Unveiling the improvement mechanisms of moist-heat and hot-air treatments on the flavor of Panax quinquefolius.

China-grown American ginseng, namely Panax quinquefolius (PQ), faces significant limitations in food industry applications due to its undesirable flavor. Moist-heat and hot-air treatments (MHHA) are one of the main methods for processing PQ. However, its impact on both flavor and functional components of PQ remained unclear. To address this issue, we proposed a three-step strategy termed "HE + H + EH", comprising the integration of human sensory evaluation and electronic tongue (HE), HPLC‑Q‑TOF‑MS (H), and the integration of electronic nose and HS‑GC‑IMS (EH). Human sensory evaluation and elec

Unveiling the bacterial community structure and soil properties in bulk and rhizospheric compartments of Tamarix gallica from an arid Algerian saline ecosystem.

Soil salinization is among the most critical threats to agriculture and food security, particularly in arid and semi-arid regions. Despite their ecological and agricultural significance, the microbial processes in saline soils of arid regions remain poorly characterized. This first 16S rRNA amplicon-based study of Algerian saline soils examines bacterial communities and physico-chemical properties in the Naama salt flat, focusing on both bulk and rhizosphere soils associated with Tamarix gallica L. Bacterial diversity and community composition were analyzed through high-throughput 16S rRNA gen

A library of experimental collision cross sections for food, beverage and plant metabolites generated by reversed-phase liquid chromatography coupled to travelling-wave ion mobility and high-resolution mass spectrometry.

Collision cross section (CCS), considered an ion-specific physicochemical property derived from ion mobility spectrometry (IMS), has become a valuable orthogonal descriptor for metabolite characterisation. When coupled with liquid chromatography and high-resolution mass spectrometry, CCS enables a multidimensional analytical approach to address challenging metabolite annotation, particularly for isomeric compounds or when reference standards are unavailable. In food and plant metabolomics, where chemical diversity is vast and reference databases are limited, expanding experimental CCS librarie

Synergistic genomic design and thermal processing mitigate anti-nutritional constraints to enhance the nutritional efficacy of diploid potatoes.

Global food security demands sustainable alternatives to the conventional feed ingredient wheat. Nutrient-dense diploid potatoes (HQP) represent candidates due to their enriched phytochemical profiles, including high levels of vitamin C and lutein. However, their dietary utilization is constrained by endogenous anti-nutritional factors (ANFs), primarily solanine and trypsin inhibitors. Using a zebrafish model, we demonstrate that these ANFs trigger intestinal dysbiosis and an oxidative-inflammatory response. Mechanistically, this adverse gut environment suppresses the mTOR pathway, as evidence

Food packaging contaminants and offspring reproductive health: Disease risks and underlying mechanisms.

Modern lifestyle factors, including dietary choices, significantly affect individual and intergenerational health. The widespread reliance on processed and takeout foods, along with the regular use of cosmetics and personal care products containing environmental contaminants, has increasingly been recognized as a potential risk to reproductive health and the developmental outcomes of the next generation. This study investigates the effects and underlying mechanisms of environmental pollutants in food plastic packaging on offspring reproductive health. By comprehensively analyzing existing rese

Ultra processed microbiome: Effects of dietary Stable Carbonyl adducts (SCars) on developing microbiota of mice.

Consumption of ultra-processed food (UPF) is increasing and is causally linked with noncommunicable disease onset, however specific compounds within UPFs that influence disease risk remain poorly defined. The acronym 'SCars', for Stable Carbonyl Adducts, is introduced herein as an umbrella term encompassing advanced glycation end-products (AGEs), advanced lipoxidation end-products (ALEs), and other carbonyl-derived modifications. These molecules arise as products of spontaneous carbonyl chemistry, a reaction accelerated by industrial food processing. Dietary SCars have been associated with met

Exploring hydrodynamic cavitation for citrus waste valorisation in Malta: from beverage enhancement to potato sprouting suppression and water remediation.

Introduction: The endorsement of circular economy, zero-waste, and sustainable development by the EU and UN has promoted non-thermal technologies in agro-food and health industries. While northern European countries rapidly integrate these technologies, their implementation in Mediterranean food-supply chains remains uncertain. Aims: We evaluated the usefulness of hydrodynamic cavitation (HC) for valorizing orange peel waste in the fresh orange juice supply chain of the Maltese Islands. Method: We assessed: a) the effectiveness of HC in extracting bioactive compounds from orange peels (Citrus

A new design of colorimetric films using bacterial cellulose nanocrystals derived from nata de coco for sensing volatile organic compounds.

