Proteins and functional polyols are essential food ingredients coexisting in the food matrix, and therefore, interactions between them inevitably occur. In this study, the interaction mechanisms of xylitol (XY) with bovine milk β-lactoglobulin (β-LG) and β-casein (β-CN) were studied using multispectral techniques and molecular docking. Casein proteins were hydrolyzed by papain to identify inhibitory peptides of angiotensin I-converting enzyme (ACE). The hydrolysate was fractionized by immobilized metal affinity chromatography (IMAC-Ni2+). In this study, GCC protein was used for the first time to construct a biodegradable conduit for peripheral nerve repair. This study describes a sensitive enzyme-linked immunosorbent assay (ELISA) using rabbit anti-bovine alpha S1-casein antibody for the detection of commercial milk and milk-containing vomit. The antibody does not react with other human body fluids such as breast milk. The stability of alpha S1-casein antigenic activity was examined after storage at different temperatures and enzyme digestion.
