Water and soil pollution as determinant of water and food quality/contamination and its impact on male fertility.

Over the past two decades, public health has focused on the identification of environmental chemical factors that are able to adversely affect hormonal function, known as endocrine disruptors (EDs). EDs mimic naturally occurring hormones like estrogens and androgens which can in turn interfere with the endocrine system. As a consequence, EDs affect human reproduction as well as post and pre-natal development. In fact, infants can be affected already at prenatal level due to maternal exposure to EDs. In particular, great attention has been given to those chemicals, or their metabolites, that ha

Cooking methods employing natural anti-oxidant food additives effectively reduced concentration of nephrotoxic and carcinogenic aristolochic acids in contaminated food grains.

Emerging evidence suggests that aristolochic acids (AA) produced naturally by a common weed Aristolochia clematitis in the cultivation fields is contaminating the food products in Balkan Peninsula and acting as the etiological agent in the development of Balkan endemic nephropathy. In this study, we investigated the combined use of natural anti-oxidative "food additives" and different cooking methods to find a solution for the widespread contamination of AA in food products. The results indicated that the addition of healthy dietary supplements (such as cysteine, glutathione, ascorbic acid, ci

Intestinal Organoid-Based Toxicity Study on Co-exposure to Food Contaminants Deoxynivalenol and Tenuazonic Acid.

Environmental mycotoxins threaten human and animal health. Deoxynivalenol (DON) and emerging tenuazonic acid (TeA) severely contaminate food crops. The intestine is DON's main toxic target and TeA's primary exposure site, but TeA's intestinal risk and their combined toxicity remain understudied. In this study, using an intestinal organoid model, we found that DON and TeA significantly suppressed cell viability (toxicity ratio ∼ 1:20) with synergistic effects under high toxicity, disrupting organoid development and intestinal barrier function (cell cycle arrest, reduced tight junction proteins,

Global research trends on bacterial contamination and microbiological quality of ready-to-eat foods: a bibliometric analysis.

BACKGROUND: Ready-to-eat (RTE) foods are increasingly consumed worldwide due to urbanization, dietary shifts, and globalization of food systems, yet they remain a significant vehicle for foodborne diseases. Despite the growing body of research, a systematic mapping of global scientific trends in this area has been lacking. METHODS: We conducted a bibliometric analysis of RTE food microbiology research indexed in Scopus from 1973 to 2025. Publication trends, citation patterns, leading authors, institutions, journals, and country-level contributions were assessed using Bibliometrix. Network ana

A Scoping Review of Microplastic Contamination in Infant Foods: Exposure Pathways and Implications for Nutrition and Health of Children.

Microplastics (MPs) in the environment pose a significant threat to human health, particularly for vulnerable populations like infants. Over the past decades microplastics have infiltrated food systems, air, water, and consumer products, leading to widespread human exposure. Infant foods, including formula and complementary foods, may be contaminated with MPs during processing or packaging or through environmental pollutants. This scoping review was aimed to explore the extent of MP contamination in infant foods, its potential nutritional and health impacts, and the associated risks to the hea

Sources of Microbial and Organic Contaminants in the Production of Soybean Whey Protein for Feed and Potential Food Applications.

Soybean whey wastewater (SWW), a rich source of soybean whey protein (SWP), is prone to microbial rancidity, posing environmental and resource challenges. This study explores the causes of rancidity-characterized by a pungent, sour, and putrid odor-in the effluents of sealed buffer tank during SWP recovery via pneumatic flotation. Metagenome, bacterial diversity, and HPLC analyses showed the obligate anaerobe Megasphaera spp. dominated rancid effluents (up to 44% abundance), consumed lactate (decreasing from 10.2 g/L in influent to 2.7 g/L in effluent), and produced malodorous propionate and b

Food-Borne Environmental Contaminants, Intestinal Injury, and Early Childhood Stunting: A Developmental Toxicology Perspective.

BACKGROUND: Childhood stunting (height-for-age z-score < -2 SD) remains a global developmental health burden. Traditional interventions centered on nutrition and infection have reached a bottleneck. Emerging evidence identifies chronic low-dose dietary environmental toxins as an independent, modifiable risk factor for early-life growth restriction. METHODS: This review synthesizes cohort studies, meta-analyses, and in vivo toxicological models published over the past decade to characterize exposures to mycotoxins, toxic heavy metals, and food-borne endocrine disruptors that are closely associ

Detection of Single Cell Contamination of Salmonella in Foods by SALX System and NIHSJ-01 and Estimation of LOD95.

A novel idea of statistical analytical procedure for the level of detection (LOD) was demonstrated by its successful application to qualitative test methods for Salmonella, SALX System and NIHSJ-01. Salmonella cells of a hydrogen sulfide-producing strain FSD287 and a non-hydrogen sulfide-producing strain FSD347 were added to beef and shrimp food samples using a cell sorter to achieve bacterial cell concentration of 1, 5, and 10 cfu/25g-test portion (tp). The colony forming probability (CFP) of the added cells was estimated by means of 10×10 sorting plates. All of test portions containing FSD28

Peculiarities of Biofilms Formation by Campylobacter Bacteria in Mixed Populations with Other Microbial Contaminants of Food Products.

