Mechanism of feruloylated oligosaccharides from rice bran in reversing the rapid digestibility of thermally processed rice starch.

Thermal processing is unavoidable in daily diets. However, most thermal processing treatments accelerate rapid starch digestion. In this stu … 6 ± 0.75%, respectively. Furthermore, 90%RBFOs increased the total content of slowly digestible and resistant starch in the aggregates by 3.84%, 7.24%, 14.26%, and 4.22%, respectively. Notably, 90%RBFOs have the potential to counteract rapid starch digestion.

Role of phenolic acids with different functional groups in the regulation of starch digestion in simulated dietary intake patterns.

This study investigated the effects of phenolic acids with different functional groups (cinnamic acid: CIA, caffeic acid: CA, ferulic acid: FA) on corn starch (CS) digestibility by simulating dietary intake patterns (co-heating and non-co-heating) and their mechanism. Both treatments could reduce the digestibility of CS. Compared to the non-co-heating treatment, the resistant starch content of 10 % CA co-heating samples increased by 8.36 %. The co-heating case led to a decrease in the trough viscosity, peak viscosity, and final viscosity of CS. Phenolic acids reduced the short-range order of C…

Influence of Hydrothermal and Chemical Modifications of Potato Starch on Its Performance as a Carrier Matrix for Selected Polyphenolic Compound Derived from Chokeberry (Aronia melanocarpa) Fruit.

Starch, a natural source of energy in the form of glucose chains, is widely utilized in various industrial and scientific fields. In its native state, starch is thermally unstable and undergoes gelatinization. Physicochemical modifications of starch aim to increase its thermal and structural stability while simultaneously enhancing its reactivity by introducing new functional groups. The primary objective of this study was to develop thermally stable and economically viable starch-based drug carriers capable of the controlled release of a negatively charged component sourced from aronia extrac

Ice recrystallization inhibition by amylose-oleic acid complex: Enhancing the freezing tolerance and shape fidelity of starch-based 3D printing ink in long-term frozen storage.

Developing starch-based 3D printing inks with stable texture and high shape fidelity is essential for producing higher value-added food products. However, inhibiting ice recrystallization and maintaining structural stability during cold-chain transport and frozen storage remain significant challenges. To address these questions, this study validates the hypothesis that starch-lipid complex intervenes the ice crystal growth in starch-based 3D printing ink, and investigates the effects of molecular conformation on the ice surface behavior of starch-lipid complexes. The amylose-oleic acid (OA) co

Chemoprevention in Lynch syndrome.

CAPP1 tested aspirin 600 mg/day and/or resistant starch 30 g/day in 200 adolescent FAP carriers. Aspirin treatment resulted in a non-significant reduction in polyp number and a significant reduction in polyp size among patients treated with aspirin for more than 1 year. CAPP2 RCT used the same interventions in 937 Lynch syndrome patients, the first RCT to have cancer prevention as the primary endpoint. Aspirin did not reduce the risk of colorectal neoplasia in a mean treatment period of 29 months but double blind post intervention follow-up has revealed 48 participants developed 53 CRCs. Per p…

A review on the application of starch in biodegradable mulch films.

Traditional plastic mulch films have caused serious environmental problems. The continuous accumulation of non-degradable plastic residues such as polyethylene has led to soil pollution in agriculture and has become one of the major sources of the global plastic pollution crisis. With the enhancement of environmental awareness and policy support, more and more countries and regions have begun to pay attention to the research and application of biodegradable materials. This is to achieve sustainable agricultural development. Among them, starch-based biodegradable films have received extensive a

Daily intake of high dietary fiber slows accelerated colonic transit induced by restrain stress in rats.

BACKGROUND: Stress and central corticotropin releasing factor (CRF) are contributing factors to the pathogenesis of irritable bowel syndrome (IBS). It has been shown that restraint stress and central CRF stimulate colonic motility in rats. Short-chain fatty acids (SCFAs) are produced by bacterial fermentation from dietary fibers. It is controversial whether daily intake of dietary fiber is beneficial for patients with diarrhea-predominant IBS. We studied whether dietary fiber intake affects colonic transit and motility stimulated by restraint stress and central CRF in rats. METHODS: Corn star

Preparation of starch-vitamin E complexes using electron beam irradiation pretreatment in synergy with ultra-high pressure: enhancing physicochemical and functional properties.

