Salmonella in Chicken and Pork Meat as a Likely Major Contributor to Foodborne Illness in Peru.

Nontyphoidal Salmonella is one of the major causes of self-limiting diarrheal disease and the most common foodborne pathogen worldwide. It is an important contributor to the burden of foodborne illness in South America, including Peru, where chicken and pork are important vehicles for Salmonella infection. Salmonella infections are underreported, particularly in low- and middle-income countries where concerted action tackling Salmonella along the chicken and pork chains, from primary production to retail, is urgently needed. To support and inform the implementation of new strategies to reduce

Rapid estimation of Salmonella enterica contamination level in ground beef - Application of the time-to-positivity method using a combination of molecular detection and direct plating.

Little progress has been made in decreasing the incidence rate of salmonellosis in the US over the past decade. Mitigating the contribution of contaminated raw meat to the salmonellosis incidence rate requires rapid methods for quantifying Salmonella, so that highly contaminated products can be removed before entering the food chain. Here we evaluated the use of Time-to-Positivity (TTP) as a rapid, semi-quantitative approach for estimating Salmonella contamination levels in ground beef. Growth rates of 14 Salmonella strains (inoculated at log 1 to -2 CFU/g) were characterized in lean ground be

An outbreak of Salmonella Saintpaul gastroenteritis after attending a school camp in the Northern Territory, Australia.

An outbreak of salmonellosis occurred following attendance at a school camp between 5 and 8 August 2014 in a remote area of the Northern Territory, Australia. We conducted a retrospective cohort study via telephone interviews, using a structured questionnaire that recorded symptoms and exposures to foods and activities during the camp. A case was anyone with laboratory confirmed Salmonella Saintpaul infection or a clinically compatible illness after attending the camp. Environmental health officers from the Environmental Health Branch undertook an investigation and collected water and environm

Preventing Campylobacter at the source: why is it so difficult?

Campylobacteriosis in humans, caused by Campylobacter jejuni and Campylobacter coli, is the most common recognized bacterial zoonosis in the European Union and the United States. The acute phase is characterized by gastrointestinal symptoms. The long-term sequelae (Guillain-Barré syndrome, reactive arthritis, and postinfectious irritable bowel syndrome) contribute considerably to the disease burden. Attribution studies identified poultry as the reservoir responsible for up to 80% of the human Campylobacter infections. In the European Union, an estimated 30% of the human infections are associat

Multiple outbreaks of gastroenteritis that were associated with 16 funerals and a unique caterer and spanned 6 days, 2011, Québec, Canada.

In January 2011, multiple acute gastroenteritis outbreaks that spanned many days and were related to attendance at funerals were reported to public health units in Quebec. An epidemiological investigation was initiated to identify the source of the contamination and to explain the extent of the contamination over time. Thirty-one cohorts of individuals attended different funerals held between 14 and 19 January. All attendees were served a cold buffet made by the same caterer. Of these 31 cohorts, 16 (with a total of about 800 people) contained individuals who reported being ill after the funer

[Presence of Listeria monocytogenes in ready-to-eat foods available in open markets, delicatessens and supermarkets, Bogotá, 2002-2008].

INTRODUCTION: The increase in diseases transmitted by foods has become a public health problem. Listeria monocytogenes, the etiological agent of listeriosis or typical food poisoning,is considered to be among the most important food borne illnesses. High risk foods for L.monocytogenes have been recognized as foods already prepared for consumption and made available in retail outlets. OBJECTIVE: The presence of L. monocytogenes was identified in prepared foods found in open markets and delicatessens in the city of Bogotá. MATERIAL AND METHODS: A transverse descriptive study over a 7-year peri

A five year surveillance report on PFGE types of Listeria monocytogenes isolated in Italy from food and food related environments.

Listeria monocytogenes can cause severe invasive disease in humans and has been isolated from a variety of foods. This study aimed to investigate type diversity and distribution across sources by subtyping via PFGE a set of 300 L. monocytogenes isolates collected in Italy from foods over a five year period (from 2003 to 2007). The most frequent serotypes were 1/2a (45%), 1/2c (22%), and 4b/4e (16%); 5% of the isolates were untypeable by conventional serotyping. Significant associations were observed between serotype 1/2a with dairy (O.R.=13.9) and 1/2c with meat (O.R.=33.3). All isolates were

Occurrence of Listeria monocytogenes in sandwiches available to hospital patients in Wales, United Kingdom.

A survey for the presence of Listeria monocytogenes in hospital sandwiches was carried out in Wales, United Kingdom, between October 2005 and March 2006. The main aim of the survey was to establish the baseline rate of L. monocytogenes in hospital sandwiches after an outbreak of listeriosis among hospital patients in 2004 was epidemiologically linked to the consumption of contaminated sandwiches. The overall positive rate found in hospital sandwiches was 2.84% for enriched culture and 0.21% for direct counts. The unsatisfactory rate (> 100 CFU/g) for hospital sandwiches was 0.1%. The conclusio

Primer on food-borne pathogens for subsistence food handlers.

