Effects of different drying methods on drying characteristics and quality of chili peppers (Capsicum annuum L.): Insights from changes in carotenoid and alkaloid secondary metabolites.

This study evaluated the effects of sun drying (SD), heat pump drying (HPD), far-infrared drying (FIRD), and combined FIR with HPD (FIR-HPD) on drying kinetics and quality attributes of chili peppers, using metabolomics to profile changes in carotenoids and alkaloids. Mechanical drying accelerated the drying rate by 56.8-90.3% compared to SD. Color retention was superior in peppers dried at 45 °C and 55 °C, whereas SD caused color fading. Ascorbic acid was better preserved in SD and 45 °C-dried samples, while total phenolics, antioxidant capacity, and carotenoids decreased with rising temperat

Carotenoids in human nutrition and health.

Carotenoids are naturally occurring pigments found in most fruits and vegetables, plants, algae, and photosynthetic bacteria. Humans cannot synthesize carotenoids and must ingest them in food or via supplementation. Carotenoids have a range of functions in human health. They primarily exert antioxidant effects, but individual carotenoids may also act through other mechanisms; for example, β-carotene has a pro-vitamin A function, while lutein/zeaxanthin constitute macular pigment in the eye. The benefit of lutein in reducing progression of age-related macular eye disease and cataracts is streng

The effect of enhanced carotenoid content of transgenic maize grain on fungal colonization and mycotoxin content.

Novel strategies that address vitamin A deficiency have been developed, such as high-carotenoid maize, a biofortified transgenic maize line rich in carotenoids generated by genetic transformation. The South African white maize inbred (M37W), which is devoid of carotenoids, was engineered to accumulate high levels of β-carotene (provitamin A), lutein, and zeaxanthin. Maize seeds contaminated with fumonisins and other mycotoxins pose a serious threat to both humans and livestock. During three consecutive harvests, the fungal incidence and the fumonisin and aflatoxin content of maize seeds grown

Carotenoid transformations underlying the blue absorbance change in flashed leaves during the induction of oxygen evolution.

The blue absorbance change occurring in flashed bean (Phaseolus vulgaris L.) leaves when exposed to continuous light (first observed by Strasser; Strasser, R.J. (1973) Arch. Int. Physiol. Biochem. 81, 935--955) is caused by the conversion of the following xanthophylls: violaxanthine leads to antheraxanthine leads to zeaxanthine. This conclusion is derived from the simultaneous occurrence of both reactions: (a) In flashed leaves, blue absorbance change and xanthophyll conversion take place under strong (2 mW . cm-2) but not under weak (0.02 mW . cm-2) white light. (b) In chloroplasts isolated f

Association between micronutrients and myopia in American adolescents: evidence from the 2003-2006 National Health and Nutrition Examination Survey.

PURPOSE: To investigate the associations between circulating micronutrients (vitamins A, C, D, E, and carotenoids) and the risk of myopia. METHODS: A total of 1,620 adolescents from the 2003-2006 National Health and Nutrition Examination Survey (NHANES) were included. Logistic regression was used to analyze the associations of micronutrients with myopia and high myopia. Restricted cubic spline analysis was employed to assess the potential nonlinear relationships. RESULTS: Among the 1,620 adolescents, 549 were diagnosed with myopia. After adjusting for multiple covariates, only cis-β-carotene

Are anti-inflammatory foods associated with a protective effect for cutaneous melanoma?

The aim of this systematic narrative review is to answer the following research question: are anti-inflammatory foods or food components associated with a protective effect for melanoma development? Following the Preferred Reporting Items for Systematic Reviews and Meta-analyses reporting guideline, a systematic review was conducted. All cohort studies (n = 18) so far on diet and cutaneous melanoma were reviewed. Out of the 18 cohort studies, seven investigated the role of coffee on melanoma and six studies found a protective effect. Food components considered as anti-inflammatory, such as vit

Slowly reversible de-epoxidation of lutein-epoxide in deep shade leaves of a tropical tree legume may 'lock-in' lutein-based photoprotection during acclimation to strong light.

The kinetics of response to strong light have been examined in deeply shaded leaves of the tropical tree legume (Inga sp.) which have extraordinarily high levels of the alpha-xanthophyll lutein-epoxide that are co-located in pigment-protein complexes of the photosynthetic apparatus with the beta-xanthophyll violaxanthin. As in other species, rapidly reversible photoprotection (measured as non-photochemical chlorophyll fluorescence quenching) is initiated within the time frame of sun-flecks (minutes), before detectable conversion of violaxanthin to antheraxanthin or zeaxanthin. Photoprotection

The thylakoid lumen Deg1 protease affects non-photochemical quenching via the levels of violaxanthin de-epoxidase and PsbS.