The low water solubility and poor thermal stability of Vitamin E (VE) limit its application in food processing. This study investigated the effects of the synergistic combination of electron beam irradiation (EBI) at doses of 0, 5, and 10 KGy and ultra-high pressure (UHP) at 100, 300, and 500 MPa on the preparation of potato starch-VE complexes. EBI pretreatment significantly reduced the degree of branching and enhanced complexation, antioxidant activity, and resistant starch (RS) content in a dose-dependent manner, whereas increasing UHP pressure progressively diminished these attributes. The…

Long-term intervention of the esterified starch enhanced the satiety of mice via alterations to pyruvate metabolism.

Esterified starch (ES) has been shown to enhance short-term satiety, but the mechanism by which its long-term intervention affects satiety is still unclear. In this study, acetylated starch (SA), octenylsuccinic acid-modified starch (OSA), and phosphorylated starch (SP) were administered to mice over one month. All ES reduced the average chain length, enhanced thermal stability and digestive resistance. SA and OSA demonstrated superior satiety-enhancing effects. Correlation analysis shows that starch chain length is related to satiety. SP and OSA impeded the digestive and absorptive processes

Short-chain amylopectin and long-chain amylose drive distinct wheat starch gel networks with similar low digestibility.

Reducing staple-food digestibility is an important nutritional target for wheat starch-based products, yet how starch chain architecture regulates gel digestibility remains unclear. In this study, starches from 14 wheat varieties were used to prepare 40% (w/w) gels, and their gel structure, in vitro digestibility, and chain-length evolution during digestion were investigated. The results showed that elevated short-chain amylopectin or long-chain amylose produced gel networks with different macroscopic mechanics but similar local barrier function, yielding comparable digestion rates and lower f

Effects of wheat starch-myristic acid complex on glucose and lipid metabolism in hyperglycemic Drosophila melanogaster.

Wheat starch-myristic acid (WS-MA) complexes have shown potential in vitro for modulating glucose and lipid metabolism. However, their in vivo efficacy remains underexplored. In this study, we analyzed the regulatory effects of boiled WS-MA complex on glucose and lipid metabolism in a high-sucrose-induced Drosophila melanogaster model of type 2 diabetes mellitus (T2DM). The WS-MA complex, categorized as resistant starch type V (RS5), forms a stable V-type crystalline structure through hydrophobic interactions between amylose and myristic acid. This structure physically shields starch from enzy…

A perception that the feed grain basis of reduced-crude protein diets modifies the anabolic impact of insulin on the growth performance of broiler chickens.

This inherently speculative review provides a perception that the feed grain basis of a reduced-crude protein (CP) diets modifies the anabolic impact of insulin in broiler chickens for the first 21 to 28 days post-hatch. Insulin is a powerful anabolic hormone in non-ruminant, mammalian species; however, the importance of insulin in avian species is usually dismissed because broiler chickens are held to be hyperglycaemic and resistant to insulin. However, there are indications that embryonic and young birds are in fact sensitive to insulin and resistance to insulin develops with age. The growth

Multiscale structure change regulates the functional properties of proso millet starch-oleic acid-ferulic acid ternary system during hot extrusion three-dimensional printing.

This study investigates the effects of introducing oleic acid and/or ferulic acid into a proso millet starch system on starch retrogradation, starch digestion, and lipid oxidation stability via hot-extrusion three-dimensional printing. To elucidate its regulatory mechanism from a structural perspective, the multiscale structures of complex are characterized and supplemented with textural, digestive, and oxidative stability analyses. The introduction of oleic acids and/or ferulic acids induce the formation of V-type and non-V-type inclusions, accompanied by an increase in relative crystallinity

Pea Starch-Lauric Acid Complex Alleviates Dextran Sulfate Sodium-Induced Colitis in C57BL/6J Mice.

The previous documentation has shown the role of resistant starch in promoting intestinal health, while the effect of starch-lipid complex (RS5) on colitis remains unclear. This study aimed to investigate the effect and potential mechanism of RS5 in colitis. We prepared RS5 complexes by combining pea starch with lauric acid. Mice with dextran sulfate sodium-induced colitis were treated with either RS5 (3.25 g/kg) or normal saline (10 mL/kg) for seven days, and the effects of pea starch-lauric acid complex on mice were observed. The RS5 treatment significantly attenuated weight loss, splenomega…
