Nutritional rehabilitation of HIV-exposed infants in Malawi: results from the drug resources enhancement against AIDS and malnutrition program.

Infant malnutrition in sub-Saharan Africa is a public health priority and a challenge in high HIV prevalence areas. The Drug Resources Enhancement Against AIDS and Malnutrition program, with multiple medical centers in Sub-Saharan Africa, developed an innovative intervention for the surveillance and control of malnutrition. In a pilot initiative, 36 HIV-exposed children were evaluated at baseline upon presentation for malnutrition and at six months post- treatment. Parameters included HIV-free survival, nutritional status and change in diet. Food diary data was entered and processed using the

Total mercury, methylmercury and ethylmercury in marine fish and marine fishery products sold in Seoul, Korea.

In 2009, a survey of 177 samples of fish and fishery products from the markets in Seoul was carried out to investigate total mercury and organic mercury (methylmercury) concentrations and to establish a correlation, if any, between total and organic mercury levels. Concentrations of total and organic mercury in canned tuna ranged 0.001-2.581 and 0.003-1.307 mg/kg, respectively; those for fish, such as cod or salmon, ranged 0.012-2.529 and 0.021-0.507 mg/kg, respectively. Ethylmercury was not detected. More than 50% of total mercury in the samples existed as organic mercury. The correlation coe

Konzo outbreak among refugees from Central African Republic in Eastern region, Cameroon.

Konzo is a spastic paraparesis of sudden onset, linked to the exclusive consumption of insufficiently processed bitter cassava as staple food combined with low protein intake. Around 60,000 refugees from the Central African Republic sought refuge in villages in eastern Cameroon between 2005 and 2007. Médecins Sans Frontières was providing nutritional and medical assistance in the villages affected by displacement. We describe cases of konzo seen at the mobile clinics organized in these villages. Basic information including demographic data, history and clinical presentation was recorded for ea

Cortical network for representing the teeth and tongue in primates.

Sensory information from the tongue and teeth is used to evaluate and distinguish food and nonfood items in the mouth, reject some and masticate and swallow others. While it is known that primates have a complex array of 10 or more somatosensory areas that contribute to the analysis of sensory information from the hand, less is known about what cortical areas are involved in processing information from receptors of the tongue and teeth. The tongue contains taste receptors, as well as mechanoreceptors. Afferents from taste receptors and mechanoreceptors of the tongue access different ascending

Biological effects of Maillard browning products that may affect acrylamide safety in food: biological effects of Maillard products.

The heat-induced reaction of amino groups of amino acids, peptides, and proteins with carbonyl groups of reducing sugars such as glucose results in the concurrent formation of so-called Maillard browning products and acrylamide. For this reason, reported studies of adverse biological effects of pure acrylamide may not always be directly relevant to acrylamide in processed food, which may contain Maillard and other biologically active products. These may either antagonize or potentiate the toxicity of acrylamide. To stimulate progress, this paper presents an overview of selected reported studie

Anaphylaxis to mustard as a masked allergen in "chicken dips".

BACKGROUND: Masked allergens in processed foods are sometimes responsible for "idiopathic" anaphylaxis because of the lack of full ingredient labeling. Patients, even if they are aware of a specific hypersensitivity, may be unaware of trace amounts of the offending allergen(s) that are present in these products. METHODS: We report a case of severe anaphylaxis to mustard masked in "chicken dips." A 38-year-old woman had an anaphylactic reaction beginning 20 minutes after eating "chicken dips" in a fast food restaurant. She was treated successfully in an emergency room and then referred to us f

Effect of ethyl alcohol on motor function in canine stomach.

The aim of this study was to elucidate the effects of ethanol on gastric emptying and the trituration of solid food. With the use of a noninvasive physiological imaging technique, gastric processing of a radiolabeled solid meal was evaluated in unanesthetized dogs which ingested 6-8% ethanol solutions or received intravenous alcohol before the meal. Oral alcohol (resulting in blood levels up to 174 mg/dl) decreased the amplitude of antral contractions or completely abolished them. Alcohol did not significantly affect the fundamental frequency of contractions except at high doses, at which cont

Cassava cyanogens and konzo, an upper motoneuron disease found in Africa.

Konzo is a distinct form of tropical myelopathy characterised by abrupt onset of spastic paraparesis. Epidemics in East Africa have been attributed to dietary cyanide exposure from insufficiently processed cassava but a study done in Zaire disputed such an aetiology. We investigated a konzo-affected population in rural Zaire and measured the cyanogen content of cassava flour, determined urinary thiocyanate as an indicator of cyanide intake, and compared blood cyanide concentrations in cases and controls. The affected population consumed flour made from short-soaked (one day) cassava roots and

Childhood obesity in changing food systems: mediterranean diet, socioeconomic inequalities and AI-driven personalized nutrition - the case of Italy.

Childhood obesity is a major global public health challenge resulting from the interaction between changing food systems, dietary behaviors, and social inequalities. This Perspective argues that childhood obesity should be addressed through an integrated systems-based framework that links food environments, socioeconomic determinants, and emerging digital health technologies. Across Europe, children's dietary patterns have shifted toward increased consumption of ultra-processed foods and energy-dense products, alongside low adherence to healthy dietary guidelines. These trends disproportionate

Reading the "Let's Beat Diabetes" Campaign Amidst Poverty in Singapore: A Culture-Centered Interrogation.

