The valorization of waste ice cream into alcohol.

Valorization of food waste or food byproducts into higher-value products can benefit the food industry by contributing to the food supply chain. This study aimed to investigate the potential for using waste ice cream as a fermentation substrate for production of ethanol by yeast. Results showed that 2 Saccharomyces cerevisiae strains, Lalvin EC-1118 (Lallemand Inc.) and Ethanol Red (Lesaffre), were able to ferment an aqueous byproduct of waste ice cream, resulting in the production of ethanol, ∼7% (wt/vol). This most likely occurred due to the utilization of free monosaccharides or sucrose, be

Study on the Nutritional Characteristics and Flavor of De-Anthocyanidin Black Rice Fermented by Multiple Compound Lactobacillus.

De-anthocyanin black rice (DBR) is a residue generated after the industrial extraction of anthocyanins; it retains considerable polysaccharides and other bioactives but remains largely underutilized. In this study, DBR underwent co-fermentation using a 2:1 (v/v) mixture of Lactiplantibacillus plantarum and Lactobacillus delbrueckii subsp. bulgaricus at 30°C for 39 h. This mixed lactic acid bacteria (LAB) fermentation led to a marked drop in pH, a rise in titratable acidity, and a final LAB viable count reaching 9.47 Log CFU/mL. Total phenolic content rose by 24.60% to 18.23 mg GAE/mL, and both

Harnessing the potential of Cupriavidus necator for CO2 capture from alcoholic fermentation and its bioconversion into poly(3-hydroxybutyrate).

The fermentation process in alcoholic beverage production converts sugars into ethanol and CO2, releasing significant amounts of greenhouse gases. Here, Cupriavidus necator DSM 545 was grown autotrophically using gas derived from alcoholic fermentation, using a fed-batch bottle system. Nutrient starvation was applied to induce intracellular accumulation of poly(3-hydroxybutyrate) (PHB), a bioplastic polymer, for bioconversion of CO2-rich waste gas into PHB. Grape marc, another by-product of wine production, was evaluated as a low-cost carbon source for the heterotrophic growth of C. necator, w

Optimizing brown rice liquefaction and saccharification using response surface methodology for grain ethanol production.

Brown rice, unlike white rice, retains its bran and germ layers, making it rich in dietary fiber and physiologically active compounds. However, these components lower the efficiency of starch hydrolysis, making brown rice less suitable for fermentation. In this study, we aimed to optimize the brown rice liquefaction and saccharification processes using response surface methodology. In a Box-Behnken design, pH, temperature, and time served as independent variables, while soluble solid, reducing sugar, total sugar, maltose, and glucose concentrations as dependent variables. The liquefaction proc

Detection of Spoilage-Associated Acetic Acid Levels Using a Transcription-Based Whole-Cell Biosensor.

Monitoring acetic acid (AC) in fermentation processes is essential as excessive AC accumulation, particularly during alcoholic fermentation, can disrupt fermentation and lead to spoilage. However, conventional detection methods such as steam distillation, GC-MS, and HPLC are costly, time-consuming, and require liquid-phase samples, limiting their use for real-time monitoring and early identification of AC buildup. Here, we present an alternative tool for AC detection using a whole-cell bacterial biosensor, which utilises the YwbIR transcriptional regulator from Bacillus subtilis . The designed
