[Effects of alcohol on the upper gastrointestinal tract and the pancreas--an up-to-date overview].

The oesophagus, stomach and pancreas are primary target organs for ethanol-related diseases. In the oesophagus and stomach, ethanol induces motility disorders and mucosal lesions that are dose-dependent and reversible under acute conditions. Chronic consumption of alcohol causes a significant increase in the risk for squamous carcinoma of the oesophagus. All of these effects are mainly caused by direct contact of alcohol or its metabolite acetaldehyde with the mucosa. Non-alcoholic components are responsible for many effects of alcoholic beverages, including the powerful stimulation of gastric

Co-Fermentation of Wickerhamomyces anomalus and Saccharomyces cerevisiae in Bread Dough: Effects on Ethyl Acetate Production and Flavor Enhancement.

Fermentation affects the quality of bakery products. Saccharomyces cerevisiae is the traditional baking yeast, but the desire for alternative flavor profiles has driven interest in non-Saccharomyces yeasts. Wickerhamomyces anomalus, a non-Saccharomyces yeast with high ester-producing ability, has attracted attention as a promising co-fermentation partner. Although previous studies have explored its co-fermentation potential in alcoholic beverage production, the effects of its co-fermentation with S. cerevisiae on dough fermentation characteristics, bread quality, and flavor remain largely unex

Versatile method for addressing the issue of methanol in distilled spirits using a compact near-infrared spectrometer.

Methanol has been found in alcoholic drinks with increasing frequency, which is worrying because of its high toxicity. The presence of methanol in beverages occurs as an unintended consequence of fermentation processes, because of adulteration or the use of this substance in the preparation of counterfeit products. The identification and quantification of methanol in distilled beverages demands direct analytical methods that can be applied in the field to support inspection operations. This work describes a novel direct analytical method based on the spectral absorption characteristics of the

Impact of Schizosaccharomyces species on apple juice fermentation: High glycerol production, malic acid degradation, and species-specific aroma profiles.

The increasing significance of non-Saccharomyces strains in fermented beverages comes from their ability to modulate sensory properties and produce diverse metabolites. This study evaluated the oenological potential and fermentation capacity of five Schizosaccharomyces species (S. pombe var. pombe, S. pombe var. malidevorans, S. japonicus, S. octosporus, and S. cryophilus). While all strains assimilate and ferment glucose, fructose, and sucrose, they show no utilization of sweeteners such as xylitol, erythritol, or stevia. Notably, the strains exhibited tolerance to 15-30% glucose, and most of…

The 'buttery' attribute of wine--diacetyl--desirability, spoilage and beyond.

The diketone, diacetyl, is a major flavour metabolite produced by lactic acid bacteria (LAB). Of the LAB associated with wine, Oenococcus oeni is encouraged during the malolactic (ML) fermentation, a biodeacidification of wine during which the metabolism of diacetyl occurs. Diacetyl, which imparts a buttery aroma and flavour to many fermented foods and beverages, is a key flavour compound of most fermented dairy products. In wine, diacetyl has important stylistic implications. The biosynthesis of diacetyl is dependent upon citric acid metabolism and diacetyl is an intermediate metabolite which
