Hidden presence of cow's milk proteins in foods.

Cow's milk is one of the first foreign proteins ingested by infants and is one of the most common and potent food allergens. The presence of cow's milk is widespread due also to its unlabelled inclusion as an ingredient, or to errors in cooking, processing and preparation, and in restaurant food. As several foods may contain cow's milk in a hidden form, foods for allergic babies should be prepared at home or with food items with all their ingredients listed on the label. Parents should be provided with appropriate material and instructed how to detect potential sources of hidden cow's milk by

Safer and healthier foods.

During the early 20th century, contaminated food, milk, and water caused many foodborne infections, including typhoid fever, tuberculosis, botulism, and scarlet fever. In 1906, Upton Sinclair described in his novel The Jungle the unwholesome working environment in the Chicago meat-packing industry and the unsanitary conditions under which food was produced. Public awareness dramatically increased and led to the passage of the Pure Food and Drug Act. Once the sources and characteristics of foodborne diseases were identified--long before vaccines or antibiotics--they could be controlled by handw

Cyanide detoxification in cassava for food and feed uses.

Cassava (Manihot esculenta Crantz) is an important tropical root crop providing energy to about 500 million people. The presence of the two cyanogenic glycosides, linamarin and lotaustralin, in cassava is a major factor limiting its use as food or feed. Traditional processing techniques practiced in cassava production are known to reduce cyanide in tubers and leaves. Drying is the most ubiquitous processing operation in many tropical countries. Sun drying eliminates more cyanide than oven drying because of the prolonged contact time between linamarase and the glucosides in sun drying. Soaking

Fate of Listeria monocytogenes in processed meat products during refrigerated storage.

The fate of Listeria monocytogenes during refrigerated storage was determined on several processed meat products, including ham, bologna, wieners, sliced chicken, sliced turkey, fermented semidried sausage, bratwurst, and cooked roast beef. The meats were surface inoculated with a five-strain mixture of less than or equal to 200 or ca. 10(5) L. monocytogenes cells per package, vacuum packaged, and stored at 4.4 degrees C. Survival or growth of listeriae was determined for up to 12 weeks of storage or until the product was spoiled. The organism survived but did not grow on summer sausage, grew

The role of location of food consumption in the prevention of travelers' diarrhea in Mexico.

The location of food consumption was recorded daily for 3 wk by 130 United States summer students newly arrived in Guadalajara, Jalisco, Mexico, as part of an assessment of bismuth subsalicylate vs. placebo in the irevention of travelers' diarrhea. Eating at locations other than homes and apartments (P < 0.025), and specifically at restaurants, was associated with an increased occurrence of diarrhea. Less eating at restaurants (P < 0.005), street vendors (P < 0.005), and school cafeterias (P < 0.01) was associated with reduced occurrence of travelers' diarrhea, even among persons taking bismut

IMPROVED TEMPERATURE-GRADIENT INCUBATOR AND THE MAXIMAL GROWTH TEMPERATURE AND HEAT RESISTANCE OF SALMONELLA.

An improved all-metal temperature-gradient incubator produces its gradient by means of a bar permanently installed in a near-vertical position with its lower end in a cool constant-temperature water bath and with thermostatically controlled heaters near its top. Bolts hold the incubator in contact with the temperature-gradient bar, and polyurethane foam insulates the entire assemblage during use. Maximal growth temperatures of 34 representative strains of Salmonella were found to be between 43.2 and 46.2 C. In an agar medium with an initial level of 10(6) cells per milliliter, no strain surviv

A streamlined procedure for advancing the detection and isolation of Listeria monocytogenes from artificially contaminated ground beef in a single working day.

UNLABELLED: Listeria monocytogenes, a rod-shaped Gram-positive bacterium widely distributed in nature, can contaminate foods and represents a foodborne pathogen of public health significance causing a high mortality rate of 20%-30%. Rapid and reliable identification of foods and food-processing environments contaminated with L. monocytogenes is a crucial step in implementing effective intervention strategies to ensure food safety and limit the transmission of bacteria to humans. This study designed and refined a practical workflow to streamline and accelerate the detection of a low level of L.

Citrus peel extract-incorporated gelatin/CMC films as an antiviral active packaging system against hepatitis A virus.

Hepatitis A virus (HAV) remains a major foodborne hazard in fresh produce, where conventional decontamination methods often show limited efficacy because of matrix-associated shielding and restricted disinfectant penetration. Although biodegradable active packaging has emerged as a promising strategy, the antiviral application of citrus peel extract (CPE) in biodegradable films against HAV has not been investigated. This study developed CPE-incorporated gelatin/carboxymethyl cellulose (G/CMC) films and evaluated their antiviral efficacy against HAV in suspension, on food-contact surfaces, on b

Can Mycobacterium avium subsp. paratuberculosis Survive During Pecorino Cheesemaking Process? An Experimental Evaluation Through a Microbiological Challenge Test.

