Investigating metal, glucose, and inhibitory compound levels through food waste hydrolysate dilution and pH adjustment to enhance dark fermentation performance.

Food waste hydrolysate (FWH) produced by dilute H2SO4 thermohydrolysis is a promising substrate for dark fermentation (DF), but its performance can be unstable due to interactions among nutrients (metals and glucose) and inhibitory compounds such as 5-hydroxymethylfurfural (HMF) and furfural. This study investigates the effects of FWH dilution (D0-D4) and initial pH (6-9) on its composition and DF performance. Key parameters included the level of metal ions (Fe, Mg, and Ca), glucose equivalent, HMF, and furfural, which influence hydrogen yield (HY). ANOVA showed that FWH dilution and initial p

Boosting performance and unraveling DIET induction in food waste anaerobic digestion: The role of ethanol pre-fermentation across solids loading gradients.

Food waste anaerobic digestion is susceptible to acidification, and its treatment process encompasses a wide concentration range, from wet to dry. To investigate the enhancement efficiency and mechanism of ethanol pre-fermentation (EP) at varying total solids (TS) concentrations, this study systematically compared its performance in wet (TS 5%), semi-dry (TS 15%), and dry (TS 20%) systems. The results indicate that the enhancement efficiency and mechanism of EP are highly dependent on the TS concentration. In the semi-dry system with TS 15%, EP significantly increased methane production by 151

Salt-Resistant and Ethanol-Resistant Monoamine Oxidases: New Sight for yobN Mining from Bacillus and Biogenic Amine Degradation Mechanism in Fermented Food.

Amine oxidases have strong capabilities for the degradation of biogenic amines (BAs) in fermented foods. However, their application is limited by substrate specificity, and high concentrations of ethanol and salt can hinder their effectiveness. This study presents a novel approach utilizing comparative genomics, protein clustering analysis, and full homology modeling to identify three amine oxidases: KCYOBN from the salt-resistant Bacillus subtilis, and LYYOBN1 and LYYOBN2 from the ethanol-resistant Bacillus cereus. These enzymes are highly similar in structure and exhibit broad substrate spec…

Improvement of 3D printing age-friendly brown rice food on rough texture, swallowability, and in vitro digestibility using fermentation properties of different probiotics.

Probiotics can promote the balance of the intestinal microbial community and enhance the biological activity of food. They are beneficial to the health of elderly people. Therefore, five different probiotics (4% of the total weight) were added to pasted brown rice to study the printability, swallowability, and digestibility of fermented inks (at 40 °C for 10 h). The results showed that probiotics reduced the apparent viscosity and resistance to deformation of brown rice inks. The inks with Lactobacillus bulgaricus (LB), Bifidobacterium longum (BL), and Lactiplantibacillus plantarum (LP) had be

Production of Carbon Sources Through Anaerobic Fermentation Using the Liquid Phase of Food Waste Three-Phase Separation: Influencing Factors and Microbial Community Structure.

The urgent need for effective food waste management, coupled with the scarcity of carbon sources for sewage treatment, highlights the potential of producing carbon sources from food waste as a mutually beneficial solution. This study investigated the production of carbon sources through anaerobic fermentation using the liquid phase of food waste three-phase separation. Compared with previous studies using raw food waste or mixed substrates, the liquid phase derived from three-phase separation is richer in soluble organic matter and has been pre-heated (80 °C), which facilitates subsequent ferm

Health Benefits of Lactic Acid Bacteria (LAB) Fermentates.

Consuming fermented foods has been reported to result in improvements in a range of health parameters. These positive effects can be exerted by a combination of the live microorganisms that the fermented foods contain, as well as the bioactive components released into the foods as by-products of the fermentation process. In many instances, and particularly in dairy fermented foods, the microorganisms involved in the fermentation process belong to the lactic acid group of bacteria (LAB). An alternative approach to making some of the health benefits that have been attributed to fermented foods a…

Fermentation of soymilk with Lacticaseibacillus paracasei strain Shirota reduces soluble Gly m 4 levels and allergic reactions associated with soybean-related pollen-food allergy syndrome.

Soybean-related pollen-food allergy syndrome (PFAS) is a food allergy triggered by birch or alder pollen-specific immunoglobulin E, which cross-reacts with soybean proteins homologous to pollen proteins. Although soybean-related PFAS generally causes mild symptoms, some individuals develop severe symptoms, including anaphylaxis, especially after consuming soymilk. This study attempted to reduce the risk of allergy by fermenting soymilk with Lacticaseibacillus paracasei strain Shirota (YIT 9029, LcS). The levels of Gly m 4, which causes soybean-related PFAS, in soymilk and fermented soymilk wer

Step-feeding food waste fermentation liquid as supplementary carbon source for low C/N municipal wastewater treatment: Bench scale performance and response of microbial community.

Municipal wastewater treatment often lacks carbon source, while carbon-rich organics in food waste are deficiently utilized. In this study, the food waste fermentation liquid (FWFL) was step-fed into a bench-scale step-feed three-stage anoxic/aerobic system (SFTS-A/O), to investigate its performance in nutrients removal and the response of microbial community as a supplementary carbon source. The results showed that the total nitrogen (TN) removal rate increased by 21.8-109.3% after step-feeding FWFL. However, the biomass of the SFTS-A/O system was increased by 14.6% and 11.9% in the two phase
