Polysaccharides from Chinese Baijiu by-products: Structural remodeling, cascade valorization, and functional food applications: A review.

Chinese Baijiu production generates massive solid (Jiuzao) and liquid (Huangshui) by-products annually, which are rich in structurally distinct polysaccharides shaped by long-term solid-state fermentation (SSF). This review critically synthesizes current knowledge on the extraction, structural characterization, and bioactivities of these polysaccharides, with emphasis on SSF-driven structural remodeling. Jiuzao polysaccharides are dominated by feruloylated arabinoxylans with a β-1,4-linked xylan backbone and arabinose-to-xylose ratios of 0.3-0.9, while Huangshui polysaccharides are enriched in

Advances in cereal protein applications for infant and Young child nutrition.

BACKGROUND: The increasing use of plant-derived proteins in infant and young child nutrition necessitates tailored amino acid profiles, high digestibility and strict safety controls. Cereal proteins, such as rice, oat, maize, millet, barley, and wheat, are widely used in complementary foods but face intrinsic limitations, notably lysine and tryptophan deficits, antinutritional factors that reduce bioavailability, gluten immunogenicity in wheat/barley, and inorganic arsenic risks in rice. SCOPE AND APPROACH: This review synthesizes recent advances in processing and formulation strategies, incl

Solid-State Fermentation of Legumes: Multi-Scale Structural Modifications to Unlock Techno-Functional Properties.

Legumes are increasingly used as functional ingredients in plant-based foods. However, their compact endogenous structure restricts techno-functional properties. Conventional fractionation methods that isolate proteins further impair these properties and generate co-products. Solid-state fermentation (SSF), which involves growth of microorganisms on moist solid legumes for in situ enzymatic modification, is a gentle and sustainable strategy to enhance techno-functionality. However, the mechanistic understanding of structural changes underpinning functional modifications in legume ingredients r

Gut microbiota-mediated biotransformation of dietary bioactive compounds: inter-individual variability, determinants, and implications for personalised nutrition.

Dietary bioactive compounds, particularly polyphenols and glucosinolates, are widely associated with reduced risk of chronic disease, yet fewer than 10% of most ingested polyphenols reach systemic circulation in their active form, a figure that varies markedly by compound class; resveratrol bioavailability is below 1%, whereas some simple phenolic acids may reach 30%-50%. The gut microbiota is the primary site where these compounds are chemically transformed into absorbable metabolites, but individuals vary enormously in their capacity to carry out this transformation. This review examines how

Preserving Tradition, Preventing Cancer: A Narrative Review of the Traditional Mexican Diet as a Framework for Cancer Risk Reduction.

The Traditional Mexican Diet (TMexD) is a culturally rooted, plant-forward dietary pattern derived from Mesoamerican agriculture and culinary practice, built on minimally processed staples-maize-based preparations, legumes, vegetables, fruits, and herbs. Characteristic techniques such as nixtamalization and fermentation alter starch structure, mineral availability, and gut microbial activity. Through these effects, the pattern shapes metabolic responses relevant to carcinogenesis. This narrative review clarifies defining features of the TMexD across Mexico's regional diversity and synthesizes

3-substituted-γ-pyrone conjugated ergosterol hybrid with fungicidal activity and potential mechanisms.

The increasing fungicide resistance in pathogenic fungi presents a serious challenge to global agricultural production and food security. Phytopathogens like Penicillium italicum and Colletotrichum musae are great threats to economically important crop production. Citrus, a globally important fruit crop, is highly susceptible to post-harvest infections by P. italicum, while the huge post-harvest losses of bananas (Musa spp.) suffer from anthracnose caused by C. musae. In this study, aspergopyranoid A (1), a new γ-pyrone-ergosterol hybrid with a 6/6/6/6/5/6 hexacyclic skeleton, was isolated and

Impact of Climate Change on Farm Animals: Physiological Mechanisms, Health and Productivity, and Integrated Adaptation Strategies.

Climate change is accelerating the frequency of extreme thermal environments, threatening animal welfare, global herd productivity, and agricultural economics. Heat stress-occurring when the ambient temperature-humidity index (THI) surpasses species-specific thermoneutral thresholds-initiates physiological heat-loss cascades (panting, sweating, and peripheral vasodilation), neuroendocrine disruptions (depressed thyroid hormones, elevated glucocorticoids, and insulin dysregulation), mitochondrial oxidative stress, and gut-barrier breakdown. These systemic disruptions drive substantial performan

Mechanisms by which sialic acid influences the gut microbiota and its metabolism in infants, based on an in vitro spatiotemporal dynamic digestion model.

