The First Case of Erythritol-Induced Anaphylaxis in Korea.

Erythritol is a natural sugar alcohol found in some fruits and fermented foods, which is used as a dietary sweetener because it has few calories. Here, we describe a 36-year-old woman who experienced anaphylaxis upon ingestion of an erythritol-containing drink. She presented to the emergency department with dyspnea and angioedema after drinking a peach-containing diet beverage. Her blood pressure dropped to 70/40 mmHg and the symptoms improved after administration of an antihistamine, glucocorticoid, and epinephrine. After 10 days, she drank another peach-containing diet beverage and experienc

Ethical dilemmas in food labeling: the undisclosed presence of alcohol and its impact on vulnerable consumers.

Despite the existence of some consumer protection legislation that mandates the declaration of alcohol content in food products when it reaches a certain threshold, current regulations appear insufficient to fully protect consumers from the consequences of excessive consumption of these products. The marketing of non-alcoholic drinks has increased significantly in the last decade leading to increased consumption, especially among schoolchildren, adolescents and pregnant or lactating women. This paper presents recent studies examining the presence and effects of ethanol in a range of foods, inc

Basic flavor types and component characteristics of Chinese traditional liquors: A review.

Chinese traditional liquor, a major type of global distilled spirits, offers a unique flavor system acquired across thousands of years of development. Owing to the various raw brewing materials, types of koji, fermentation vessels, and processes used during liquor production, significant differences can occur in the content of flavor chemical components, such as esters, alcohols, aromatics, ketones, nitrogen compounds, acids, and aldehydes in the resulting liquor. Therefore, the liquor can be characterized on the basis of four basic flavors: sauce-, strong-, light-, and rice-aroma, and eight d

Driving impact of organic acids on microbial community dynamics and fermentation performance in Huangjiu.

Huangjiu, a traditional Chinese rice wine, relies on microbial communities for its quality, but the role of organic acids during fermentation is unclear. This study uses flavoromics and metatranscriptomics to explore how organic acids shape microbial composition and metabolism. Comparing samples with high (H) and low (L) organic acid content, 44 flavor compounds were identified, revealing significant group differences. Organic acids altered fungal communities: succinic acid positively correlated with Saccharomyces and Thermomyces, while lactic and tartaric acids showed negative correlations. S

Divergent volatile metabolomes and flavor attributes in rice fermented by Aspergillus oryzae and Aspergillus flavus.

INTRODUCTION: The generally recognized as safe (GRAS) fungus Aspergillus oryzae has been used for millennia in the production of traditional Asian fermented foods and beverages. Domestication has led to genomic and phenotypic adaptations that distinguish A. oryzae from its wild relative, Aspergillus flavus. While differences between these species have been partially characterized, their comparative production of volatile compounds during food fermentation remains poorly understood. METHODS: We evaluated alpha-amylase activity, aflatoxin production, taste attributes using an electronic tongue,

The Role of the PAA1 Gene on Melatonin Biosynthesis in Saccharomyces cerevisiae: A Search of New Arylalkylamine N-Acetyltransferases.

Recently, the presence of melatonin in fermented beverages has been correlated with yeast metabolism during alcoholic fermentation. Melatonin, originally considered a unique product of the pineal gland of vertebrates, has been also identified in a wide range of invertebrates, plants, bacteria, and fungi in the last two decades. These findings bring the challenge of studying the function of melatonin in yeasts and the mechanisms underlying its synthesis. However, the necessary information to improve the selection and production of this interesting molecule in fermented beverages is to disclose