Non-photochemical quenching (NPQ), the dissipation of excess light energy as heat, has been long recognized as a major protective mechanism that minimizes the potential for oxidative damage to photosystem II (PSII) reaction centers. Two major positive contributors to NPQ are the carotenoid zeaxanthin, generated from violaxanthin by the enzyme violaxanthin de-epoxidase (VDE or NPQ1), and the thylakoid protein PsbS (NPQ4). The involvement of the lumenal Deg proteases in the repair of PSII from photoinhibition prompted us to further explore their possible role in other responses of Arabidopsis th

Metabolic Engineering of Yarrowia lipolyticafor Efficient De Novo Synthesis of Astaxanthin Glucosides via Enhanced UDP-Glucose Supply.

Astaxanthin is a high-value carotenoid used in nutrition, cosmetics, pharmaceuticals, and biotechnology, but its poor water dispersibility and oxidative stability limit its formulation. Here, we engineered yeast Yarrowia lipolytica for the efficient production of glycosylated astaxanthin. Introducing zeaxanthin glucosyltransferase CrtX from Pantoea ananatis into an astaxanthin-producing strain enabled the synthesis of astaxanthin glucosides, confirmed by HR-ESI-MS, 1H NMR, and 2D NMR. Engineering UDP-glucose metabolism by reducing competing pathways and enhancing UDP-glucose biosynthesis impro

H2O2-induced enhancement of astaxanthin accumulation in Microcystis aeruginosa.

Astaxanthin is a naturally derived antioxidant with great market value. A huge biomass of cyanobacteria is harvested during water blooms salvage and treatment, of which Microcystis aeruginosa is a typical species with astaxanthin biosynthetic capacity. To promote the high-value utilization of the salvaged cyanobacteria after enhancing their astaxanthin accumulation via H2O2 treatment, the cellular proliferation, reactive oxygen species (ROS) content, photosynthetic performance, astaxanthin biosynthesis, as well as related gene expression in M. aeruginosa were assayed under H2O2 stress. With ra

Modifiable Lifestyle Risk Factors and Strategies for Slowing the Progression of Age-Related Macular Degeneration.

Age-related macular degeneration (AMD) is a multifactorial disorder influenced by genetic, lifestyle, nutritional, and systemic health factors that contribute to increased oxidative stress and chronic inflammation in the retina. This article reviews the recent literature on modifiable lifestyle risk factors for the development and progression of AMD. Smoking (current and former), physical inactivity, prolonged sunlight exposure, as well as conditions such as diabetes, hypertension, cardiovascular disease, and obesity have all been associated with an increased risk of early AMD and its progress

Therapeutic Potentials of the Seaweed-Derived Compounds for Alzheimer's Disease.

Cognitive decline associated with healthy ageing and pathological conditions is driven by multifactorial processes, including oxidative stress, mitochondrial dysfunction and chronic neuroinflammation. Alzheimer's Disease (AD), a progressive neurodegenerative disorder affecting cognition and behaviour, is the leading cause of dementia worldwide. Current pharmacological interventions provide modest and transient benefits, targeting limited molecular pathways with safety and cost concerns, underscoring the need for safe, accessible and multi-targeted strategies. This review explores new avenues o

Light stress is not effective to enhanced crassulacean acid metabolism.

Clusia minor L., a C3-CAM intermediate, and Clusia multiflora H. B. K., a C3 obligate, present two physiotypes of a similar morphotype occurring sympatrically in the field. Both species, exposed 2 days to high light, show similar responses to this kind of stress: (i) the level of xanthophyll pigments in tested plants during the daycourse adapts to stress, (ii) the levels of antheraxanthin and zeaxanthin clearly increase during the afternoon showing increased de-epoxidation, (iii) the changes in the xanthophyll cycle are similar. Exposure to high light increases the malate levels in C. minor du

Carotenoids extraction from Japanese persimmon (Hachiya-kaki) peels by supercritical CO(2) with ethanol.

The extraction of carotenoids from Japanese persimmon peels by supercritical fluid extraction (SFE), of which the solvent was CO(2), was performed. In order to enhance the yield and selectivity of the extraction, some portion of ethanol (5 - 20 mol%) was added as an entrainer. The extraction temperature ranged from 313 to 353 K and the pressure was 30 MPa. The effect of temperature on the extraction yield of carotenoids was investigated at 10 mol% of the ethanol concentration in the extraction solvent, and a suitable temperature was found to be 333 K among the temperatures studied with respect
