The use of additives to food fulfils many purposes, as shown by the index issued by the Codex Committee on Food Additives: Acids, bases and salts; Preservatives, Antioxidants and antioxidant synergists; Anticaking agents; Colours; Emulfifiers; Thickening agents; Flour-treatment agents; Extraction solvents; Carrier solvents; Flavours (synthetic); Flavour enhancers; Non-nutritive sweeteners; Processing aids; Enzyme preparations. Many additives occur naturally in foods, but this does not exclude toxicity at higher levels. Some food additives are nutrients, or even essential nutritents, e.g. NaCl.

Vancomycin-resistant enterococci (VRE) are a leading cause of nosocomial infections in patients worldwide. VRE contamination in food of animal origin may create a risk for human health. This study was conducted to estimate the pooled prevalence of VRE in food of animal origin worldwide, to assess the result heterogeneity, and to determine cumulative evidence and the trend of the prevalence over time. Relevant studies were retrieved from PubMed, Scopus, and Web of Science. A random-effects model was used to calculate the pooled prevalence of VRE in food of animal origin. Subgroup meta-analysis

The contamination of food and potable water with microorganisms may cause food-borne and water-borne diseases. The common contaminants include Escherichia coli (E. coli), Salmonella sp. etc. The conventional methods for monitoring the water quality for the presence of bacterial contaminants are time-consuming, expensive, and not suitable for rapid on-spot detection in field conditions. In the current study, super paramagnetic iron oxide nanoparticles (SPIONs) were synthesized and conjugated with E. coli specific Aptamer I to detect E. coli cells qualitatively as well as quantitatively. Staphylococcal infections are a widespread cause of disease in humans. In particular, S. aureus is a major causative agent of infection in clinical medicine. In addition, these bacteria can produce a high number of staphylococcal enterotoxins (SE) that may cause food intoxications. Apart from S. aureus, many coagulase-negative Staphylococcus spp. could be the source of food contamination. Thus, there is an active research work focused on developing novel preventative interventions based on food supplements to reduce the impact of staphylococcal food poisoning. Interestingly, many plant-derived…

Foods can serve as vehicles of many pathogenic and toxigenic agents of disease. Bacterial agents comprise three groups: 1) those that grow in the food and produce an active toxin before consumption (e.g., clostridium botulinium); 2) those that merely exist as contaminants in the food but are able to initiate infection when swallowed (e.g., Salmonella spp.); and 3) those that multiply and produce large numbers of vegetative cells in the food, then release an active enterotoxin when they sporulate in the gut. A few parasitic (e.g., Trichinella spiralis) and viral agents (e.g., hepatitis A) also

Meat safety is still at the front line of consumer concern due to the need to control traditional as well as evolving pathogens, such as the ones resistant to antibiotics or preservatives, as well as other food-related stresses. For instance, bacterial pathogens such as Escherichia coli O157:H7 and Salmonellaspp. will continue affecting the safety of raw beef, which means that there is a continuous need for advanced antimicrobial solutions, such as active food packaging technologies, which are able to ensure the microbial safety of the packaged beef, while enhancing its shelf life. The main go

Raw vegetables are a key food for a healthy diet, but their increased consumption brings a higher risk for foodborne disease. Contamination of salad greens with Shiga toxin-producing Escherichia coli (STEC) O157:H7 has caused severe disease and important economic losses almost yearly in the United States over the last 10 years. To curb the risk of infections from contaminated produce, approaches based on bacterial virus - commonly known as bacteriophage or phage - have recently started to draw interest among other antimicrobial strategies. Phages enter bacterial cells to reproduce and cause ce

BACKGROUND: Cronobacter spp. causes illnesses such as neonatal meningitis, sepsis and necrotising enterocolitis that can be fatal in infants and neonates. Thus it is of great concern to the food industry, which requires a simple and miniaturised method for the rapid detection of Cronobacter spp. in food.
RESULTS: A simple and rapid method was developed for the quantitative estimation of Cronobacter spp. Cell suspension cultures and tofu inoculated with Cronobacter spp. as well as a mixed culture (Cronobacter spp. and other micro-organisms) were serially diluted twofold on microtitre plates. K

Several listeriosis outbreaks have been linked to the consumption of fresh or processed produce in recent years. One major determinant of the listeriosis risk is the ability of a food to support growth of Listeria monocytogenes during storage. However, data regarding the ability to support growth of L. monocytogenes are scarce or nonexisting for many produce commodities. Here we synthesize the available data regarding growth behavior of L. monocytogenes on produce, compare the growth data with listeriosis outbreak data, and evaluate the adequacy of the data for predictive modeling. Growth rate

Surface plasmon resonance (SPR) biosensors are electro-optical instruments used for analyzing real-time protein-protein interactions. This work evaluates an SPR biosensor (Biacore 3000) in the detection of staphylococcal enterotoxin B (SEB) in foods. A sandwich SPR immunosensor involving two antibodies was used. The capturing antibody, bound covalently to the surface of the biosensor chip, performs the initial binding of the antigen and a second antibody binds to the captured antigen. The second antibody makes antigen verification possible and amplifies the signal. Pure SEB as well as SEB in s

An automated immunosensor has been applied to the detection of Staphylococcus aureus enterotoxin B in cream. It was capable of detecting the toxin down to a level of 5 ng/g in approximately 10 min. This paper describes the immunosensor method used and how it compares with conventional ELISA (enzyme linked immunosorbent assay) methods.

