The increasing global demand for sustainable and health-promoting foods has positioned plant-based proteins as key components in the development of dairy alternatives. This review critically examines plant protein sources: legumes, cereals, pseudocereals, oilseeds, and nuts not merely by composition, but by their comparative suitability for specific dairy applications, evaluating protein quality using the Digestible Indispensable Amino Acid Score (DIAAS), digestibility, and source-specific antinutritional factors (phytates in cereals; tannins, trypsin inhibitors, and lectins in legumes and oil

Excessive dietary salt intake remains a leading preventable risk factor for cardiovascular disease and mortality. Bread is recognised as a major contributor to population-level sodium consumption in Europe and globally. This study investigated whether substantial salt reduction in bread can be achieved without compromising dough rheology, gas retention, or final bread quality across diverse flour matrices. We evaluated four sodium chloride levels (1.2, 0.6, 0.3, and 0% w/w) in three wheat-based systems: refined white flour (control), fibre-enriched white flour, and wholemeal flour. Dough prope

Thermophilic anaerobic digestion at high organic loading rates (OLRs) may be inhibited by ammonia. This study coupled thermophilic co-digestion of food waste and sludge with vacuum stripping of ammonia in a recirculation line. OLR increased stepwise from 0.7 to 7.0 g VS/Lreactor/d over 223 d of semi-continuous operation at 55 °C. Starting at OLR 4.0 g/L/d, 25% of working volume in three digesters was replaced once a day with vacuum-stripped digestate having pH 9.80 ± 0.09. Digestate replacement immediately decreased ammonia concentration but resulted in robust alkaline conditions at OLR 5.0-7.

Background: Recent studies indicate that maintaining a healthy gut microbiota balance positively influences brain function through the microbiota-gut-brain (MGB) axis. Intestinal inflammation disrupts gut microbial homeostasis, exacerbates inflammatory and oxidative processes, and reduces beneficial microbial metabolites essential for brain health. These alterations may impair MGB axis signaling and increase intestinal and blood-brain barrier (BBB) permeability, facilitating the translocation of inflammatory mediators and potentially contributing to neurological dysfunction. Kefir has emerged

Diet is a major modifiable determinant of gastrointestinal (GI) health, influencing disease risk and progression through coordinated effects on the gut microbiome, immune regulation, epithelial barrier integrity, oxidative balance, and epigenetic mechanisms. This narrative review synthesizes epidemiological, mechanistic, and clinical evidence from the past decade to examine bidirectional relationships between dietary patterns and seven common GI disorders: celiac disease, irritable bowel syndrome (IBS), Crohn's disease, ulcerative colitis, Helicobacter pylori-associated gastritis, peptic ulcer

Natural deep eutectic solvents (NADES) offer a potentially food-compatible alternative for extracting plant polyphenols, although their direct application in yoghurt remains limited. This study evaluated the antioxidant and physicochemical properties of yoghurt fortified with SunGold kiwifruit extracts obtained using a selected choline chloride and glycerol NADES, with water extraction used for comparison. The phenolic profile of the NADES extract was characterised using LC-MS/MS. Both extracts were incorporated before (PRE) or after (POS) fermentation at concentrations of 10%, 20%, and 30% (v

Gut dysbiosis is a key feature in ulcerative colitis, a globally prevalent subtype of inflammatory bowel disease. Microbiota-directed dietary supplements can restore the dysbiotic gut and alleviate ulcerative colitis. We aimed to delineate whether prebiotic guar gum β-manno-oligosaccharides [GG-β-MOS(i) 500 mg/kg, (ii) 1000 mg/kg] favors gut microflora and microflora associated characteristics (MACs) and can prevent dextran sodium sulfate (DSS) induced ulcerative colitis in mice model. DSS challenged adult male C57BL/6 mice were used as model for colon inflammation evaluation. Food and water c