Subsistence food preparations may lead to human illnesses caused by pathogenic bacteria and viruses. Little is known about the incidence of food-borne illnesses other than botulism in circumpolar indigenous populations. Lack of documentation for other pathogens may be related to the sparsely populated communities involved, limited laboratory analysis, and non-lethality to healthy individuals. This overview covers the major food-borne pathogens, their sources, transmission, growth parameters, and prevention. Examples of indigenous peoples' food preparations that may be susceptible to pathogenic

Botulinum Neurotoxin Detection Methods for Public Health Response and Surveillance.

Botulism outbreak due to consumption of food contaminated with botulinum neurotoxins (BoNTs) is a public health emergency. The threat of bioterrorism through deliberate distribution in food sources and/or aerosolization of BoNTs raises global public health and security concerns due to the potential for high mortality and morbidity. Rapid and reliable detection methods are necessary to support clinical diagnosis and surveillance for identifying the source of contamination, performing epidemiological analysis of the outbreak, preventing and responding to botulism outbreaks. This review considers

[Botulism in an infant].

We describe a case of botulism in a 4.5 month-old girl with complete recovery after intravenous administration of botulism immune globulin. The girl was admitted for 19 days during which supplementary nasogastric feeding was necessary. Mechanical ventilation was not needed. Despite thorough investigation, contaminated food was not found. One particular batch of canned baby food was suspected and recalled from the market, but no contamination was found. The girl had not ingested honey. The condition is rare, but can be very serious and should be kept in mind in cases presenting with the well-de

A Simple Microwave Imaging System for Food Product Inspection through a Symmetry-Based Microwave Imaging Approach.

In the food industry, there is a growing demand for cost-effective methods for the inline inspection of food items able to non-invasively detect small foreign bodies that may have contaminated the product during the production process. Microwave imaging may be a valid alternative to the existing technologies, thanks to its inherently low-cost and its capability of sensing low-density contaminants. In this paper, a simple microwave imaging system specifically designed to enable the inspection of a large variety of food products is presented. The system consists of two circularly loaded antipoda

Comparison of Listeria monocytogenes isolates across the island of Ireland.

Building a comprehensive knowledge base of the association of Listeria monocytogenes isolates across national food chains, clinical cases, and environments can play a key role in helping control the incidence of listeriosis. Today, many food chains cross national borders and are often shared by neighboring countries. This study characterized L. monocytogenes isolated from food samples in Northern Ireland and investigated whether similarities in the population and associations of L. monocytogenes strains exist in the neighboring countries of Northern Ireland and the Republic of Ireland, which t

Modeling the risk of introducing cyst-infected meat pork into the food chain in Benin.

BACKGROUND: Poorly cooked pork containing Taenia solium cestode larvae contributes to human cysticercosis, a neglected zoonotic disease. Pork is consumed by a majority of the Benin population, and the cooking of popular dishes may not be sufficient to destroy cestode larvae. This study's aim was to estimate the risk of allowing pork contaminated with Taenia solium cysticerci into the food chain. METHODS: A stochastic risk assessment was developed in R to model the risk resulting from the three scenarios leading to contaminated pork being introduced into the food chain. The model was parameter

Phthalates contamination in sediments: A review of sources, influencing factors, benthic toxicity, and removal strategies.

Sediments provide habitat and food for benthos, and phthalates (PAEs) have been detected in numerous river and marine sediments as a widely used plastic additive. PAEs in sediments is not only toxic to benthos, but also poses a threat to pelagic fish and human health through the food chain, so it is essential to comprehensively assess the contamination of sediments with PAEs. This paper presents a critical evaluation of PAEs in sediments, which is embodied in the analysis of the sources of PAEs in sediments from multiple perspectives. Biological production is indispensable, while artificial sy

Microfluidics-free hydrogel-based digital PCR for detection of Salmonella in food.

Salmonella is a major foodborne pathogen, underscoring the need for rapid, sensitive, and accurate quantitative detection methods for food safety monitoring. Most existing digital PCR technologies rely on microfluidic platforms, specialized instruments, and high operating costs. To address these limitations, a one-step and microfluidics-free digital PCR method based on polyacrylamide hydrogel (PAM-dPCR) was developed for the detection and absolute quantification of Salmonella in food samples. Without the need for microfluidic chips, this method relies on the three-dimensional polyacrylamide hy

Lead and Cadmium Induced Toxicity Under Prolonged Low-Dose Exposure: Food Chain Driven Source, Molecular Mechanisms, Signaling Cascade, and Health Implications.

Exposure of humans to heavy metals such as lead (Pb) and cadmium (Cd) has been significantly increased due to the industrial activities of the past century and causes global health concerns. Pb and Cd can encounter humans through both dietary and environmental pathways. Despite extensive research on individual metals, the integrated mechanisms of mixed Pb-Cd exposure remain poorly understood, especially under chronic low-dose conditions representative of a real-world scenario. Hence, the present review focuses on the acute effects of Pb and Cd on human disease, intracellular dynamics, their di
