Mycotoxins.

Horses consume feed grains and forages that can produce a range of mycotoxins resulting from mold invasion. Toxicosis of horses often occurs from fumonisins or aflatoxin in grains, from the tremorgenic mycotoxins in dallis grass, or from slaframine in red clover. Fumonisin toxicosis often is severe and fatal, and aflatoxin can be acute or chronic and debilitating. Other mycotoxins reported in horses may cause moderate to mild signs that regress when the contaminated feedstuff is removed. Overall, horses appear to have a relatively low prevalence of reported mycotoxicoses among domestic animals…

Equine Mycotoxins.

The main mycotoxins involved in adverse equine health issues are aflatoxins, fumonisins, trichothecenes, and probably ergovaline (fescue grass endophyte toxicosis). Most exposures are through contaminated grains and grain byproducts, although grasses and hays can contain mycotoxins. Clinical signs are often nonspecific and include feed refusal, colic, diarrhea, and liver damage but can be dramatic with neurologic signs associated with equine leukoencephalomalacia and tremorgens. Specific antidotes for mycotoxicosis are rare, and treatment involves stopping the use of contaminated feed, switchi…

Mycotoxins and human health.

Mycotoxins have been investigated in relation to a wide range of adverse human health effects, but the evidence for all but a small number of associations is limited. Thus, the full impact on human health of the widespread exposure to mycotoxins remains to be defined. The main exception is for aflatoxins; epidemiological, experimental, and mechanistic studies have contributed to establishing aflatoxins as a cause of human liver cancer, with a particularly elevated risk in people chronically infected with hepatitis B virus. In addition, acute aflatoxicosis after exposure to high dietary toxin l…

Mycotoxins revisited: Part II.

Mushrooms are ubiquitous in nature. They are an important source of nutrition, however, certain varieties contain chemicals that can be highly toxic to humans. Industrially cultivated mushrooms are historically very safe, whereas foraging for mushrooms or accidental ingestion of mushrooms in the environment can result in serious illness and death. The emergency department is the most common site of presentation for patients suffering from acute mushroom poisoning. Although recognition can be facilitated by identification of a characteristic toxidrome, the presenting manifestations can be varia

Mycotoxins in meat products.

Mycotoxin presence in meat products is principally due to the development of toxigenic moulds during ripening, which concretely affect the dry-cured ones. Ochratoxin A (OTA) is the most prevalent mycotoxin in dry-cured hams and fermented sausages. Apart from collecting information on the main toxigenic moulds in dry-cured meat products, the objective of this review is to compile data about the mycotoxin prevalence and the tools for their mitigation. Although no very extensive studies have been performed on the mycotoxin occurrence in such products, much research has been conducted over the las

[Dirty nails and mycotoxins].

Some mycotoxins are among the most toxic natural products. They are metabolites produced by food-borne and feed-borne moulds. Dirty and soiled nails, and contaminated or infected onyxis by these specific moulds can be the origin of oral contamination and mycotoxicosis. Hence, nail cleaning, correct hygiene and treatment of mould onychomycosis have a potentially great impact on health.

[Micromycetes, mycotoxins and human health].

Mycotoxins are toxic metabolites produced by certain toxigenic microscopic fungi (moulds) in and on foods. Consequently mycotoxin-containing foods have been found all over the world: Africa, Asia, North and South America, Australia and Europe. The extent of the problem is greater in some parts of the world than in others because their climatic conditions are more favourable for mould growth and thus synthesis of mycotoxins. These toxins have been associated with various diseases-mycotoxicoses in humans throughout the world (ergotism, alimentary toxic aleukia, aflatoxicosis, balkan nephropathy,…

[Retrovirus, mycotoxins, immunosuppression and neurodegeneration].

AIMS: To analyse the pros and cons of the etiopathogenic aspects of the different clinical entities that, over the years, have been found to … pay special attention to environmental toxins, of which a prototypical example is the group of neuromycotoxins. There are several ways these can enter the organism of an individual exposed to them (through food, breathing and intravenously) or, worse still, they can be generated endogenously in immunosuppressed individuals. CONCLUSION: The possibility of so …

Interrelationships of mycotoxins with nutrition.

Mycotoxins interact with lipid, protein, carbohydrate, and vitamin nutrition. Diets high in lipid have a mortality-sparing effect against aflatoxicosis and, if high in unsaturated fatty acids, a growth-sparing effect. Aflatoxicosis causes a lipid malabsorption syndrome coupled with decreased digestive enzymes and bile salt excretion, a decreased synthesis of fatty acids, and impaired transport. Deficiencies of vitamins A, D, or riboflavin make animals more sensitive to aflatoxin while a thiamin deficiency has the opposite effect. Interaction with vitamins E and K has not been clearly demonstra…

Mycotoxins and beer. Impact of beer production process on mycotoxin contamination. A review.

Beer is the most consumed alcoholic beverage in the world. Its contamination with mycotoxins is of public health concern, especially for heavy drinkers. Beer production implies a variety of operations which might impact the initial level of mycotoxins in a positive or negative way. The complexity of these operations do not give to the brewer a complete control on chemical and biochemical reactions that take place in the batch, but the knowledge about mycotoxin properties can help in identifying the operations decreasing their level in foodstuffs and in the development of mitigation strategies.…

Fungi and mycotoxin types, toxicity, mechanisms, and control of mycotoxin contamination: a review.

Fungi are diverse and have important applications; however, mycotoxins produced by certain fungal species pose a major global challenge to food safety. These secondary metabolites mostly exhibit stable physicochemical properties, allowing them to persist throughout various stages of production and processing, posing a serious threat to human and animal health. This review first establishes the theoretical foundation by reviewing the types of fungi, types of mycotoxins, their physicochemical properties, and biosynthetic pathways. It then conducts a systematic literature review on the beneficial…

[Mycotoxin research in humans].

This study investigates the occurrence of aflatoxins in Ecuador. Early investigators proved the presence of aflatoxins in human and animal food, but the disturbing data lead to the formation of two research teams at Guayaquil University and the Agrarian University of Ecuador to investigate aflaxotins and other mycotoxins in food and their relationship to human health. Because the concept of mycotoxicosis as a result of the secondary metabolites produced by different species of moulds could cause different clinical patterns, the research team includes Aspergillus metabolites found in the urine …

Aspergillus Mycotoxins: The Major Food Contaminants.

Mycotoxins, a category of fungal secondary metabolites, frequently contaminate food products and pose a severe threat to human health. Aspergillus, a genus of fungi, is capable of producing mycotoxins, with aflatoxins (AFs) and ochratoxins being its principal types. Aspergillus mycotoxins can contaminate a wide range of crops and their derivatives, such as maize, wheat, rice, minor cereals, and peanuts, thereby threatening food and feed safety. In the paper, the related biosynthesis genes and multifaceted biosynthesis pathways of these mycotoxins are first discussed in detail, and elucidated s…

Public health impacts of foodborne mycotoxins.

Mycotoxins are toxic and carcinogenic metabolites produced by fungi that colonize food crops. The most agriculturally important mycotoxins known today are aflatoxins, which cause liver cancer and have also been implicated in child growth impairment and acute toxicoses; fumonisins, which have been associated with esophageal cancer (EC) and neural tube defects (NTDs); deoxynivalenol (DON) and other trichothecenes, which are immunotoxic and cause gastroenteritis; and ochratoxin A (OTA), which has been associated with renal diseases. This review describes the adverse human health impacts associate…
