Advancing detection of fungal and mycotoxins contamination in grains and oilseeds: Hyperspectral imaging for enhanced food safety.

Grains and oilseeds, including maize, wheat, and peanuts, are essential for human and animal nutrition but are vulnerable to contamination by fungi and their toxic metabolites, mycotoxins. This review provides a comprehensive investigation of the applications of hyperspectral imaging (HSI) technologies for the detection of fungal and mycotoxins contamination in grains and oilseeds. It explores the capability of HSI to identify specific spectral features of contamination and emphasized the critical role of sample properties and sample preparation techniques in HSI applications. Additionally, it

Cyanotoxins and Food Contamination in Developing Countries: Review of Their Types, Toxicity, Analysis, Occurrence and Mitigation Strategies.

Cyanotoxins have gained global public interest due to their potential to bioaccumulate in food, which threatens human health. Bloom formation is usually enhanced under Mediterranean, subtropical and tropical climates which are the dominant climate types in developing countries. In this context, we present an up-to-date overview of cyanotoxins (types, toxic effects, analysis, occurrence, and mitigation) with a special focus on their contamination in (sea)food from all the developing countries in Africa, Asia, and Latin America as this has received less attention. A total of 65 publications have

A rapid subtractive immunization method to prepare discriminatory monoclonal antibodies for food E. coli O157:H7 contamination.

To detect food E. coli O157:H7 contamination rapidly and accurately, it is essential to prepare high specific monoclonal antibodies (mAbs) against the pathogen. Cyclophosphamide (Cy)-mediated subtractive immunization strategy was performed in mice to generate mAbs that react with E. coli O157:H7, but not with other affiliated bacteria. Specificity of 19 mAbs was evaluated by ELISA and/or dot-immunogold filtration assay (DIGFA). Immunogloubin typing, affinity and binding antigens of 5 selected mAbs were also analysed. MAbs 1D8, 4A7, 5A2 were found to have high reactivity with E. coli O157:H7 an

The incidence and level of Listeria monocytogenes contamination of food sources at primary production and initial processing.

Listeria monocytogenes was isolated in low numbers from a variety of environmental samples associated with the primary production of food, including vegetation, faeces and meat. The organism was rarely detected on growing grass and vegetables prior to processing. The excretion of L. monocytogenes by farm animals was linked to their diet, with animals fed entirely on hay or manufactured diets not excreting detectable levels of Listeria (i.e. absence in 25 g). However, animals fed on silage, which is frequently contaminated with L. monocytogenes, commonly excreted the organism. Transport of live

Emerging contaminants in microalgae-based sustainable foods: occurrence patterns and dietary risk implications.

Microalgae-based foods are gaining attention as sustainable protein sources, but information on the occurrence of emerging contaminants in commercial products remains limited. Here, we investigated the occurrence patterns and dietary risk implications of three classes of emerging contaminants, including parabens, per- and polyfluoroalkyl substances (PFAS), and p-phenylenediamine antioxidants (PPDs), in 77 commercially available microalgae-based food samples from China, including spirulina powder, chlorella powder, and microalgae-processed food products. Target analytes were quantified using ul

Trends of microextraction methods for phenolic compounds in food: focusing natural antioxidants and synthetic contaminants.

Phenolic compounds in foods have dual character, i.e., natural antioxidants contributing to preservation and health, and synthetic contaminants posing risks. An accurate analysis of both types of compounds is imperative for evaluating the food quality and safety. This review summarizes the recent advances in microextraction techniques for determining phenolic content in food with focus on liquid phase and solid phase microextraction approaches. It highlights how emerging solvents (e.g., ionic liquids and natural deep eutectic solvents) and functional adsorbents (e.g., covalent organic framewor

Associations between the prevalence of asthma and dietary exposure to food contaminants in children: CHASER study.

BACKGROUND: Asthma is a common, multifactorial chronic disease with a major impact on children and adolescents. Exposure to food contaminants is one of the contributing factors to asthma. This study aims to evaluate the intake and exposure of different contaminants and explore their association with childhood asthma. METHODS: The Childhood Asthma and Environment Research study evaluated Italian children aged 5-14 years, divided into control and asthma case groups. Dietary habits were recorded, and exposure to 11 food contaminants was estimated with the CONT11 database. The study included 428

Assessing the potential impact on the thyroid axis of environmentally relevant food constituents/contaminants in humans.

