IgE antibodies to wheat flour components. Studies with sera from subjects with baker's asthma or coeliac condition.

Sera from two subjects with baker's asthma and six patients with coeliac condition were examined for the presence of IgE antibodies with specificities for wheat flour components. Sera were studied using the radioallergosorbent test (RAST) together with whole flour and thirteen purified and partially purified flour fractions. IgE antibodies to a number of flour components were demonstrated in the allergic bakers' sera, but the strongest reactivities were observed with wheat albumins and globulins. A more detailed examination of the flour water-soluble proteins using RAST inhibition methods demo

Decolorization of Antarctic krill hydrolysate for salt reduction in surimi gel: improvement of taste, gel properties, and flavor profile.

This study developed an efficient decolorization process based on a GA-BP neural network for treating Antarctic krill hydrolysate. It achieved a decolorization rate of 93.31% while effectively preserving functional components such as peptides and amino acids. The decolorized hydrolysate (AKP) was applied as a salt substitute in low-salt surimi. The results demonstrated that AKP significantly altered the amino acid composition, with the level of umami amino acids increasing 5-fold and the content of 5'-GMP surging nearly 15-fold. Electronic tongue and sensory evaluation analysis confirmed that

Preparation of Aromatic Camellia oleifera Seeds Oil by Roasting and Its Quality.

High-temperature roasting is a key process in preparing Aromatic Camellia oleifera Abel. seed oils (ACSOs). To investigate the effect of roasting temperature on its comprehensive quality, this paper analyzed the effects of five roasting temperatures (140 °C, 150 °C, 160 °C, 170 °C, 180 °C) on the quality characteristics, safety indicators and flavor characteristics of ACSOs. Results showed that with increasing roasting temperature, the p-anisidine value (p-AV) of the ACSOs was gradually raised, while the squalene content was progressively reduced. When the temperature exceeded 160 °C, the pero

Mechanisms of transglutaminase-induced crosslinking in hybrid surimi/plant protein gels: A focus on mechanical properties and microstructure.

Elucidating the distinct mechanisms between legume and cereal proteins in hybrid surimi/plant protein (HSP) gels crosslinked by transglutaminase (TG) is essential for achieving precise texture modulation. This study investigated the differential responses of legume proteins (soy and pea) and cereal proteins (wheat and rice) on the structural and functional properties of HSP-TG gels. Texture profile analysis revealed that gels prepared with legume proteins exhibited significantly higher resilience (0.58-0.59) than those with cereal proteins (0.54-0.55, p < 0.05), indicating superior elastic rec

Effects of water activity on the flavor characteristics and drying quality of asparagus lettuce: The alteration of cell wall structure and water distribution.

Reducing the water activity (aw) of vegetables is an effective approach to extending their shelf life, nevertheless, excessively low aw levels may lead to undesirable effects such as texture hardening, nutrient degradation, and loss of flavor quality. This study investigated the effects of different aw levels on the sensory quality, flavor, water migration, cell wall polysaccharide content, related enzyme activities, and microstructure of asparagus lettuce, and identified aw = 0.6650 (group D) as the optimal level. Group D exhibited a significant increase in bioactive compounds, suggesting tha

Mercury levels in Nile perch fillets in processing industries in Uganda.

Mercury levels of Nile perch fillets to be exported from selected fish processing industries in Uganda were determined by hot digestion in strong acids, followed by analysing the extracts with Inductive Coupled Plasma-Mass Spectroscopy (ICP-MS). There was a clear link between atmospheric mercury and methylmercury accumulation in fish tissues, thus exposing a possible threat for human health. A quantitative cross-sectional study design was undertaken from two fish processing factories around Kampala city. Simple random sampling was utilised where ten fish products were picked for analysis. The

Tracking bacteriome variation over time in Listeria monocytogenes-positive foci in food industry.

The variation in microbial composition over time was assessed in biofilms formed in situ on selected non-food and food contact surfaces of meat and fish industries, previously identified as Listeria monocytogenes-positive foci. First, all samples were analysed for the detection and quantification of L. monocytogenes using ISO 11290-1 and ISO 11290-2 norms, respectively. Although the pathogen was initially detected in all samples, direct quantification was not possible. Psychrotrophic bacteria counts were among resident microbiota in meat industry samples (Meanmax = 6.14 log CFU/cm2) compared t

The health impacts of dietary sodium and a low-salt diet.

High salt intake is now endemic worldwide. It contributes to the generation and maintenance of high blood pressure, which is now the biggest risk factor for global disease. There is now compelling evidence to support salt reduction in hypertensives and a substantial body of evidence to support salt reduction in the general population to reduce risk of death from cardiovascular disease. In specific diseases such as heart failure and chronic kidney disease, guidelines support the World Health Organization target for reduced salt intake at 5 g daily. Achieving a diet that is lower in salt has cha

Distribution of phytochelatins, metal-binding compounds, in plant foods: A survey of commonly consumed fruits, vegetables, grains and legumes.

