Identification of immunomodulatory peptides from crocodile head protein hydrolysates: Targeted screening and immunomodulatory activity by activating NF-κB signaling pathway.

Long-term unhealthy lifestyles are prone to triggering immune disorders, leading to infections and chronic diseases, posing serious health risks. Immunomodulatory peptides, with the advantages of being natural and having low toxicity and few side effects, contribute to maintaining immune balance. However, their mechanism of action remains unclear. It is crucial to conduct in-depth research on immunomodulatory peptides to understand their potential health benefits. This study aims to identify novel immunomodulatory peptides from the crocodile (Crocodylus siamensis) head protein hydrolysates (CH…

New insights into the flavoring potential of cricket (Acheta domesticus) and mealworm (Tenebrio molitor) protein hydrolysates and their Maillard products.

Insect proteins have an earthy-like flavor and have not shown great flavor potential for food applications so far. In this study, insect proteins of cricket Acheta domesticus and mealworm Tenebrio molitor larvae were first enzymatically hydrolyzed using two peptidase preparations (Flavourzyme1000L and ProteaseA "Amano"2SD). Xylose was then added to facilitate Maillard reactions (30 min, T = 98 °C, 1% (w/v) xylose). A comprehensive sensory evaluation showed that both the hydrolysis and the Maillard reactions changed the flavor description of the samples significantly to more complex and savory-

Enzymatic treatment of Tenebrio molitor proteins by papain reduces IgE reactivity and produces sACE-inhibitory hydrolysates.

Edible insects are being investigated as sustainable alternative protein sources; however, their use as food ingredients raises allergenicity concerns due to immunoglobulin (IgE) cross-reactivity with crustacean allergens. This study evaluated a papain-based enzymatic hydrolysis approach to obtain yellow mealworm (Tenebrio molitor) flour hydrolysates with reduced IgE reactivity and somatic angiotensin-converting enzyme (sACE) inhibitory potential. Hydrolysis markedly reduced or eliminated IgE-binding capacity in sera from crustacean-allergic individuals, indicating a substantial decrease in al

Preparation of Hypoallergenic Whey Protein Hydrolysate by a Mixture of Alcalase and Prozyme and Evaluation of Its Digestibility and Immunoregulatory Properties.

Whey protein (WP) has nutritional value, but the presence of β-lactoglobulin (β-LG) and α-lactalbumin (α-LA) cause allergic reactions. In this study, hypoallergenic whey protein hydrolyate (HWPH) was prepared by decomposing β-LG and α-LA of WP using exo- and endo-type proteases. The enzyme mixing ratio and reaction conditions were optimized using response surface methodology (RSM). Degradation of α-LA and β-LG was confirmed through gel electrophoresis, and digestion, and absorption rate, and immunostimulatory response were measured using in vitro and in vivo systems. Through RSM analysis, the

Protective Effect of Foxtail Millet Protein Hydrolysate on Ethanol and Pyloric Ligation-Induced Gastric Ulcers in Mice.

Foxtail millet has been traditionally considered to possess gastroprotective effects, but studies evaluating its use as a treatment for gastric ulcers are lacking. Here, we assessed the antiulcer effects of foxtail millet protein hydrolysate (FPH) and explored its mechanism by using blocking agents. In a mouse model of ethanol-induced gastric ulcers, pretreatment with FPH reduced the ulcerative lesion index, downregulated the expression of inflammatory cytokines in the gastric tissue, increased the activity of antioxidant enzymes, and improved the oxidative status. FPH increased constitutive t
