Measurement of advanced glycation end products (AGEs) accumulated in dentin collagen.

OBJECTIVE: In the Maillard reaction, reducing sugars bind to proteins in a non-enzymatic manner, and the final products are collectively named, advanced glycation end products (AGEs). AGEs accumulate in the human body with age and cause various disorders in tissues and cells. In this study, pentosidine, an AGE that can be stably measured, was used to investigate the differences in pentosidine accumulation within dentin, and whether the results can indicate age. METHODS: High-performance liquid chromatography was used to measure pentosidine, an AGE that accumulates in dentin collagen, in extra…

Comparison of aroma properties of infant formulas: Differences in key aroma compounds and their possible origins in processing.

Aroma is an important attribute of infant formula (IF). In this study, 218 volatiles and 62 odor-active compounds were detected from IF by d … rences in aroma profiles and compounds. These differences were assumed to be mainly ascribed to the Maillard reaction and lipid oxidation, which were largely influenced by the temperature and water activity.

Polysaccharides-protein interaction of psyllium and whey protein with their texture and bile acid binding activity.

Dietary fiber is a group of important food polysaccharides, which may improve gastrointestinal function and alter the bioavailability and nu … he edibility of the psyllium fiber. The IR spectrum and colorimetric assay indicated the product of Maillard reaction between psyllium and whey protein with the heating condition. The SEM showed that the structure of the mixture became stronger with higher temperature. Furthermore, the mixture with the ratio of WP/PSY as 1:2 had three times of the bile acid binding …

Evaluation of tissue accumulation levels of advanced glycation end products by skin autofluorescence: A novel marker of vascular complications in high-risk patients for cardiovascular disease.

A non-enzymatic reaction between reducing sugars and the amino groups of proteins, lipids and nucleic acids is known as the "Maillard reaction". The reactions have progressed in a normal aging process and at an accelerated rate under hyperglycemic, inflammatory, and/or oxidative stress conditions, thus leading to the formation and accumulation of advanced glycation end products (AGEs). Cross-linking modification of organic matrix proteins such as collagen by AGEs not only leads to an increase in vascular and myocardial stiffness, but also deteriorates structural integrity and physiological fun…

Engineering a Galactosylated Zein-Orientin Nanoplatform for NAFLD Alleviation via Lipid Metabolic Modulation and Gut Microbiota Remodeling.

Nonalcoholic fatty liver disease (NAFLD) is characterized by excessive hepatic lipid accumulation, and the existing pharmacological alternatives are constrained by considerable side effects and probable toxicity. Orientin (Ori), a natural flavonoid with hepatoprotective potential, is restricted by poor solubility and low bioavailability. Herein, a galactosylated zein nanoplatform (Ori@Gal-Zein) was engineered via the Maillard reaction, resulting in uniform spherical nanoparticles (163.3 ± 2.6 nm) with high loading capacity of Ori (7.89 ± 0.14%) and gastrointestinal stability. In a CDAHFD-induc…

Impact of storage-induced chemical changes on heterocyclic amine formation in chicken breast meat.

Although thermal processing generates carcinogenic heterocyclic amines (HCAs) in cooked meat, previous research has largely focused on cooking-stage variables, leaving the biochemical impact of the pre-cooking storage phase poorly understood. During storage, lipid and protein oxidation products accumulate along with proteolytic shifts, which can alter the precursor matrix required for the Maillard reaction. This study evaluates how varying storage conditions influence subsequent HCA formation in chicken breast. Refrigerated storage for 14 days promoted oxidation and proteolysis, substantially …

Cold Plasma-Promoted Glycation of Bovine Caseins: Glycoproteomic Insights into Conformational Relaxation and Epitope Masking.

Cold plasma (CP) pretreatment combined with glycation was applied to modulate bovine casein (CN) allergenicity. Using NanoRPLC-ESI-MS/MS, 62 glycated peptides and 52 modification sites were identified across four CN subtypes, with CP significantly increasing both site numbers and degrees of substitution per site (DSP), especially in αs-CN. Moderate CP exposure (3 min) maximized glycation sensitivity at epitope-rich Lys/Arg residues, reflecting conformational relaxation and enhanced accessibility. CP pretreatment also reshaped Maillard reaction product profiles by promoting early-stage formatio…

Effect of phytic acid combined with lactic acid on color and texture deterioration of ready-to-eat shrimps during storage.

To retard the deterioration of texture and color of ready-to-eat (RTE) shrimps during storage, phytic acid (PA) and lactic acid (LA) were used to soak the shrimp prior to cooking. The factors affecting texture (water holding capacity, protein oxidation and degradation, and microstructure) and color (Maillard reaction and lipid oxidation) were determined separately. The free radical and copper ion content were also determined in order to investigate the regulation mechanism of phytic acid and lactic acid on the texture and color of RTE shrimps. It was found that the inhibitor-treated RTE shrimp…

Modification of peanut protein isolate in glucose-containing solutions during simulated industrial thermal processes and gastric-duodenal sequential digestion.

This research investigated the effects of commonly practiced thermal treatments (simulated pasteurization, retort sterilization and UHT sterilization) on peanut protein isolate (PPI)-glucose solution. Results showed that thermal treatment on PPI-glucose solution from mild to drastic conditions would lead to a more ordered and compact protein structure, greater extent of Maillard reaction, higher degree of graft, stronger in vitro antioxidant activities, but decrease in vitro digestion especially lower degree of hydrolysis in two-step enzymolysis by pepsin and then pancreatin. Compared with the…

Effect of glucose-induced glycation on the interaction behavior of furan derivatives with chicken skin collagen.

Retaining volatile compounds is critical for the sensory quality of smoked meat. This study investigated how glucose-induced glycation modifies chicken skin collagen and its interaction behavior with furan derivatives. During glycation, the browning index increased from 0.13 to 0.18, confirming Maillard reaction progression. Glycation decreased D50 from 136.4 to 124.4 μm and increased the absolute zeta potential from 1.74 to 4.59 mV, indicating altered aggregation behavior and surface charge. The reactive sulfhydryl content increased from 8.58 to 25.49 nmol/mg, accompanied by enhanced surface …

Iron bioaccessibility in raw and cooked foods in vitro using fecal inocula from children and adults.

Iron (Fe) is essential for human health but may induce dysbiosis and inflammation when unabsorbed. This study assessed the impact of culinary techniques on Fe bioaccessibility (FeBA) using an in vitro digestion/fermentation model with fecal inocula from children and adults. FeBA in the small intestine was significantly lower in plant-based (12.2 ± 9.91 %; 1.05 ± 0.85 mg/kg) than in animal-based foods (16.8 ± 11.7 %; 1.25 ± 0.86 mg/kg) (p < 0.0001). Cooking methods such as grilling, frying, and roasting enhanced FeBA in plant foods, likely due to Maillard reaction products. In allergic children…

The role of AGEs in pathogenesis of cartilage destruction in osteoarthritis.

Osteoarthritis (OA) is a degenerative disease resulting from progressive joint destruction caused by many factors. Its pathogenesis is complex and has not been elucidated to date. Advanced glycation end products (AGEs) are a series of irreversible and stable macromolecular complexes formed by reducing sugar with protein, lipid, and nucleic acid through a non-enzymatic glycosylation reaction (Maillard reaction). They are an important indicator of the degree of ageing. Currently, it is considered that AGEs accumulation in vivo is a molecular basis of age-induced OA, and AGEs production and accum…
