Mechanism of puberulic acid contamination in red yeast rice tablets that caused a serious food poisoning outbreak in Japan.

In Japan, serious food poisoning among individuals who took supplement tablets for lowering plasma cholesterol levels have been publicized since late March 2024. The tablets were prepared from red yeast rice (RYR), a product of Monascus pilosus. Puberulic acid (PA) was detected as an unexpected compound in tablets that caused food poisoning. We conducted an on-site investigation at the RYR production factory to determine the cause of PA contamination of the tablets. Fungi capable of producing PA were detected in wipe samples from the factory and were identified as Penicillium adametzioides. To

Dietary psychoactive xenobiotics: an updated review on food contamination with ergot, tropane and opium alkaloids and their toxicological effects.

Food contamination has been a major health issue since the beginning of human existence. Some food contaminants trigger important psychological manifestations, such as delirium, hallucinations, and psychosis, which may cause distress, aggravate pre-existing conditions, and dangerously interact with certain medications. Exposure to psychoactive food contaminants can ultimately lead to severe health problems or even death. As such, it is important to further study these substances to prevent contamination and identify and treat intoxications. Among these substances, three classes of food contami…

Processing-Dependent and Clonal Contamination Patterns of Listeria monocytogenes in the Cured Ham Food Chain Revealed by Genetic Analysis.

The quantitative and qualitative patterns of environmental contamination by Listeria monocytogenes were investigated in the production chain of dry-cured Parma ham. Standard arrays of surfaces were sampled in processing facilities during a single visit per plant in the three compartments of the food chain, i.e., ham production (19 plants) and postproduction, which was divided into deboning (43 plants) and slicing (25 plants) steps. The numbers of sampled surfaces were 384 in ham production, with 25 positive for L. monocytogenes, and 1,084 in postproduction, with 83 positives. Statistical analy

Collapse-enhanced SERS effect of self-crosslinked plasmonic starch aerogels for sensitive detection of food contaminants.

A flexible 3D plasmonic starch aerogel substrate was fabricated for susceptible detection of thiabendazole (TBZ) and doxycycline hydrochloride (DH). Based on the unique structure features of starch, an aerogel with high porosity and a large specific surface area was formed without any extra cross-linking agents. Silver nanoparticles (Ag NPs) uniformly distribute throughout starch aerogel and generate dense hot spots while aerogel structure collapses, which leads to significant SERS enhancement. The as-prepared aerogel substrate exhibits good SERS activity with a low detection limit of 1 × 10-1

Assessing the differential responses in normal and inflamed in vitro intestinal models exposed to food contaminants complex mixtures.

The intestinal barrier is crucial for gut health, and its dysfunction can lead to chronic inflammatory conditions. Food contaminants like pesticides, heavy metals, mycotoxins, heterocyclic aromatic amines (HAAs), and polycyclic aromatic hydrocarbons (PAHs) may worsen these conditions. However, research often overlooks the complex interactions between contaminants and the different cells in the intestine. This study explores the effects of repeated exposure to a mixture of 45 food contaminants on a triculture cell model (Caco-2/HT29-MTX monolayers and THP-1 cells) under normal and inflamed cond

Utilizing alternative in vivo animal models for food safety and toxicity: A focus on thermal process contaminant acrylamide.

Rodent models have traditionally been used to assess the toxicity of food chemicals, but this approach is costly, time-consuming, and raises ethical concerns. Alternatively, non-mammalian models such as Drosophila melanogaster, Danio rerio, and Caenorhabditis elegans have been shown to be suitable for studying the toxicity of food hazards. Their advantages include low cost, short life cycles, adaptability to high-throughput screening, and adherence to the 3R principles of replacement, reduction, and refinement. These models have been extensively studied in the context of acrylamide toxicity, a

Lysine Inhibits Hemolytic Activity of Staphylococcus aureus and Its Application in Food Model Contaminated with Staphylococcus aureus.

Alpha-hemolysin (Hla) is one of the important exotoxins of Staphylococcus aureus (S. aureus) and can be used as a target to reduce the virulence of S. aureus. This study explored the inhibitory effect of Lysine (Lys) on Hla and its application in food safety. Lys significantly inhibited the expression of Hla at sub-inhibitory concentrations and directly interacted with Hla to interfere with its oligomerization and thus significantly inhibited its hemolytic activity. Notably, Lys attenuated S. aureus damage to mouse small intestine and Caco-2 cells and delayed mouse mortality. In the food model

How advanced are we on the consequences of oral exposure to food contaminants on the occurrence of chronic non communicable diseases?

The development of an individual during fetal life and childhood is characterized by rapid growth as well as gradual maturation of organs and systems. Beyond the nutritional intake in essential nutrients, food contaminants can permanently influence the way organs mature and function. These processes are called "programming" and play an essential role in the occurrence of non-communicable chronic diseases throughout the lifespan. Populations as pregnant women, fetuses and young children are vulnerable and particularly sensitive to food contaminants which can induce epigenetic modifications tran

Emerging contaminants in water used for maize irrigation: Economic and food safety losses associated with ciprofloxacin and glyphosate.

Chemicals used to assure agricultural production and the feasibility of planting sites often end up in bodies of water used for crop irrigation. In a pot study, we investigated the consequences associated with the irrigation of maize with water contaminated by ciprofloxacin (Cipro; 0, 0.2, 0.8, 1.4 and 2.0 μg l-1) and/or glyphosate (0, 5, 25 and 50 mg l-1) on yields and food safety. Glyphosate in concentrations ≥25 mg l-1 prevented plant establishment, regardless of Cipro presence. Evaluations made at the V5 stage of plants reveal that Cipro concentrations ≥0.8 μg l-1 and glyphosate decreased

The food contaminant deoxynivalenol provokes metabolic impairments resulting in non-alcoholic fatty liver (NAFL) in mice.

The ribotoxin deoxynivalenol (DON) is a trichothecene found on cereals responsible for mycotoxicosis in both humans and farm animals. DON toxicity is characterized by reduced food intake, diminished nutritional efficiency and immunologic effects. The present study was designed to further characterize the alterations in energy metabolism induced by DON intoxication. We demonstrated that acute DON intoxication triggered liver steatosis associated with an altered expression of genes related to lipids oxidation, lipogenesis and lipolysis. This steatosis was concomitant to anorexia, hypoglycemia an

Unveiling the Contamination of Thiocyanate, Perchlorate, and Chlorate in Edible Microalgae: Detection, Distribution, and Risk Assessment in Sustainable Food Sources.

With the growing interest in microalgae as a sustainable food source, concerns about potential chemical contaminants in these products have emerged. In this study, a sensitive and reliable LC-MS/MS method was developed for the simultaneous detection of thiocyanate, perchlorate, and chlorate in edible microalgae samples. The method was validated with excellent linearity (R2 > 0.998), low detection limits (LOD: 1-8 μg/kg), quantification limits (LOQ: 4-26 μg/kg), and high recovery rates (75-101.9%) across different sample types. We collected a total of 77 microalgae products based on the availab

Food contamination as a pathway for lead exposure in children during the 2010-2013 lead poisoning epidemic in Zamfara, Nigeria.

In 2010, an estimated 400 to 500 children died of acute lead poisoning associated with artisanal gold mining in Zamfara, Nigeria. Processing of gold ores containing up to 10% lead within residential compounds put residents, especially children, at the highest risk. Principal routes of exposure were incidental ingestion and inhalation of contaminated soil and dusts. Several Nigerian and international health organizations collaborated to reduce lead exposures through environmental remediation and medical treatment. The contribution of contaminated food to total lead exposure was assessed during
