An exploration on coconut milk stability by protein characterization, sterilization controlling, and alternative protein emulsifiers.

Coconut milk with high fat-to-protein ratio often encounters physical instability. Characterization of coconut protein could provide better understanding of the roles protein played in stability. The results showed coconut protein predominantly consisted of 11S globulin (53 kDa cocosin with acidic and basic polypeptides linked by disulfide bonds) and 7S globulin (53, 35, and 24 kDa). The easier precipitation of 11S globulin indicated poor emulsifying property, thus partly resulted in instability of coconut milk. Atmospheric pressure sterilization or ultra-high temperature instantaneous sterili

Berry Powder-Enriched Gluten-Free Extruded Snacks: Nutritional Quality and Antioxidant Potential.

The increasing prevalence of celiac disease underscores the need to develop nutritionally balanced, gluten-free snacks based on local raw materials. This study aimed to develop extruded gluten-free snacks based on corn, rice, buckwheat, and chickpea flours, enriched with a 5% blend of berry powders (sea buckthorn, blackcurrant, cranberry), and to evaluate their physicochemical, nutritional, and antioxidant properties. Snacks were produced via high-temperature short-time extrusion (120-160 °C). The results demonstrated that chickpea/corn formulations exhibited the highest initial protein conten

Regulating the structure of soybean protein isolate-dextran maillard conjugate through cold plasma treatment: enhancing the storage and processing stability of oil-in-water emulsion loaded with curcumin.

The performance of soybean protein isolate-dextran (SPI-Dex) Maillard conjugates as O/W emulsion stabilizers is fundamentally limited by their structure and modification degree. However, cold plasma (CP) technology offers a compelling approach to overcome these limitations. Therefore, this study investigates the impact of CP treatment time on the structural and emulsifying properties of SPI-Dex conjugates to develop a high-performance, protein-based emulsion delivery system. Results indicated that compared with the control group (0 min), a CP treatment for 5 min (SPI-Dex5) reduced the disulfid

Formation of protein-bound Nε-carboxymethyllysine and Nε-carboxyethyllysine in ground pork during commercial sterilization as affected by the type and concentration of sugars.

This research was aimed to investigate the formation of protein-bound Nε-carboxymethyllysine (CML) and Nε-carboxyethyllysine (CEL) in ground pork at 121 °C (5-30 min) as affected by sugars (1-9% w/w, glucose, fructose, lactose, and sucrose). The addition of reducing sugar significantly (P < 0.05) increased the levels of CML and CEL in heat treated pork samples. Even adding 1% of glucose in pork could lead to 3.8 and 4.0 times increase in the formation rate constant (zero-order) of CML and CEL, respectively. In a typical commercial sterilization process (121 °C, 30 min), adding glucose, fructose

Comparing the chemical composition of dietary fibres prepared from sugarcane, psyllium husk and wheat dextrin.

A dietary fibre prepared from sugarcane stalk was compared with psyllium husk and wheat dextrin. In contrast to the other dietary fibres, sugarcane fibre was found to contain significant amounts of insoluble dietary fibre (73-86%), lignin (18.66-20.23%), and rare minerals such as chromium (0.67-2.54 mg/100 g) and manganese (1.07-2.34 mg/100 g). Analysis of the ethanol extract also detected compounds with antioxidant activity. Characterisation of five sugarcane fibres prepared from selected strains, harvest periods (growth or storage phase), and processing conditions showed these factors influe

Monitoring Tyrophagus putrescentiae (Acari: Acaridae) With Traps in Dry-Cured Ham Aging Rooms.

Methyl bromide is the most effective fumigant for controlling the mold (or ham) mite, Tyrophagus putrescentiae (Schrank) (Acari: Acaridae), the most significant pest of dry-cured ham. However, methyl bromide is being phased out of use. Therefore, integrated pest management (IPM) methods should be developed to help control mites in dry-cured ham plants. The foundation of a successful IPM program is an effective monitoring program that provides information on pest presence and abundance over time. By using food-baited traps fabricated from disposable petri dishes and a dog food-based bait, mite

Gas chromatographic determination of residual methylene chloride and trichloroethylene in decaffeinated instant and ground coffee with electrolytic conductivity and electron capture detection.

A method is described for the quantitative determination of residual methylene chloride (MC) and trichloroethylene (TCE) in decaffeinated instant and ground roasted coffees. The residual solvents were isolated by a closed system vacuum distillation technique with toluene as a carrier solvent, chromatographed on Chromosorb 102, detected by both electron capture and electrolytic conductivity detectors, and quantitated by comparison with an internal standard. Average recoveries of MC from instant and ground coffees spiked at 1, 10, and 25 ppm were 100.0 (88-113), 93.2 (92-95), and 97.7% (94-102%)

Chestnut porous starch loaded with curcumin: preparation, characterization and applications in 3D printing of chestnut flour.

This study developed a sustainable delivery system by investigating curcumin (Cur) adsorption onto chestnut porous starch (CPS) through kinetic, isotherm, and thermodynamic analyses, subsequently evaluating the CPS/Cur complex as a functional ingredient in 3D-printed chestnut flour (CF) gels. Results indicated that CPS achieved an adsorption capacity of 6.82 mg/g at 25 °C within 300 min. The adsorption process conformed to the pseudo-first-order kinetic model and the Langmuir isotherm, revealing a spontaneous, exothermic monolayer adsorption primarily driven by physical entrapment and intermol

Diversification in indigenous and ethnic food culture.

A diversified food supply is contingent on underlying biodiversity in the locality where one lives or at a distance from it, if trade routes are established. Indigenous people generally settled at the water's edge so that aquatic foods made up part of their diversified diet, with the rest of the diversity dependent on how much they hunted and gathered, on herded animals, engagement in subsistence agriculture, the ability to process and preserve food and/or food commodities traded. The rapid urbanization of much of the world's population distances people from the origin of their food, the under

Brain regulation of hunger and motivation: The case for integrating homeostatic and hedonic concepts and its implications for obesity and addiction.

Obesity and other eating disorders are marked by dysregulations to brain metabolic, hedonic, motivational, and sensory systems that control food intake. Classic approaches in hunger research have distinguished between hedonic and homeostatic processes, and have mostly treated these systems as independent. Hindbrain structures and a complex network of interconnected hypothalamic nuclei control metabolic processes, energy expenditure, and food intake while mesocorticolimbic structures are though to control hedonic and motivational processes associated with food reward. However, it is becoming in

Recent advances in iron encapsulation and its application in food fortification.

Iron (Fe) is an important element for our body since it takes part in a huge variety of metabolic processes. However, the direct incorporation of Fe into food fortification causes a number of problems along with undesirable organoleptic properties. Thus, encapsulation has been suggested to alleviate this problem. This study first sheds more light on the Fe encapsulation strategies and comprehensively explains the results of Fe encapsulation studies in the last decade. Then, the latest attempts to use Fe (in free or encapsulated forms) to fortify foods such as bakery products, dairy products, r

Combining Whole Genome Sequencing Data from Human and Non-Human Sources: Tackling Listeria monocytogenes Outbreaks.

Listeria monocytogenes (Lm) is ubiquitous in nature and known for its ability to contaminate foods during production processes. Near real-time monitoring of whole genome sequences from food and human isolates, complemented with epidemiological data, has been used in the Netherlands since 2019 to increase the speed and success rate of source finding in the case of (active) clusters. Nine clusters with 4 to 19 human cases investigated between January 2019 and May 2023 are described. Fish production sites were most often linked to outbreaks of listeriosis (six clusters), though other types of foo