Paratuberculosis is an infectious disease mainly affecting domestic ruminants, caused by Mycobacterium avium subsp. paratuberculosis (MAP). Affected animals shed the pathogen through feces, also during the subclinical stages of the disease. Although there is still no conclusive evidence of MAP involvement in human diseases, particularly Crohn's disease and autoimmune disorders, exposure to MAP through the consumption of contaminated dairy products has become a public health concern. Therefore, in this study, the survival of MAP during the production of Pecorino, an Italian cheese made from raw

A dual-functional fluorescent probe for biosystem imaging and food safety monitoring of HSO3- with high selectivity and sensitivity.

In the food field, HSO3- is commonly used as a beverage additive, antioxidant, enzyme inhibitor, and preservative to extend shelf life and freshness. However, excessive intake of exogenous HSO3- can lead to abnormal HSO3- concentration levels in the body, causing cardiovascular and respiratory diseases. This highlights the urgent need to develop a rapid and sensitive probe for the quantitative detection of HSO3- in foods and biosystems. In this study, we design and synthesize a novel HSO3- fluorescent probe named DCPD. Bioimaging experiments show that DCPD has good mitochondrial targeting and

Quantitative Microbial Risk Assessment of Listeriosis Associated With Ready-to-Eat Products in Iran: A Comprehensive Analysis.

A Quantitative Microbial Risk Assessment (QMRA) model was developed to predict the risk of listeriosis associated with consuming ready-to-eat (RTE) products in Iran. Utilizing Monte Carlo simulation software, 79 positive cases were identified out of 2608 samples, yielding an overall prevalence of 58.5%. Prevalence varied across categories (1.01%-6.74%), with Listeria monocytogenes levels below the 100 CFU g-1 threshold in positive samples. The 5th and 95th percentiles for annual listeriosis risk per serving were estimated for vulnerable (6.05 × 10-8 to 1.16 × 10-7) and general populations (1.3

Hurdle Approach to Simulate Corn Wet Milling Inactivation of Undesirable Microorganisms: A Pilot Scale Microbial Challenge Study Using Salmonella Surrogate Enterococcus faecium.

Corn wet milling (CWM) and corn starch flash drying processing conditions reduce undesirable microorganisms, such as Salmonella. Finished products are historically safe, with intrinsic properties such as low water activity inhibiting microbial growth. Corn processors could use quantified levels of reduction in this study of Salmonella surrogate Enterococcus faecium (E. faecium) to update their food safety plans. Industry-relevant conditions for CWM processes were recreated at pilot or lab scale for 3 unit operations: (1) steeping treatment in sulfur dioxide (SO2) with low (750 ppm SO2, 20 h, 4

Effect of peeling, cutting, or shredding of lettuce, carrot, or potato on the efficacy of chlorine disinfection.

Minimally processed vegetables are washed and subsequently disinfected by immersion in water solutions with antimicrobials which reduce the initial pathogenic or spoilage microbial load. Chlorine remains one of the most widely used disinfectants for vegetables and hence the importance of studying its properties. The aim of this study was to evaluate the effect of peeling, cutting, and shredding on the effectiveness of chlorine (200 ppm) as a disinfectant in lettuce, carrot, and potato. Three independent repetitions of each experiment were completed, and data was statistically analyzed. Results

A Simple Screening Method for Extra Virgin Olive Oil Adulteration by Determining Squalene and Tyrosol.

A simple screening method for discrimination between commercial extra virgin olive oils and their blends with other vegetable oils was developed. Squalene, which was contained relatively high amounts in virgin olive oil, was determined by HPLC after a simple pretreatment that was carried out by dilution of oil samples with 2-propanol. Tyrosol, which was contained at relatively high concentration in virgin olive oil among phenolic compounds, was determined by HPLC after a simple liquid-liquid extraction. When using squalene and tyrosol contents as axes, extra virgin olive oils could be discrimi

Food safety/food security aspects related to the environmental release of pharmaceuticals.

The environmental presence of pharmaceuticals in top soil and in water where extensive animal farming occurs may represent an involuntary source of residues in food that might affect both food safety and food security. We modelled the presence of residues in animal matrices from the inventoried environmental concentration of selected drugs in surface waters (range: 0.1-10μgL(-1)) and agriculture soils (range: 1-100μgkg(-1) dry weight), accounting for animal production parameters (i.e., forages, water intake and milk and egg production) and drug pharmacokinetics. The results indicate that the c

Development of a magnetic nanoparticles microarray for simultaneous and simple detection of foodborne pathogens.

Foodborne diseases are a widespread and growing public health problem affecting both developed and developing countries, microbiologically contaminated food and water are the major causes of diarrhoeal diseases. Methods based on polymerase chain reaction (PCR) and microarrays are rapid and sensitive enough to detect very small quantities of microorganisms, however, the requirement for expensive equipments limits their application. In the present paper, we describe a method based on multiplex PCR and magnetic nanoparticles labelling for simultaneous detection of four major foodborne pathogens,