Peculiarities of biofilms formation by Campylobacter bacteria in mixed populations with other microbial contaminants was studied by real-time impedance spectroscopy on an automated xCelligence real time cell analyzer (RTCA). This method is based on measuring the medium resistance in special plates (E-plates) with interdigitated microelectrodes. Coculturing of campylobacter with coliform bacteria is accompanied by film formation; the intensity of this process varies depending on the type of the test cultures and the nature of their interaction in mixed populations. Film formation by C. jejuni d

Fluoride Toxicodynamics and Interactions with Co-Contaminants: Mechanistic Insights with Implications for Agricultural Systems and Food Safety.

Fluoride (F-) exerts a dual role in agricultural systems, supporting dental mineralization at low levels but inducing multiorgan toxicity under chronic exposure. While the detrimental effects of F- have been well documented, its interactions with co-occurring micronutrients (e.g., Zn, Se, I) and toxicants (e.g., Al, Cd, As) remain incompletely characterized in the context of food production and animal husbandry. Accumulating evidence indicates that essential micronutrients can attenuate F- toxicity by potentiating antioxidant defenses and stabilizing metalloenzyme activity, whereas toxicants a

Centrifugal mini-SPE cleanup for monitoring contaminants in food. Part I: Comparison with dispersive-SPE.

Solid-phase extraction (SPE) constitutes one of the most common techniques for cleanup of sample extracts in analytical chemistry. Traditionally, SPE cleanup involves 100-1000 mg of one sorbent phase housed in cartridges placed onto vacuum manifolds for manual performance of several steps. However, this format has several drawbacks regarding convenience, versatility, speed, cost, labor, and performance, among other facets. To overcome several of these limitations, dispersive (d)-SPE has become more commonly applied in which extracts are simply mixed with sorbents in a versatile, quick, easy, a

A review of food contaminant 2,3,7,8-tetrachlorodibenzo-p-dioxin and its toxicity associated with metabolic disorders.

Dioxins are a group of chemicals not only regarded as highly toxic trace environmental contaminants, but also considered typical contaminants in food. Dioxins spread across the ecosystem after factory manufacture, contaminate the soil and vegetation before either directly or indirectly entering the food chain through meat products, dairy products, and aquatic products. The compound in question poses a challenge for metabolic processes within the human body, due to its intricate mechanism for inducing diseases. Therefore, it presents a significant risk and is largely undisclosed. Dioxins are ma

Method for HEV detection in raw pig liver products and its implementation for naturally contaminated food.

It is now recognized that Hepatitis E virus (HEV) infection is not confined to developing countries. HEV infection is a growing public health concern in industrialized countries where the disease is mainly autochthonous, caused by HEV genotypes 3 and 4 and is today considered to be zoonotic. HEV causes acute hepatitis in humans, predominantly through contamination of food and water. Due to the low concentrations found in food and water samples, an efficient and rapid virus concentration method is required for routine control. Because of the absence of a reliable cell culture method for the mai

Application of the International Life Sciences Institute Key Events Dose-Response Framework to food contaminants.

Contaminants are undesirable constituents in food. They may be formed during production of a processed food, present as a component in a source material, deliberately added to substitute for the proper substance, or the consequence of poor food-handling practices. Contaminants may be chemicals or pathogens. Chemicals generally degrade over time and become of less concern as a health threat. Pathogens have the ability to multiply, potentially resulting in an increased threat level. Formal structures have been lacking for systematically generating and evaluating hazard and exposure data for bioa

Comparison of Three Selective Enrichment Methods for the Isolation of Listeria monocytogenes from Naturally Contaminated Foods.

Three selective enrichment procedures-the U.S. Food and Drug Administration (FDA) method, the U.S. Department of Agriculture (USDA) method, and the Netherlands Government Food Inspection Service (NGFIS) method-were compared for isolating Listeria monocytogenes from contaminated foods. The foods were obtained from the refrigerators of patients with culture-proven listeriosis who were identified through multistate active surveillance in a U.S. population of 19 million. The study was designed to identify foods that may be important in transmission of L. monocytogenes in sporadic cases of human li

Detection of wheat gliadin contamination of gluten-free foods by a monoclonal antibody dot immunobinding assay.

Unfractionated wheat gliadin was used to produce murine monoclonal antibodies to gliadin. A dot immunobinding assay, using these antibodies, was developed to detect possible gliadin contamination of nominally gluten-free flour, using dilute ethanol extracts spotted onto nitrocellulose membranes. The sensitivity of the assay was less than 10 micrograms/ml of unfractionated gliadin which permitted the detection of trace amounts of gliadin present in certain wheat starch based 'gluten-free' products. The assay detected not only wheat gliadin, but also prolamine extracts of rye, barley and oats; m