BACKGROUND: Sialic acid (SA), chemically known as N-acetylneuraminic acid (NANA), is a key bioactive component of breast milk. It reaches the infant's colon largely intact for utilization by the gut microbiota; however, its dynamic fermentation and specific regulatory mechanisms remain unclear. RESULTS: An in vitro biomimetic gut digestion system (BGR-7) was employed to investigate systematically the effects of SA on the infant gut microbiota and its metabolism. The results indicated that SA effectively enhanced the richness of the gut microbiota and optimized community structure. At the phyl

Targeting the Gut-Kidney-Heart Axis in Chronic Kidney Disease: The Mediterranean Diet as a Strategy to Reduce Uremic Toxins and Cardiovascular Risk.

Chronic kidney disease (CKD) is associated with a markedly increased risk of cardiovascular (CV) morbidity and mortality that cannot be fully explained by traditional risk factors. Emerging evidence highlights the central role of the gut-kidney-heart axis, whereby gut microbiota dysbiosis promotes the generation and systemic accumulation of uremic toxins, including indoxyl sulfate (IS), p-cresyl sulfate (PCS), and trimethylamine N-oxide (TMAO). These metabolites contribute to endothelial dysfunction, oxidative stress, inflammation, and vascular remodeling, thereby accelerating CV disease progr

Structural properties of short-chain carboxylic acids and alcohols relate to the molecular and physiological response of Salmonella enterica in an acidic environment.

Short-chain carboxylic acids (SCCA) and short-chain alcohols (SCALC) are naturally occurring antimicrobials that contribute to the biopreservation of food fermentations. This study investigated the effect of structurally different SCCA/SCALC with two-carbon (acetic acid; phenylacetic acid; 2-phenylethanol), three-carbon (propionic acid; 3-phenylpropionic acid; 3-phenylpropanol), and three-carbon chain with an additional hydroxyl group (lactic acid; 3-phenyllactic acid; 1-phenylpropanol) on the fitness, metabolic activity and gene expression of the pathogen Salmonella enterica at pH 4.5. Fermented rice germ extract with high concentration of gamma-aminobutyric acid enhances pentobarbital-induced sleep via GABAergic system in rats.

In modern societies, insomnia stands out as a widespread health concern. Gamma-aminobutyric acid (GABA), an inhibitory neurotransmitter, can exert hypnotic effects. However, despite various clinical trials conducted, scientific evidence regarding the impact of ingested GABA on sleep remains unclear. Therefore, in this study, we investigated the sedative effects of fermented rice germ (RG30) extract with a high GABA concentration through electroencephalography (EEG) analysis in a pentobarbital-induced sleep animal model. The exploration into the neural basis of these positive effects involved e

Oriented butyrate production through a novel bacteria-yeast microbiome: batch verification, key electron donor identification, and long-term validation.

Recovering butyrate from organic waste enables its high-value conversion, aligning with the principles of a circular economy. Traditional butyrate fermentation emphasizes carbohydrates and protein degradation, with limited focus on chain elongation (CE). This study, for the first time, systematically evaluated the effects of different Saccharomyces cerevisiae (SC) concentrations (1, 2, 4, 6, and 8 g/L) on ethanol production (a key electron donor) and subsequent CE for butyrate synthesis, identifying 2 g/L as the optimal SC dosage. At this concentration, butyrate production reached 15.41 ± 2.84

Modulatory effects of black jujube melanoidins on gut microbiota and metabolic pathways in high-fat diet-induced obesity.

INTRODUCTION: Obesity, a growing public health issue, is closely associated with excessive energy intake and gut microbiota imbalances. Despite the increasing attention given to black jujube as a blackened fermented food in recent years, the role of its melanoidins (MLD) in obesity-related biological mechanisms has yet to be thoroughly investigated. METHODS: This study investigated the effects of black jujube MLD on obesity induced by a high-fat diet in C57BL/6J mice. We hypothesize that MLD exerts an anti-obesity effect, potentially mediated by alterations in gut microbiota composition and t

Comparative chemical profiles of fruiting bodies and mycelia of Cordyceps cicadae and Ophiocordyceps sobolifera, and Immunometabolic modulation by liquid-fermented mycelia.

Cordyceps cicadae and Ophiocordyceps sobolifera are entomopathogenic fungi often misidentified due to taxonomic ambiguity, leading to confusion in research and applications. This study compared their metabolite compositions and immunomodulatory activities using molecular identification, chemical profiling, and in vitro assays. High-performance liquid chromatography and LC-MS/MS revealed distinct signatures: C. cicadae lacked myriocin but accumulated N6-(2-hydroxyethyl)adenosine (HEA), while O. sobolifera produced abundant myriocin but no HEA. Beauvericin was enriched in wild C. cicadae, wherea
