Managing snacking behaviors through energy density, portion control, sensory properties, and packaging.

Between-meal snacks contribute >20% of daily energy intakes to typical Western diets. Most snacks are both energy-dense and palatable. This perspective summarizes the scientific foundation of responsible snacking, focusing on energy density, portion control, innovative packaging, taste and texture, and intentional consumption. Laboratory studies show that pairing energy-dense snacks with fruits or whole grains helps to reduce energy density of the eating occasion, leading to fewer calories consumed. Reducing serving sizes of energy-dense foods is another laboratory tested strategy for calorie

Molecular mechanisms of antifreeze natural deep eutectic solvents in frozen food systems: Hydrogen-bond network and ice regulation.

Controlling ice recrystallization and water dynamics is critical for frozen food quality, while conventional cryoprotectants primarily rely on colligative effects and provide limited molecular-level regulation of ice formation. Amino acid-based antifreeze natural deep eutectic solvents (AF-NADES) composed of glycerol, L-proline, and L-arginine were developed to modulate water and ice behavior through multivalent hydrogen-bond interactions. Among the formulations, the ternary glycerol-proline-arginine system (GPR) exhibited the strongest antifreeze performance, maintaining ice crystal areas bel

Sustainable Fortification of Corn Tortillas with Broccoli By-Products.

Fortification is the deliberate addition of essential micronutrients, such as vitamins and minerals, to enhance a food's nutritional profile and contribute to public health. A promising approach to fortification involves the use of plant by-products which are rich in bioactive compounds. This study evaluates the effects of incorporating broccoli by-product powder into corn-flour tortillas. Five formulations were developed: a control (100% corn flour) and variations replacing 2.5%, 5%, 7.5%, and 10% of the corn flour with broccoli by-product powder. Adding broccoli powder resulted in darker tor

Green Ultrasound-Assisted Dispersive Liquid-Liquid Microextraction Coupled to GC-MS for Simultaneous Determination of Lipid-Peroxidation- and Maillard-Derived Carbonyl Compounds in Plant-Based Beverages.

Carbonyl compounds generated through lipid peroxidation and Maillard-type reactions are relevant markers of food quality and safety due to their potential toxicity and prevalence in processed plant-based beverages. This work presents the development and validation of a green, ultrasound-assisted dispersive liquid-liquid microextraction (UA-DLLME) method using sustainable extractant (isobutyl acetate) and dispersant (isopropanol) solvents for the simultaneous determination of 12 carbonyl compounds across multiple chemical families (aldehydes, ketones, furans, and dicarbonyls). The method integr

Enhancing the Ductility of Poly(lactic acid) With Acetylated Monoglycerides for Food Packaging Films: Impact of Hydrophobic Chain Length and Molecular Structure.

Poly(lactic acid) (PLA), a biodegradable plastic, has the potential to replace conventional petroleum-based plastics due to its excellent mechanical performance, biodegradability, renewability, and biocompatibility. However, its inherent brittleness has limited its application in food packaging films. To overcome this limitation, acetylated monoglyceride (AMG), a food additive containing both a non-polar hydrocarbon chain and the polar carbonyl group of an ester, was evaluated as a plasticizer to enhance ductility. Among AMGs with various aliphatic chain lengths (C2:0 to C18:1), the cis-config

Pharmaceutical quality of herbal medicinal products and dietary supplements - a case study with oral solid formulations containing Lavandula species.

The effectiveness and safety of regulated herbal medicinal products and dietary/food supplements are key areas of research. However, limited evidence exists of their pharmaceutical performance quality (including the standard in the respective pharmacopeial monographs). We evaluated the applicability of the European Pharmacopoeia general chapter protocols for disintegration testing of oral dosage forms using 73 products containing Lavandula species. Several Lavandula species, hybrids and cultivars are important medicinal plants globally in the phytopharmaceuticals and dietary/food supplement in

Higher cost of gluten-free products compared to gluten-containing equivalents is mainly attributed to staple foods.

The high cost of gluten-free products (GFPs) is being discussed as a potential barrier to adherence to a gluten-free diet, rendering monitoring of their pricing an ongoing demand in a market subject to continuous fluctuations. The current study aimed to assess the current pricing status of GFPs in the Greek retail market, with a focus on differences between staple and non-staple foods. The retail price and packaging weight of all available GFPs and their gluten-containing (GCPs) counterparts of a GFP-shopping basket (formulated based on the results of a preceding online survey) were recorded b

Acceptance of oat-based beverages tailored for patients with cancer.

Oat-based beverages are a nutritious product with the potential to support increased nutrient intake of patients with cancer. The aim of this research was to evaluate the sensory acceptance of oat-based beverages and perceptions of oats among patients with cancer as future vehicles for nutrient delivery. In study 1, three flavors of oat-beverages were well accepted without significant difference in liking among flavors or serving temperature, or between patients with cancer and healthy participants. Patients with cancer more frequently rated the beverages as too sweet compared to healthy parti

Nutrients Essential for Cognitive Function Are Typical Problem Nutrients in the Diets of Myanmar Primary School Children: Findings of a Linear Programming Analysis.