Occurrence and mode of action of potentially relevant goitrogens in human nutrition and their mode of action (MOA) are reviewed, with special focus on the anionic iodine uptake inhibitors perchlorate (PER), thiocyanate (SCN) and nitrate (NO3). Epidemiological studies suggest persistent halogenated organic contaminants and phthalates as well as certain antimicrobials to deserve increased attention. This also applies to natural goitrogens, including polyphenols and glucosinolates, food constituents with limited data density concerning human exposure. Glucosinolates present in animal feed are pre

An outbreak of cryptosporidiosis suspected to be related to contaminated food, October 2006, Sakai City, Japan.

On October 17, 2006, the Sakai City Public Health Center received a report of acute gastroenteritis among 4 members from the same company who had eaten raw meat dish called "Yukke: Korean-style beef tartar" and raw liver at a rotisserie in Sakai City on October 7. Based on information from interviews, the median incubation period was 5.5 (range, 5-7 days), and the median length of illness was 7 days (range, 4-10 days). The illness was characterized by a prolonged incubation period, non-bloody watery diarrhea, reduced vomiting, and light fever, which led us to suspect an enteric protozoan infec

Botulism Risk from Post-Processing Contamination of Commercially Canned Foods in Metal Containers.

This report focuses on the potential public health risks of Clostridium botulinum from post-process contamination of commercially produced foods in metal containers. This review examines the environmental sources of C. botulinum , the effect of sanitizers in cannery cooling water and the botulism incidents involving U.S. canned foods. There is no evidence that leaker spoilage due to container defects is increasing. The post-processing contamination of commercially produced foods in metal containers by C. botulinum is a rare event which occurs randomly. Based on historical information, its prob

A robust nanobody-magnetic bead immunoassay for food safety monitoring: Sensitive detection of viral contamination in giant salamander.

The Chinese giant salamander is a valued food source of high-quality protein; however, the prevalence of Giant Salamander Iridovirus (GSIV) poses a significant threat to the safety and stability of the aquaculture food supply chain. Rapid and sensitive screening of viral pathogens in complex food matrices is therefore critical. We developed a bridge-free double-nanobody sandwich ELISA using magnetic beads (MBs) for detection of GSIV. AlphaFold 3 modeling suggested that covalent immobilization via conserved framework lysines may promote an optimal "upright" nanobody orientation, significantly e

Aristolochic acid I: an investigation into the role of food crops contamination, as a potential natural exposure pathway.

Aristolochic acid I (AAI) is a potent nephrotoxic and carcinogenic compound produced by plants of the Aristolochiaceae family and thoroughly investigated as a main culprit in the etiology of Balkan endemic nephropathy (BEN). So far, the AAI exposure was demonstrated to occur through the consumption of Aristolochia clematitis plants as traditional remedies, and through the contamination of the surrounding environment in endemic areas: soil, food and water contamination. Our study investigated for the first time the level of AAI contamination in 141 soil and vegetable samples from two cultivated

Proteomic approach for identifying gonad differential proteins in the oyster (Crassostrea angulata) following food-chain contamination with HgCl2.

UNLABELLED: Hg discharged into the environmental waters can generally be bioaccumulated, transformed and transmited by living organisms, thus resulting in the formation of Hg-toxicity food chains. The pathway and toxicology of food chain contaminated with environmental Hg are rarely revealed by proteomics. Here, we showed that differential proteomics had the potential to understand reproduction toxicity mechanism in marine molluscs through the Hg-contaminated food chain. Hg bioaccumulation was found in every link of the HgCl2-Chlorella vulgaris-oyster-mice food chain. Morphological observation

A large food-borne outbreak of group A streptococcal pharyngitis in an industrial plant: potential for deliberate contamination.

Contamination of food with streptococci could present with unusual outbreaks that may be difficult to recognize in the early stages. This is demonstrated in a large food-borne outbreak of streptococcal pharyngitis that occurred in 2003 in a factory in Israel. The outbreak was reported to the public health services on July 2 and an epidemiologic investigation was initiated. Cases and controls were interviewed and throat swabs were taken. An estimated 212 cases occurred within the first 4 days, the peak occurring on the second day. There was a wave of secondary cases during an additional 11 days

Whole-genome analysis of a polyvalent Salmonella phage reveals its potential to combat intracellular infection and food contamination.

Salmonella infections represent a significant challenge to global public health, a situation further complicated by the rising prevalence of antibiotic resistance. In this study, a broad-spectrum phage, designated vB_SaeS_BG-2P, capable of efficiently lysing S. 4,[5],12:i:-and S. Kentucky, which are among the predominant serovars associated with human salmonellosis, was identified. The phage demonstrated a lytic efficiency of >98.3% against selected serovars (n = 5) of Salmonella isolates and also infected various Enterobacteriaceae, including Shigella flexneri, Escherichia coli and Klebsiella