In view of large-scale outbreaks of botulism among waterfowl and farm animals in the Netherlands, studies were done designed to estimate the risks incurred by man. The presence of C. botulinum in the environment as well as contamination cycles and the potential for multiplication were studied. Raw materials used in the production of food were frequently found to be contaminated with types of C. botulinum pathogenic for man. The growth of C. botulinum in foods and meat preservatives other than nitrite were examined. To reduce the use of laboratory animals in research on botulism, immunological

In 1961-1975, there were 72 foodborne and 38 waterborne outbreaks of shigellosis reported in the United States. Foodborne outbreaks were most often caused by salads with contamination attributed to poor hygiene of a food handler. Waterborne outbreaks most often involved semipublic water systems, and were usually the result of inadequate chlorination of water contaminated by human feces. In 110 common-source outbreaks, 16,541 persons were ill. The attack rate for both food- and waterborne shigellosis was 47%, and the case-fatality ratio was 0.1% in foodborne outbreaks and 0.2% in waterborne out

Food can never be entirely safe. Food safety is threatened by numerous pathogens that cause a variety of foodborne diseases, algal toxins that cause mostly acute disease, and fungal toxins that may be acutely toxic but may also have chronic sequelae, such as teratogenic, immunotoxic, nephrotoxic, and estrogenic effects. Perhaps more worrisome, the industrial activities of the last century and more have resulted in massive increases in our exposure to toxic metals such as lead, cadmium, mercury, and arsenic, which now are present in the entire food chain and exhibit various toxicities. Industri

Alicyclobacillus acidoterrestris is an acidothermophilic bacterium considered a significant challenge to the food industry, particularly in the production of fruit juices and concentrates. Its ability to survive pasteurization and form spores and biofilms makes it a persistent contaminant that can spoil products and generate off-flavors even during product storage. Recent studies have increasingly focused on developing new strategies to eliminate both vegetative cells and biofilms, with special attention on natural compounds such as plant extracts, essential oils and antimicrobial metabolites.

FDA's Seafood HACCP Guidance (SHG) recommends a cumulative exposure time limit of 3 h if product temperature exceeds 21.1 °C (70°F) to minimize the growth of Staphylococcus aureus (SA) and prevent staphylococcal enterotoxin (SE) production. This time limit is insufficient to practically accomplish postthawing activities (e.g., packing, brining, sealing, retort staging, and time for the center of the can to reach the critical temperature of 50 °C (122°F)). The documented evidence supporting the establishment of this exposure time recommendation is minimal and mostly irrelevant to tuna. The goal

The presence of ochratoxin A (OTA) in dry-cured sausages is a current hazard. To control its contamination, the use of biocontrol agents (BCAs) of plant and microbial origin as anti-ochratoxigenic strategies is being carried out. The aim of this study was to evaluate the anti-ochratoxigenic effect of rosemary essential oil (REO), acorn shell extract (AE) and Debaryomyces hansenii against OTA production by Penicillium nordicum in the Spanish dry-cured sausages "chorizo". For this purpose, BCAs were individually and in combination inoculated in the presence of P. nordicum on the surface of porti

This study investigated the migration of bisphenol A (BPA) from polyethylene terephthalate (PET) bottles into Iranian yogurt drink (Doogh), under different storage conditions and assessed the associated health risks. Three doogh brands were analyzed under different temperatures (4 °C, 25 °C, 45 °C), storage time (7-60 days), and light conditions (direct sunlight vs. shade), with BPA concentrations measured using solid-phase extraction (SPE) and high-performance liquid chromatography (HPLC-UV). Results showed that higher temperatures (e.g., 0.139-0.160 mg/L at 4 °C vs. 0.269-0.318 mg/L at 45 °C

Salmonella in raw cocoa beans (n = 870) from main sourcing areas over nine months was analyzed. It was detected in 71 (ca. 8.2%) samples, with a contamination level of 0.3-46 MPN/g except for one sample (4.1 × 104 CFU/g). Using prevalence and concentration data as input, the impact of thermal treatment in cocoa processing on the risk estimate of acquiring salmonellosis by a random Belgian chocolate consumer was calculated by a quantitative microbiological risk assessment (QMRA) approach. Pork is one of the most commonly consumed meats, and its safety has always been a concern. Recently, safety incidents caused by chemical or biological contamination such as drug residues, heavy metals, and pathogenic microorganisms in pork have been reported, and the safety of pork is a cause for concern. Salmonella spp. is one of the important foodborne pathogens that threaten human health. Pork is a high-risk vector food for Salmonella spp. infection. The assessment of the safety risk of Salmonella spp. in pork is conducive to the prevention of related foodborne diseases. In this paper, risk
