Influence from the type of birth on the content of lactic acid bacteria in neonate meconium.

The study's objective was to determine the influence of vaginal birth compared to cesarean birth on the content of lactic acid bacteria with probiotic characteristics from newborns. Vaginal and cesarean sec tion meconium samples of lactic acid were evaluated, which were duly enriched, seeded and incubated. The resulting colonies were identified to be subjected to bile salt tolerance, acid pH, and fermentation. A greater development of meconium colonies was obtained in those born vaginally compared to those born by caesarean section (p <0.001). A total of 48 strains were isolated, the majority

Short communication: Snapshot of industry milk hauling practices in the western United States.

The Pasteurized Milk Ordinance (PMO) mandates milk hauling sanitation and operational practices; however, the use of vague language (i.e., "as needed") and gaps in processes lead to variability in industry practices. Our aim was to characterize industry milk hauling practices and identify areas that may be an unexplained source of contamination in the dairy processing continuum, and communicate this information with industry to cultivate best practices. The objectives of this study were to (1) survey industry hauling sanitation and operation practices in the Pacific Northwest region of the Uni

Medical nutrition therapy: use of sourdough lactic acid bacteria as a cell factory for delivering functional biomolecules and food ingredients in gluten free bread.

Celiac disease (CD) is an immune-mediated disease, triggered in genetically susceptible individuals by ingesting gluten from wheat, rye, barley, and other closely related cereal grains. Currently, the estimated prevalence of CD is around 1 % of the population in the western world and medical nutritional therapy (MNT) is the only accepted treatment for celiac disease. To date, the replacement of gluten in bread presents a significant technological challenge for the cereal scientist due to the low baking performance of gluten free products (GF). The increasing demand by the consumer for high qua

Eckol-rich phlorotannins and fucoidan from brown seaweeds promote lactic acid Bacteria growth and postbiotic production.

Emerging evidence shows that gut microbiota-derived metabolites regulate enteric and central nervous systems, and patients with Parkinson's disease (PD) exhibit reduced levels of lactic acid bacteria (LAB)-derived postbiotics, particularly short-chain fatty acids (SCFAs) and γ-amino butyric acid (GABA). This study examines the structures of brown seaweed prebiotics, phlorotannins and polysaccharides, and their effects on LAB growth and postbiotic production. Phlorotannins profiling revealed an abundance of eckol and its derivatives. Monosaccharide analysis identified fucoidan as the predominan

Bioprotective cultures as a clean label strategy for food preservation: From concept to market.

Bioprotective cultures and their derived antimicrobial agents represent a promising clean label strategy to enhance food safety and extend shelf-life while aligning with consumer demand for minimally processed products. This review critically analyses the scientific foundations and mechanisms of action of bioprotective agents, with a particular focus on lactic acid bacteria. It elucidates how they inhibit spoilage and pathogenic microorganisms through different strategies (competitive exclusion, acidification, and the production of bacteriocins and other compounds). This work also evaluates in

Lactic Acid Bacteria-derived Bacteriocins: A Promising Antimicrobial Strategy against Multidrug-resistant for Neonatal Sepsis Pathogens.

Neonatal sepsis continues to pose rising critical challenges to global health, particularly in low and middle-income countries, where it accounts for a substantial proportion of neonatal morbidity and mortality. The increasing prevalence of multidrug-resistant (MDR) pathogens in neonatal sepsis has significantly weakened the efficacy of conventional antibiotics, necessitating urgent exploration of alternative antimicrobial therapies for better clinical outcomes. Emerging research interest is growing to develop the microbial-derived peptides as novel antimicrobial agents, particularly "bacterio

Correlation between microbial communities, metabolites, and bioactivities in fermented mare's milk revealed by metagenomics and metabolomics.

Koumiss exhibits various functional properties, including antioxidant, hypoglycemic, and antihypertensive effects; however, natural fermentation is characterized by an uncontrollable microbial community structure, significant fluctuations in product quality, and a lack of specialized fermentation agents. The mechanisms underlying the links between microbial communities, functional metabolites, and bioactivity in natural and inoculated fermentation systems remain unclear. Therefore, this study employed bioactivity assays, metagenomics, and non-targeted metabolomics to systematically analyze dif

Integrated microbiome and metabolome revealing new insight into the combination of lactic acid bacteria in preventing postpartum metritis of dairy cows.

Probiotics, particularly composite lactic acid bacteria (CLAB), are emerging as a potential alternative to antibiotics for managing bovine metritis. While prior studies have highlighted CLAB's anti-inflammatory effects, limited data exist on its impact on vaginal and uterine microbiomes and systemic metabolism. In this study, Holstein cows received deep vaginal infusions of CLAB (a blend of Lactobacillus rhamnosus, Pediococcus acidilactici and Lactobacillus reuteri; at a standardized 4.5 × 1010 CFU/dose and a proportion of 25/25/2, respectively) at 20 and 10 days prepartum. We analyzed changes

The Genetic Determinants of Listeria monocytogenes Resistance to Bacteriocins Produced by Lactic Acid Bacteria.

BACKGROUND: Listeria monocytogenes is a Gram-positive bacterium responsible for listeriosis, a serious foodborne disease that can lead to serious health complications. Pregnant women, newborns, the elderly, and patients with weakened immune systems are particularly susceptible to infection. Due to the ability of L. monocytogenes to survive in extreme environmental conditions, such as low temperatures, high salinity, and acidity, this bacterium poses a serious threat to food production plants and is particularly difficult to eliminate from these plants. One of the promising solutions to reduce