Ulcerative colitis (UC), a chronic inflammatory bowel disease driven by gut dysbiosis, immune dysregulation, and oxidative stress, lacks universally effective therapies. Fucoidan (FCD), a sulfated polysaccharide derived from brown algae, has emerged as a multifaceted therapeutic candidate due to its anti-inflammatory, antioxidant, and immunomodulatory properties. This review synthesizes FCD's mechanisms in UC pathogenesis, emphasizing its suppression of NF-κB and MAPK signaling pathways to reduce proinflammatory cytokines (e.g., IL-6, TNF-α) and regulate TLR-mediated macrophage polarization. Faba beans (Vicia faba L.) and whole-grain oats (Avena sativa L.) offer a high protein content, are a source of dietary fibre and they can be sustainably produced in the Nordic countries, yet face sensory limitations that restrict their wider use in food. This study aimed to overcome these sensory limitations by soaking the faba bean and whole-grain oats with Lactiplantibacillus plantarum, followed by solid-state fermentation with Rhizopus microsporus to produce tempeh-like products. Volatile organic compounds in uncooked and cooked tempeh were analysed using Headspace Solid-Phase Micro-Extrac

Nitrate pollution in groundwater is a serious problem worldwide, as its concentration in many areas exceeds the WHO-defined drinking water standard (50 mg/L). Hydrogen-oxidizing bacteria (HOB) are a group of microorganisms capable of producing single-cell protein (SCP) using hydrogen and oxygen. Furthermore, HOB can utilize various nitrogen sources, including nitrate. This study developed a novel hybrid biological-inorganic (HBI) system that coupled a new submersible water electrolysis system driven by renewable electricity with HOB fermentation for in-situ nitrate recovery from polluted groun

OBJECTIVE: Migraine and irritable bowel syndrome (IBS) can be difficult-to-treat comorbidities that may be driven by underlying gut-brain axis dysfunction. This report describes utilization of a low-FODMAP (fermentable oligosaccharides, disaccharides, monosaccharides, and polyols) diet (LFD) in a patient with refractory migraine and co-occurring IBS.
METHODS: After unremarkable physical and neurological examinations, a 57-year-old woman with IBS and chronic migraine was started on a LFD under the guidance of a registered dietician. Psychometrically validated surveys administered at baseline a

Responses to acetic acid toxicity in the budding yeast Saccharomyces cerevisiae have widespread implications in the biorefinery of lignocellulosic biomass and food preservation. Our previous studies revealed that Set5, the yeast lysine methyltransferase and histone H4 methyltransferase, was involved in acetic acid stress tolerance. However, it is still mysterious how Set5 functions and interacts with the known stress signaling network. Here, we revealed that elevated phosphorylation of Set5 during acetic acid stress is accompanied by enhanced expression of the mitogen-activated protein kinase

BACKGROUND/AIMS: Gut microbiota ferments indigestible food that rests in the colon to produce short-chain fatty acids (SCFAs) acetate, propionate, and butyrate. Colonic SCFA stimulate the synthesis of serotonin which is central in irritable bowel syndrome (IBS) pathophysiology. Reduced SCFA have been linked to specific IBS symptoms like colonic hyperalgesia and hypersensitivity. SCFA enter the colonocyte mainly via 2 energy-dependent monocarboxylate transporters, MCT1 (SLC16A1) and SMCT1 (SLC5A8). We investigated specific gut microbiota, SCFA concentrations, and monocarboxylate transporter mRN

Antibiotics have long been of great benefit for people, both in the medical treatment of human disease and in animal food where they improve the growth performance and feed utilization during animal production. Antibiotics as in-feed supplements affect all stages of pork production, including the gestation, nursing, growing, and finishing stages, although the effects show stage-dependent differences. However, the use of antibiotics in animal feed has become a worldwide concern. This review describes why sub-therapeutic levels of antibiotic additives in animal feed have become an integral part

Distillers Grain (DG) is an important by-product of ethanol production. The ethanol production process uses only the starch portion of the plant and all the remaining nutrients, protein, fat, minerals, and vitamins remain in DGs, a valuable feed material for livestock. The use of antimicrobial drugs is helpful to limit harmful bacterial growth during the early part of the fermentation process. This can lead to the possible presence of contaminants in the by-products that are used in the food and feed industries, resulting in a major concern for the development of bacterial resistance in both h