Phytochelatins (PyCs) are metal-binding compounds produced by plants. PyCs may reduce bioavailability of dietary toxic metals such as cadmium. However, the PyC concentrations in foods are unknown. The objective of this study was to analyze PyC contents in a subset of commonly consumed plant foods. Foods (20) across five groups were analyzed and PyCs quantified using liquid chromatography-mass spectrometry (LC-MS/MS). The impact of factors such as food processing were also explored. PyCs were in all 20 foods. Five PyC types were detected with PyC2-Gly, PyC3-Gly and PyC2-Ala at quantifiable conc

Domain-specific effects of hunger on attention and choice.

Hunger leads to less healthy food choices, but its effect on decision-making in non-food domains is less clear. To close this gap, we investigated to what extent hunger state affected choice across domains by examining attentional patterns and cognitive mechanisms underlying decision-making across different domains. We implemented a within-subject design in which participants completed a food choice, an intertemporal discounting, and a social preferences task in hungry and sated states while their eye-movements were recorded. Hungry participants were more likely to look at and subsequently sel

Staphylococcus aureus in Dairy Industry: Enterotoxin Production, Biofilm Formation, and Use of Lactic Acid Bacteria for Its Biocontrol.

Staphylococcus aureus is a well-known pathogen capable of producing enterotoxins during bacterial growth in contaminated food, and the ingestion of such preformed toxins is one of the major causes of food poisoning around the world. Nowadays 33 staphylococcal enterotoxins (SEs) and SE-like toxins have been described, but nearly 95% of confirmed foodborne outbreaks are attributed to classical enterotoxins SEA, SEB, SEC, SED, and SEE. The natural habitat of S. aureus includes the skin and mucous membranes of both humans and animals, allowing the contamination of milk, its derivatives, and the pr

Poppy seed foods and opiate drug testing--where are we today?

Seeds of the opium poppy plant are legally sold and widely consumed as food. Due to contamination during harvesting, the seeds can contain morphine and other opiate alkaloids. The objective of this study is to review the toxicology of poppy seed foods regarding influence on opiate drug tests. Computer-assisted literature review resulted in 95 identified references. Normal poppy seed consumption is generally regarded as safe. During food processing, the morphine content is considerably reduced (up to 90%). The possibility of false-positive opiate drug tests after poppy food ingestion exists. Th

Factors associated with microbiological non-compliance in ready-to-eat foods: A seven-year analysis of official food safety surveillance data in a tropical low- and middle-income country.

Food safety is an important component of global public health, particularly in low- and middle-income countries (LMICs). This study aimed to identify factors associated with microbiological non-compliance in ready-to-eat (RTE) foods using seven years of official surveillance data from the Colombian Orinoquía region. RTE foods were defined as foods intended for immediate consumption without additional cooking or thermal processing. A retrospective analysis was conducted on 1,868 samples collected between 2017 and 2023, of which 1,846 were included in inferential analyses. Microbiological non-co

Antibiotic Resistance Profiles and Genetic Determinants of Listeria innocua Isolated from Food Sources in Poland.

Background: Antimicrobial resistance (AMR) is a growing public health concern affecting both medicine and food safety. While Listeria monocytogenes is the primary pathogen of concern, Listeria innocua-commonly found in food and food-processing environments-may serve as a reservoir for resistance genes and a useful indicator of species for surveillance. This study aimed to assess the phenotypic antibiotic susceptibility and detect resistance-associated genes in L. innocua isolates from meat products and processing environments in Poland. Methods: A total of 51 L. innocua isolates were analyzed,

What Children Eat in Developing Countries: Diet in the Etiology of Undernutrition?

We live in a world of paradoxes: one half of the world is overweight or obese with abundant access to food and the other half undernourished due to poor food access. It has been estimated that nearly 36% of children in Asia are stunted. Worldwide, approximately 1 in 4 children under the age of 5 years shows stunted growth, making the number of stunted children to 155 million; 52 million children under 5 years are wasted, of which 17 million are severely wasted. Given the wide-scale nature of global malnutrition and its long-term consequences, why has this scar in our consciousness not being ad

Exposure to toxic chemicals in the diet: is the Brazilian population at risk?

In Brazil, in the last 20 years, dietary risk assessments have been conducted on pesticides, mycotoxins, food additives, heavy metals (mainly mercury), environmental contaminants (mainly DDT) and acrylamide, a compound formed during food processing. The objectives of this paper were to review these studies, discuss their limitations and uncertainties and identify the most critical chemicals that may pose a health risk to Brazilian consumers. The studies have shown that the cumulative intake of organophosphorus and carbamate pesticides by high consumers of fruits and vegetables may represent a

Overexpression of hydroxynitrile lyase in cassava roots elevates protein and free amino acids while reducing residual cyanogen levels.

Cassava is the major source of calories for more than 250 million Sub-Saharan Africans, however, it has the lowest protein-to-energy ratio of any major staple food crop in the world. A cassava-based diet provides less than 30% of the minimum daily requirement for protein. Moreover, both leaves and roots contain potentially toxic levels of cyanogenic glucosides. The major cyanogen in cassava is linamarin which is stored in the vacuole. Upon tissue disruption linamarin is deglycosylated by the apolplastic enzyme, linamarase, producing acetone cyanohydrin. Acetone cyanohydrin can spontaneously de
