[Is chromium an essential trace element in human nutrition?].

It has been recognized that chromium is an essential trace element associated with carbohydrate metabolism, and chromium deficiency causes an impaired glucose tolerance. Recently, however, Vincent et al. have reported that chromium is not an essential trace element. In the present report, the author evaluated the nutritional essentiality of chromium by reviewing several previous reports. In almost all previous reports, the chromium concentration in the animal feed used was higher than 0.1 μg/g, and it is difficult to consider that the experimental animals were in a low-chromium state. In addit

Problems associated with shellfish farming.

Shellfish culture is a major sector of aquaculture production worldwide, and zoonoses and drug residues associated with shellfish farm practice are of concern to public health. This paper focuses on three of the most important shellfish species: molluscs, crabs and shrimp. Although many diseases can affect shellfish, they do not appear to be transmittable to humans. Rather, the main hazards are associated with the methods used to farm the different species. The risk to human health from shellfish most commonly relates to contamination by biotoxins produced by marine algae. Another well-recogni

An updated review of Listeria monocytogenes in the pork meat industry and its products.

Pork meat and processed pork products have been the sources of outbreaks of listeriosis in France and in other European countries during the last decade. The aim of this review is to understand how contamination, survival and growth of Listeria monocytogenes can occur in pork meat products. This study discusses the presence of L. monocytogenes in raw pork meat, in the processing environment and in finished products. The prevalence of L. monocytogenes generally increases from the farm to the manufacturing plants and this mainly due to cross-contamination. In many cases, this pathogen is present

Determination of ethylenethiourea (ETU) and propylenethiourea (PTU) in foods by high performance liquid chromatography-atmospheric pressure chemical ionisation-medium-resolution mass spectrometry.

A robust and sensitive method for the determination of ethylenethiourea (ETU) and iso-propylenethiourea (i-PTU) in foods is reported. ETU and i-PTU were extracted by blending with dichloromethane (DCM) in the presence of sodium sulphate, sodium carbonate, thiourea and ascorbic acid. 2H4-ETU and n-PTU were used as internal standards. After filtration the DCM was removed by rotary evaporation and the extract re-dissolved in water before analysis by reversed-phase liquid chromatography with detection by atmospheric pressure chemical ionization-mass spectrometry using a double focusing mass spectr

Presence of Escherichia coli O157:H7 in ground beef and ground baby beef meat.

A total of 114 beef and baby beef samples were examined. The samples included ground baby beef, mixed ground baby beef and pork, and chopped and shaped meat. The samples were analyzed from 30 different grocery stores in Zagreb, Croatia. The object of this study was to evaluate the prevalence of Escherichia coli O157:H7 in the samples that can enhance the potential risk of outbreaks of hemorrhagic colitis and hemolytic uremic syndrome. The results in all tested samples of E. coli O157:H7 were negative. A single sample was positive in a latex agglutination test using antiserum to O157:H7. It was

[Food-related fungal infection risk in agranulocytosis. Mycological control of 273 food items offered to patients hospitalized in sterile units].

In sterile hospital units filamentous fungal infections are an unacceptable risk in patients with prolonged agranulocytosis. The occurrence of 3 successive cases in the Sterile unit of University Hospital of Grenoble prompted us to investigate in all elements of sterile unit, and notably food-processing. Two cooked rice dishes given to these patients were found to contain a substantial amount of Aspergillus fumigatus and were probably responsible for these infections. A more detailed study was carried out to evaluate the degree of food contamination by fungi in sterile unit. The study included…

Applicability of an immunoblot technique combined with a semiautomated electrophoresis system for detection of staphylococcal enterotoxins in food extracts.

We studied the usefulness of an immunoblot technique for the detection of staphylococcal enterotoxins (SEs) in strains and food extracts. Food samples (milk, yogurt, hot dog sausage, cheese, and mayonnaise) were artificially contaminated with SEA through SEE. Protein A did not interfere with the results; it appeared on electrophoresis gels as bands with molecular weights higher than those of the SEs. Other food proteins were not revealed by the technique. The immunoblot technique proved to be fast, specific, and sensitive for the detection of SEs in foods.

Effect of starter culture on staphylococcal enterotoxin and thermonuclease production in dry sausage.

Different amounts of enterotoxin A-, B-, and C1-producing staphylococci were added to dry sausage prepared by normal processes, either alone or in conjunction with a starter culture (micrococci and lactobacilli). The sausage was examined after 0, 3, 7, 14, and 30 days for staphylococci, micrococci, and lactobacilli, and measurements were made of water activity, pH, enterotoxin, and thermostable nuclease. The results showed that in the absence of starter culture measurable amounts of enterotoxin A were formed in a 200-g sample of dry sausage in 3 days, the level of Staphylococcus aureus infecti

Synergistic micro-nano bubble treatment via high-speed vortex and ultrasound enhances quality and safety of lettuce and cherry tomatoes.