Critical scholarship documents how health communication campaigns reinforce inequalities by promoting individualized behavior change while erasing structural contexts. Drawing on the culture-centered approach (CCA), this study inverts dominant campaign logic by examining how households negotiating poverty in Singapore interpret and respond to the state-led "Let's Beat Diabetes" campaign. Through in-depth interviews with 39 low-income residents, we document how marginalized voices render visible the gaps, erasures, and structural barriers embedded in technocratic campaign design. Findings revea

Adherence to 2018 WCRF/AICR recommendations and colorectal cancer risk: A case-control and Mendelian randomization study.

BACKGROUND: The association between adherence to the 2018 World Cancer Research Fund/American Institute for Cancer Research (WCRF/AICR) recommendations and colorectal cancer (CRC) risk remains inconsistent in epidemiological studies, with particularly sparse data from Chinese populations. This study aimed to evaluate this relationship comprehensively. METHODS: We conducted a case-control study involving 3030 incident CRC cases and 3044 age- and sex-matched controls. Multivariable logistic regression models were used to examine the association between adherence to the seven-point 2018 WCRF/AIC

Melatonin may protect the gastrointestinal system from cadmium chloride toxicity during pregnancy.

Cadmium is absorbed into the body through food consumption. Since food intake increases during pregnancy, Cadmium consumption from food also increases. Melatonin, secreted by the pineal gland, is an antioxidant hormone with therapeutic effects. This research aims to reveal how Cadmium Chloride (CdCl2) affects antioxidant capacity by histological and biochemical methods and to test the effect of Melatonin in treating CdCl2-induced lesions in pregnant mice's stomach and small intestine. Control, CdCl2, Melatonin, and CdCl2 + Melatonin groups were created using pregnant mice (n: 6). CdCl2 (2 mg/k

Raw diets for dogs and cats: Potential health benefits and threats.

Raw meat-based diets for pet nutrition are becoming increasingly popular. The percentage of meat content, composition of nutrients, and amount of additives started to play an important role in the recipe of a given food. However, the use of healthier and unprocessed food must also be balanced with the animal's specific needs based on its anatomy, physiology, and behavior. There are many potential advantages and disadvantages of a biologically appropriate raw food (BARF) diet, and all of them should be considered before switching to this approach. Raw meat is considered a diet closest to nature

Wheat amylase/trypsin inhibitors (ATIs): occurrence, function and health aspects.

Amylase/trypsin inhibitors (ATIs) are widely consumed in cereal-based foods and have been implicated in adverse reactions to wheat exposure, such as respiratory and food allergy, and intestinal responses associated with coeliac disease and non-coeliac wheat sensitivity. ATIs occur in multiple isoforms which differ in the amounts present in different types of wheat (including ancient and modern ones). Measuring ATIs and their isoforms is an analytical challenge as is their isolation for use in studies addressing their potential effects on the human body. ATI isoforms differ in their spectrum of

Activity-based anorexia alters hypothalamic POMC and orexin populations in male rats.

The objective of this study was to investigate the orexin and POMC populations in the hypothalamic nuclei of male Wistar rats after the activity-based anorexia (ABA) procedure. Four groups were established based on food restriction and activity: activity (A), ABA, diet (D) and control (C). The ABA protocol consisted of free access to a running wheel for a period of 22 h and access to food for 1 h. When the animals in the ABA group reached the ABA criterion, were sacrificed, and their brains were collected and serially sectioned. The free-floating sections were processed for orexin and POMC imm

Raw diets for dogs and cats: a review, with particular reference to microbiological hazards.

There is a recent trend to feed pet dogs and cats in Britain and other developed countries on raw meat and animal by-products using either commercial preparations or home recipes. This shift from heat-treated processed food has been driven by perceived health benefits to pets and a suspicion of industrially produced pet food. The diets of wild-living related species have been used as a rationale for raw feeding, but differences in biology and lifestyle impose limitations on such comparisons. Formal evidence does exist for claims by raw-feeding proponents of an altered intestinal microbiome and

Implicated Food Products for Listeriosis and Changes in Serovars of Listeria monocytogenes Affecting Humans in Recent Decades.

Listeriosis is a foodborne disease with a high fatality rate, and infection is mostly transmitted through ready-to-eat (RTE) foods contaminated with Listeria monocytogenes, such as gravad/smoked fish, soft cheeses, and sliced processed delicatessen (deli) meat. Food products/dishes stored in vacuum or in modified atmospheres and with extended refrigerator shelf lives provide an opportunity for L. monocytogenes to multiply to large numbers toward the end of the shelf life. Elderly, pregnant women, neonates, and immunocompromised individuals are particularly susceptible to L. monocytogenes. List

Fortification strategies to meet micronutrient needs: successes and failures.

Food fortification is likely to have played an important role in the current nutritional health and well-being of populations in industrialized countries. Starting in the early part of the 20th century, fortification was used to target specific health conditions: goitre with iodized salt; rickets with vitamin D-fortified milk; beriberi, pellagra and anaemia with B-vitamins and Fe-enriched cereals; more recently, in the USA, risk of pregnancy affected by neural-tube defects with folic acid-fortified cereals. A relative lack of appropriate centrally-processed food vehicles, less-developed commer