In this work, bacterial cellulose (BC) derived from Nata de Coco is a polysaccharide material, and it is further processed into bacterial cellulose nanocrystal (BCNC) via acid hydrolysis. Then BCNC is doped with transition metals to enhance its amine/hydrogen sulfide response. Therefore, the aim of this study is to investigate the use of transition metals as indicators to detect amine and hydrogen sulfide gas for efficiently monitoring food spoilage. BCNCs were treated with various concentrations of silver nitrate (AgNO3) and copper sulfate pentahydrate (CuSO4·5H2O). Then the dropwise addition

Food allergy - New risks through vegan diet? Overview of new allergen sources and current data on the potential risk of anaphylaxis.

A vegan diet is increasingly en vogue, i.e., a diet based on plants, in which animal products are completely avoided, often for health and environmental reasons. The menu is supplemented with pulses (e.g., soy, lentils, peas), nuts (e.g., cashew, macadamia, almond, pecan, para, walnut) and seeds (e.g., chia, flaxseed) or pseudo-grains (quinoa, buckwheat). Indeed, the product range is expanding to include vegan foods such as milk alternatives (e.g., oat, almond, soy drinks) and cheese or meat substitutes (e.g., soy-based). Food allergies are also on the rise, with an increasing prevalence world

Effects of Tartrazine on Some Sexual Maturation Parameters in Immature Female Wistar Rats.

Over the past century, the average age for onset of puberty has declined. Several additives present in our food are thought to contribute significantly to this early puberty which is recognized to also affect people's health in later life. On this basis, the impact of 40-days unique oral administration of the food dye tartrazine (7.5, 27, and 47 mg/kg BW doses) was evaluated on some sexual maturation parameters on immature female Wistar rats. Vaginal opening was evaluated during the treatment period. At the end of the treatments, animals were sacrificed (estrus phase) and the relative weight o

Controls of Methylmercury Bioaccumulation in Forest Floor Food Webs.

Compared to the extensive research on aquatic ecosystems, very little is known about the sources and trophic transfer of methylmercury (MeHg) in terrestrial ecosystems. In this study, we examine energy flow and trophic structure using stable carbon (δ13C) and nitrogen (δ15N) isotope ratios, respectively, and MeHg levels in basal resources and terrestrial invertebrates from four temperate forest ecosystems. We show that MeHg levels in biota increased significantly ( p < 0.01) with δ13C and δ15N at all sites, implying the importance of both microbially processed diets (with increased δ13C) and t

Combination of endolysins and high pressure to inactivate Listeria monocytogenes.

Outbreaks of listeriosis are often related to the consumption of low-processed ready-to-eat food products (e.g. soft cheeses or smoked fish) contaminated with Listeria monocytogenes. Traditional preservation techniques, such as heat treatment, cannot eliminate Listeria from these products without strongly affecting the quality of the foods. We therefore investigated the use of endolysin (PlyP40, Ply511, or PlyP825) in combination with high hydrostatic pressure processing to kill L. monocytogenes in buffer. The results demonstrated a more than additive effect when both treatments were combined.

In vitro Anti-Thrombotic Activity of Extracts from Blacklip Abalone (Haliotis rubra) Processing Waste.

Waste generated from the processing of marine organisms for food represents an underutilized resource that has the potential to provide bioactive molecules with pharmaceutical applications. Some of these molecules have known anti-thrombotic and anti-coagulant activities and are being investigated as alternatives to common anti-thrombotic drugs, like heparin and warfarin that have serious side effects. In the current study, extracts prepared from blacklip abalone (Haliotis rubra) processing waste, using food grade enzymes papain and bromelain, were found to contain sulphated polysaccharide with

Impact of Moderate Heat, Carvacrol, and Thymol Treatments on the Viability, Injury, and Stress Response of Listeria monocytogenes.

The microbial safety and stability of minimally processed foods are based on the application of combined preservative factors. Since microorganisms are able to develop adaptive networks to survive under conditions of stress, food safety may be affected, and therefore understanding of stress adaptive mechanisms plays a key role in designing safe food processing conditions. In the present study, the viability and the sublethal injury of Listeria monocytogenes exposed to moderate heat (55 °C) and/or essential oil compounds (carvacrol and thymol, 0.3 mM) treatments were studied. Synergistic effect
