The quality of low lactose milk is affected by the side proteolytic activity of the lactase used in the production process.

Lactose intolerance syndrome can be efficiently tackled consuming low lactose products. Lactase is the key tool to manufacture low lactose milk (LLM): its addition during milk processing can be done "in batch", i.e. before thermal treatment, or directly "in pack" after sterilization. In this paper data on sensory properties, Maillard Reaction products (MRPs) and free amino acids formation were obtained on six commercial Italian LLMs over six months storage. They showed that the side proteolytic activity of lactase caused the release of amino acids with a significant higher MRPs and off-flavors

Cholesterol Oxidation Products: Potential Adverse Effect and Prevention of Their Production in Foods.

Cholesterol oxidation products (COPs) are a group of substances formed during food processing. COPs in diet is a health concern because they may affect human health in association with the risk of various diseases including atherosclerosis, Alzheimer's disease, age-related macular degeneration, diabetes, and chronic gastrointestinal inflammatory colitis. Production of COPs in foods can be affected by many factors such as temperature, pH, light, oxygen, water, carbohydrates, fatty acids, proteins, and metal cations. The key issue is preventing its generation in foods. Some COPs can also be prod

Pressure-driven flavor formation in rapeseed oil: an integrated multi-omics approach.

This study systematically evaluated the regulatory effects of expansion pressures on precursor conversion and the flavor profiles in rapeseed oil. By integrating the response relationships of three core flavor-forming processes (non-enzymatic reactions and metabolic pathway), the connection between pressure parameters and the generation of key flavor compounds was elucidated. A total of 56 Maillard reaction-related compounds and 26 glucosinolate-derived metabolisms were identified. Glucosinolate content ranged from 44.638 to 3.827 μmol/g, amino acid content from 258.7 to 246.3 mg/g, fatty acid

Exploring the material basis and formation pathways of the burnt aroma during the stir-frying process of Gardeniae Fructus using Sensomics and chemical components approach.

Gardeniae Fructus (edible and medicinal) is unsuitable for spleen-stomach deficiency patients due to its bitter-cold property, but stir-frying (JZZ) alleviates this and generates a burnt aroma with unclear substances and pathways. This study used electronic eye, high-performance liquid chromatography (HPLC), electronic nose, headspace-solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS), gas chromatography-ion mobility spectrometry (GC-IMS) and relative odor activity value (ROAV) to analyze color, non-volatile components and aroma of raw (SZZ) and fried samples. Glycine and Glucose Exert Divergent Concentration-Dependent Interfacial Regulatory Effects on Goethite-Catalyzed Polyphenol-Maillard Abiotic Humification.

Iron oxide-mediated abiotic humification is critical for long-term soil organic carbon (SOC) stabilization. Goethite (α-FeOOH), the most thermodynamically stable iron oxyhydroxide in terrestrial ecosystems, is proposed to catalyze coupled Maillard reaction and polyphenol oxidation via surface hydroxyl and Fe(III) active sites. Nevertheless, the divergent interfacial regulatory mechanisms of glycine (Gly, N source) and glucose (Glu, C source) concentration gradients in goethite-catalyzed polyphenol-Maillard systems remain poorly understood. Two independent 360-h gradient incubation experiments

Dynamic flavor changes and metabolite profiles of rose petals during black tea processing.

Rose petal tea, processed using black tea processing technology (BPT), is an emerging product referred to as BRPT (BPT-processed rose petal tea). Compared with traditional rose crown tea (RCT), BRPT offers a richer and more diverse sensory experience. However, existing studies have limited insights into the flavor characteristics of BRPT and the chemical changes occurring during its processing. This study investigates the flavor profile of BRPT, the chemical basis of its unique flavor, and the formation process of such flavor. The flavor characteristics of BRPT were explored via sensory evalua

Cold plasma pretreatment assisted whey protein isolate-gum arabic Maillard conjugates produce water-soluble microcapsules for clove essential oil release.

Clove essential oil (C) is poorly water-soluble, which limits its application in aqueous food systems. This study developed a novel strategy to fabricate microcapsules with improved water solubility by pretreating whey protein isolate (WPI) with cold plasma followed by Maillard glycation with gum arabic (GA) prior to complex coacervation and spray drying. Cold plasma pretreatment for 20 s significantly improved the degree of grafting (DG, from 22.14% to 31.92%) and emulsifying activity (from 32.88 m2/g to 52.40 m2/g) of WPI-GA Maillard conjugates (WPI-GAM). The resulting microcapsules exhibite

Understanding the impact of the molecular crowding environment on the glyoxal-mediated glycation of hemoglobin.

In diabetes, the level of glyoxal (GO), a highly reactive oxoaldehyde increases from its normal value. GO reacts with various proteins and produces advanced glycated end products (AGEs). Living cells contain densely packed biomolecules, which exert crowding effects that may take up 20-40% of the entire volume of a cell. Molecular crowding significantly influences various cellular processes by affecting the behavior of molecules within the crowded intracellular environment, impacting protein folding, stability, interactions, and ultimately, the function of many biological pathways. Thus, it ess

Molecular structure characteristics and pyrolytic volatiles of hydrosoluble colored fractions from three melanoidins.

