami and nutritional values. We here used virtual screening (including online enzymolysis through ExPASy PeptideCutter, bioactivity screening using the PeptideRanker, toxicity and physicochemical property prediction using Innovagen and ToxinPred software), molecular docking, and electronic tongue analysis to identify umami peptides generated from Atlantic cod myosin. Kombucha is a fermented, acidic beverage that dates back thousands of years as a remedy for various health problems in East Asia. Due to its health benefits, kombucha has gained popularity and attracted the attention of both consumers and researchers. The health benefits of kombucha are predominantly attributed to its bioactive compounds that have antioxidant, antimicrobial, probiotic, and other positive effects owing to fermentation. Many factors such as the type of the substrate used, the symbiotic culture of the bacterial yeast composition, and fermentation conditions influence the extent o

The European Joint Programme HBM4EU coordinated and advanced human biomonitoring (HBM) in Europe in order to provide science-based evidence for chemical policy development and improve chemical management. Arsenic (As) was selected as a priority substance under the HBM4EU initiative for which open, policy relevant questions like the status of exposure had to be answered. Internal exposure to inorganic arsenic (iAs), measured as Toxic Relevant Arsenic (TRA) (the sum of As(III), As(V), MMA, DMA) in urine samples of teenagers differed among the sampling sites (BEA (Spain) > Riksmaten adolescents (

Per- and polyfluoroalkyl substances (PFAS) are of high concern for the environment, wildlife, and human health due to their persistence and potential to cause adverse health effects. Despite political measures to restrict the production and distribution of PFAS and to limit the exposure of populations, PFAS can be measured at commonly high detection frequencies in human samples. Thus, this pilot study aimed to determine the serum concentrations of PFPA, PFHpA, PFOA, PFNA, PFDA, PFUnDA, PFHxS, PFHpS, PFOS, PFHxA, PFDoDA, and PFBS in 113 girls and 112 boys (age 7-10 and 12-15) from Northeastern

Marine heatwaves (MHWs) have doubled in frequency since the 1980s and are projected to be exacerbated during this century. MHWs have been shown to trigger harmful algal blooms (HABs), with severe consequences to marine life and human populations. Within this context, this study aims to understand, for the first time, how MHWs impact key biological and toxicological parameters of the paralytic shellfish toxin (PST) producer Gymnodinium catenatum, a dinoflagellate inhabiting temperate and tropical coastal waters. Two MHW were simulated-category I (i.e., peak: 19.9 °C) and category IV (i.e., peak

To protect metal structures immersed in the sea from corrosion, the galvanic anode cathodic protection system (GACP) is often applied. However, this association leads to continuous oxidation of the galvanic anode and therefore to a release of a metal cocktail in the forms of ions or oxy-hydroxides. Therefore, the main objective of our study was to investigate the toxicity of elements released from the dissolution of an aluminium-based galvanic anode (∼95% Al, ∼5% Zn, <0.1% for In, Cu, Cd, Mn, Fe) on a grazing gastropod, the abalone Haliotis tuberculata. The present study was carried out in com

There is ample evidence that a range of anthropogenic chemicals occur in the aquatic environment, some of which have the potential to cause harm. Contaminants of Emerging Concern (CECs) are a subset of anthropogenic compounds that are poorly characterized in terms of effects and occurrences, and that are generally unregulated. Due to the sheer number of chemicals used, it is necessary to identify and prioritize those that may cause biological impacts. A key challenge of doing so is the lack of traditional ecotoxicological information. The utilization of in vitro exposure-response studies or be

As an alternative to polybrominated diphenyl ethers (PBDEs), decabromodiphenyl ethane (DBDPE) has become one of the most important new brominated flame retardants (NBFRs). However, little is known about whether this emerging contaminant may has an environmental fate similar to PBDEs. Sediments are the main sink for DBDPE in the aqueous phase. Worldwide concentration data, since it was first found in sediments to date, have been collated, and the following conclusions have been drawn. (1) DBDPE concentrations in sediments have increased rapidly, often with a higher risk of contamination in sour

Fish and other seafood are fundamental nutritional ingredients for a healthy life that are consumed globally. However, the high degree of spoilage of these products has led to the progress of a prevalent variety of preservation, processing, and analytical techniques in this sector. Food safety, authenticity, nutritional quality, and freshness are important features of aquaculture quality. In seafood processing, developing nanotechnology (nanotech), by adapting to new and complex applications, has promising applications for all segments of the food supply chain, including quality assessment, pa