This study aimed to address quality deterioration and microbial contamination in fresh produce during postharvest storage by exploring efficient and safe cleaning technologies. The effects of three micro-nano bubble (MNB) treatments generated via ultrasound (US), high-speed vortex (HV), and their synergistic system (HV-US) on the quality and safety of lettuce and cherry tomatoes were compared. Results showed that the HV-US synergistic system significantly outperformed the individual treatments (p < 0.05), which was attributed to its smaller bubble size, higher dissolved oxygen content, stronge

Bacteriophages for the Targeted Control of Foodborne Pathogens.

Foodborne illness is exacerbated by novel and emerging pathotypes, persistent contamination, antimicrobial resistance, an ever-changing environment, and the complexity of food production systems. Sporadic and outbreak events of common foodborne pathogens like Shiga toxigenic E. coli (STEC), Salmonella, Campylobacter, and Listeria monocytogenes are increasingly identified. Methods of controlling human infections linked with food products are essential to improve food safety and public health and to avoid economic losses associated with contaminated food product recalls and litigations. Bacterio

Bioaccessibility and Health Risk Assessment of Heavy Metals in Commercially Available Rice from Central Iran: Implications for Food Safety.

Total concentrations of cadmium (Cd), lead (Pb), and arsenic (As) in commercial rice varieties from Kashan, Iran, were measured via ICP-OES, with bioaccessibility assessed using an in vitro gastrointestinal digestion model. Results indicated that Cd levels (0.051-0.068 mg/kg) exceeded the FAO/WHO limit but were close to the Iranian standard. Pb concentrations (0.258-0.62 mg/kg) surpassed both national and international limits, while As levels (0.018-0.028 mg/kg) remained below permissible thresholds. Bioaccessibility ranged from 29% to 55% for Cd, 38%-43% for Pb, and 42%-61% for As, indicating

Measurement of Elements (Essential and Toxic) in Various Types of Canned Vegetable Available in Iran Using ICP‑OES Method: A Health Risk Assessment Study.

Canned vegetables are widely consumed due to their convenience, making the measurement of both toxic and essential elements crucial for food safety evaluation. In this study, fourteen elements were analyzed in canned vegetable samples using the ICP‑OES method. These included toxic elements (Hg, Ni, Al, As, Cd, and Pb) and essential elements (K, Na, Ca, Mg, Mn, Fe, Zn, and Se). Moreover, a health risk assessment (covering both carcinogenic and non‑carcinogenic risks) was performed for children and adults based on per capita consumption using the Monte Carlo method. The results showed that among

Ultra-sensitive determination of cyclopiazonic acid in complex food samples via competitive time-resolved luminescence immunoassays coupled to green microextraction.

In this study, an ultra-sensitive competitive luminescence immunoassay for detecting and quantifying the mycotoxin cyclopiazonic acid (CPA) in food was developed. Analyses were conducted in 96-well plates using magnetic beads as support for a CPA-mimetic peptide, enhancing the surface area available for competition. Light emission from an anti-CPA antibody fragment linked to a long-lifetime luminescent Tb (III) chelate, serving as optical label, was measured in time-resolved luminescence (TRL) mode upon binding to the mimetic peptide. In the presence of the target toxin, emission intensity dec

Fifty Years of Non-pestis Yersinia Outbreaks in the United States: Patterns, Vehicles, and Surveillance Challenges, 1971-2024.

While non-pestis yersiniosis experienced the largest increase in reported incidence of any bacterial enteric infection in the United States during 2016-2023, yersiniosis source attribution remains poorly understood. To address this gap, we described all yersiniosis outbreaks reported to CDC during 1971-2024. Trends in annual single-etiology foodborne outbreak frequency, including before-versus-after comparisons around major changes in yersiniosis surveillance and diagnostics, were estimated using Bayesian spline regression. Of 56 outbreaks reported, 38 were single-etiology. Outbreaks were link

A comprehensive review on arsenic exposure and risk assessment in infants and young children diets: Health implications and mitigation interventions in a global perspective.

The early stages of human development are critical for growth, and exposure to arsenic, particularly through the placenta and dietary sources, poses significant health risks. Despite extensive research, significant gaps remain in our comprehension of regional disparities in arsenic exposure and its cumulative impacts during these developmental stages. We hypothesize that infants in certain regions are at greater risk of arsenic exposure and its associated health complications. This review aims to fill these gaps by providing a comprehensive synthesis of epidemiological evidence related to arse