BACKGROUND: Good cognitive function is important for school-age children. Although essential fatty acids play a main role in cognitive functions, their intakes are assumed as inadequate among developing countries including Myanmar. However, there is still lack of evidence to show whether they are problem nutrients. OBJECTIVE: This study aimed to determine the problem nutrients in the diets of Myanmar primary schoolchildren and to formulate food-based recommendations (FBR) to optimize the intake of these micronutrients. METHODS: A cross-sectional study was conducted at 3 primary schools in Ny

Lack of Ovarian Secretions Reverts the Anabolic Action of Olanzapine in Female Rats.

BACKGROUND: Olanzapine is an orexigenic antipsychotic drug associated with serious metabolic adverse effects in humans. Development of valid rodent models for antipsychotic-induced metabolic adverse effects is hampered by the fact that such effects occur in females only. Estradiol is a predominant female hormone that regulates energy balance. We hypothesized that the female-specific hyperphagia and weight gain induced by olanzapine in the rat are dependent on the presence of estrogens. METHODS: Female sham-operated or ovariectomized rats were treated with a single injection of olanzapine depo

Effects of preloads of differing energy and macronutrient content on eating behavior in bulimia nervosa.

Evidence suggests that bulimics demonstrate blunted satiety possibly due to repeated episodes of overeating. This suggestion was tested further by comparing responses to yogurt preloads differing in carbohydrate and fat relative to a lower energy control yogurt in 12 bulimics and 12 age- and weight-matched controls. Participants were tested on three occasions at lunchtime. On each occasion, appetite and mood were rated before and after receiving a lunch of raspberry yogurt (350 g). Covert manipulation of energy and nutrient content was achieved by matching the yogurts on sensory properties and

Identification and production of local carotene-rich foods to combat vitamin A malnutrition.

OBJECTIVES: To address, with respect to improvement of human vitamin A status by dietary approaches, the three theoretical postulates that: 1) the most practical and economical manner to increase the amount of dietary vitamin A available to low-income persons in low-income nations is through plant sources of provitamin A carotenoids; 2) there will be constraints and limitation to the efficiency of a given intervention approach related to behavioural, cultural, biological and botanical considerations; and 3) the nature of these constraints and limitations must be understood, and then overcome w

Helicobacter pylori antibiotic eradication coupled with a chemically defined diet in INS-GAS mice triggers dysbiosis and vitamin K deficiency resulting in gastric hemorrhage.

Infection with Helicobacter pylori causes chronic inflammation and is a risk factor for gastric cancer. Antibiotic treatment or increased dietary folate prevents gastric carcinogenesis in male INS-GAS mice. To determine potential synergistic effects, H. pylori-infected male INS-GAS mice were fed an amino acid defined (AAD) diet with increased folate and were treated with antibiotics after 18 weeks of H. pylori infection. Antibiotic therapy decreased gastric pathology, but dietary folate had no effect. However, the combination of antibiotics and the AAD diet induced anemia, gastric hemorrhage,

Combining biological and psychosocial baseline variables did not improve prediction of outcome of a very-low-energy diet in a clinic referral population.

Consistent, strong predictors of obesity treatment outcomes have not been identified. It has been suggested that broadening the range of predictor variables examined may be valuable. We explored methods to predict outcomes of a very-low-energy diet (VLED)-based programme in a clinically comparable setting, using a wide array of pre-intervention biological and psychosocial participant data. A total of 61 women and 39 men (mean ± standard deviation [SD] body mass index: 39.8 ± 7.3 kg/m2 ) underwent an 8-week VLED and 12-month follow-up. At baseline, participants underwent a blood test and assess

Metabolomic changes demonstrate reduced bioavailability of tyrosine and altered metabolism of tryptophan via the kynurenine pathway with ingestion of medical foods in phenylketonuria.

BACKGROUND: Deficiencies of the monoamine neurotransmitters, such as dopamine synthesized from Tyr and serotonin synthesized from Trp, are of concern in PKU. Our objective was to utilize metabolomics analysis to assess monoamine metabolites in subjects with PKU consuming amino acid medical foods (AA-MF) and glycomacropeptide medical foods (GMP-MF). METHODS: Subjects with PKU consumed a low-Phe diet combined with AA-MF or GMP-MF for 3weeks each in a randomized, controlled, crossover study. Metabolomic analysis was conducted by Metabolon, Inc. on plasma (n=18) and urine (n=9) samples. Catechola

Medical management of short gut syndrome.

The provision of appropriate nutritional support is an essential part of the primary and adjunctive management of many gastrointestinal (GI) disorders in neonatology and pediatrics. Few conditions in neonatology pose as great a challenge as intestinal failure or short bowel syndrome (SBS). The latter, SBS, is a complex disorder affecting normal intestinal physiology with nutritional, metabolic and infectious consequences. It is a result of the alteration of intestinal digestion and absorption following extensive bowel resection. Medical management of SBS is a very labor-intensive problem. Nutr