The melanoidins produced by the Maillard reaction give foods a golden, brown or black color and release aromatic compounds. Investigating the molecular structure and pyrolysis characteristics of melanoidins provides insight into improving food quality. Seven hydrosoluble colored fractions were isolated from three melanoidins (glycine/glucose (Gly-Glc), proline/glucose (Pro-Glc), and phenylalanine/glucose (Phe-Glc)) using size exclusion and C18 chromatography. Fractions with lower molecular weights (Mw: 5958- 20,106 Da) exhibited deeper colors (browning index: 0.783-3.044). For melanoidins deri

How advanced are we on the consequences of oral exposure to food contaminants on the occurrence of chronic non communicable diseases?

The development of an individual during fetal life and childhood is characterized by rapid growth as well as gradual maturation of organs and systems. Beyond the nutritional intake in essential nutrients, food contaminants can permanently influence the way organs mature and function. These processes are called "programming" and play an essential role in the occurrence of non-communicable chronic diseases throughout the lifespan. Populations as pregnant women, fetuses and young children are vulnerable and particularly sensitive to food contaminants which can induce epigenetic modifications tran

Investigation of excipient-related artifacts observed in the leachables study of tiragolumab by LC-HRMS and GC-MS.

Leachables studies of protein formulations are faced with many analytical challenges arising from relatively high levels of complex formulation components. In the stressed sample of the monoclonal antibody drug tiragolumab with the main excipients methionine, histidine, sucrose, and polysorbate, two unknown compounds were detected in the screening for non-volatile leachables by reversed phase (RP) liquid chromatography high-resolution mass spectrometry (LC-HRMS). Unknown 1 was proven to be a gas-phase mass spectral adduct between methionine and the sucrose-derived hexose. Separation of methion

Impact of Non-Enzymatic Glycation in Neurodegenerative Diseases: Role of Natural Products in Prevention.

Non-enzymatic protein glycosylation is the addition of free carbonyls to the free amino groups of proteins, amino acids, lipoproteins and nucleic acids resulting in the formation of early glycation products. The early glycation products are also known as Maillard reaction which undergoes dehydration, cyclization and rearrangement to form advanced glycation end-products (AGEs). By and large the researchers in the past have also established that glycation and the AGEs are responsible for most type of metabolic disorders, including diabetes mellitus, cancer, neurological disorders and aging. Controllable preparation of whey protein isolate fibrils-oxidized dextran covalent complex as a delivery vehicle for enhancing iron bioavailability.

Iron deficiency remains the most prevalent nutritional disorder worldwide. Conventional ferrous supplements are prone to oxidation into poorly bioavailable ferric iron and may induce free radical damage. To address this, this study developed a novel iron delivery system (WPHF-DEX-Fe) based on the covalent grafting of enzymatically hydrolyzed whey protein fibrils (WPHF) with oxidized dextran. Controlled grafting was achieved via a mild wet-heating Maillard reaction. Ultraviolet-visible spectroscopy (increased A₂₉₄ without a rise in A₄₂₀) confirmed the formation of Schiff bases without significa

Use of egg yolk to imitate meat aroma.

Egg yolk contains abundant meat precursors, but its odor is quite different from meat aroma. In this study, the lipids in egg yolk were partly removed by acetone or totally removed by chloroform/methanol, and lutein was removed simultaneously by the solvents. Then, the samples were heated, and the volatiles and aroma profiles were analyzed. The results showed that chicken meat aroma and meat aroma were imitated successfully through the removal of neutral lipids and lutein (acetone-treated) and total lipids and lutein (chloroform/methanol-treated) egg yolk samples, respectively. Finally, additi

The Role of β-Carboline Alkaloids in the Pathogenesis of Essential Tremor.

Essential tremor (ET) is one of the most prevalent neurological disorders in the world. Environmental factors have been implicated in the pathogenesis of ET. In particular, epidemiological studies have suggested that neurotoxic agents, especially β-carboline alkaloids (βCAs), might be generated through Maillard-type reaction. βCAs are molecules which are members of a large group of heterocyclic amines (HCAs, the so-called products of cooking meat). βCAs are highly tremorogenic in animals, producing a marked generalized action tremor soon after systemic administration in a wide range of laborat

Changes in free amino acids and sugars in potatoes due to sulfate fertilization and the effect on acrylamide formation.

To examine how sulfur deprivation may affect acrylamide formation in cooked potatoes, three varieties of potato were grown under conditions of either severe sulfur deprivation or an adequate supply of sulfur. In all three varieties sulfur deprivation led to a decrease in acrylamide formation, even though the levels of sugars, which are acrylamide precursors, were higher in tubers of the sulfur-deprived plants. In one variety the concentration of free asparagine, the other precursor for acrylamide, was also higher. There was a very close correlation between the concentration of asparagine in th
