Lactic fermentation-driven matrix remodeling of Agaricus bisporus (J.E. Lange) Imbach flour modulates lipid, sugar, and antioxidant signatures in gluten-free bread.

Lactic fermentation can restructure food matrices and modulate the molecular distribution of nutrients and bioactive compounds, thereby altering their technological and functional performance in complex food systems. In this study, Agaricus bisporus flour was used as a model mushroom matrix to investigate how fermentation-drive compositional remodeling influences the physicochemical and functional properties of gluten-free bread. Native and lactic-fermented mushroom flours were incorporated into a rice-corn-tapioca system, and their effects on dough expansion, crumb structure, nutritional comp…

Assessment of the salt tolerance of diverse bread wheat (Triticum aestivum L.) genotypes during the early growth stage under hydroponic culture conditions.

ObjectivesSoil salinity affects the growth of crop plants, leading to reduced productivity, and is a major challenge for wheat production worldwide. Various adaptations and mitigation approaches in combination with tolerant wheat genotypes can be useful for the sustainability of crop production in saline environments. However, the development of salt-tolerant wheat genotypes is one of the best and most efficient solutions for obtaining desirable yields. Considering these issues, an investigation was carried out under hydroponic nutrient culture conditions to assess the genetic variability and

Optimization of an EPS-enriched gluten-free sorghum bread with improved technological properties and eubiotic potential: evidence from an in vitro colonic model.

The growing demand for healthy and appealing gluten-free products has prompted research into alternative cereals like sorghum and targeted fermentation strategies. Hence, this study aimed at developing a gluten-free sorghum sourdough bread enriched in exopolysaccharides (EPS) and evaluating its technological, nutritional, and eubiotic potential using the MICODE in vitro colon model. Sorghum doughs were fermented with four selected lactic acid bacteria strains and in situ EPS production was optimized, with Leuconostoc pseudomesenteroides DSM20193 showing the highest yield (3.29 g/100 g). The re…

In Situ Effects of 4,6-α- and 4,3-α-Glucanotransferases During Sourdough Fermentation: Assessing Microbial Community Dynamics, Bread Glycemic Index, Staling, and Texture.

Although some lactic acid bacteria species harbor genes encoding α-glucanotransferases (4,6-α-GTase and 4,3-α-GTase), the technological and functional implications of these enzymes within sourdough ecosystems remain poorly understood. This study investigated the effects associated with α-GTase-positive and α-GTase-negative strains of Limosilactobacillus reuteri and L. fermentum on sourdough microbiota, bread quality, and starch digestibility. Starter culture inoculation steered the assembly of the sourdough microbiota, resulting in stable acidification and altered microbial community structure…

The combined effect of gluten addition and semolina cell wall integrity reduces the oral sugar release and the insulinemic response to bread in healthy volunteers.

PURPOSE: A strategy to reduce starch digestibility is to limit its accessibility to α-amylase by preserving the integrity of cells where starch is encapsulated. Coarse flour is rich in intact cells and can be used for this purpose. However, making bread with coarse flour negatively affects crumb cohesiveness, which may increase the gastric disintegration rate, and enhance starch accessibility. Therefore, this study aimed to assess the combined effect of coarse semolina and its 20% gluten substitution in bread in healthy volunteers on glycemic and insulinemic responses, oral processing and bolu…

Effects of gliadin-derived peptides from bread and durum wheats on in vitro cultures of human cell lines. Implications for coeliac disease pathogenesis.

A peptic-tryptic-cotazym digest, obtained from bread (hexaploid) wheat gliadins under experimental conditions mimicking in vivo protein digestion, was found to reduce in vitro viability of human embryo (MRC-5) and tumor cell (Hep-2) lines. Time of onset and extent of cytotoxic effects were largely dependent on initial peptide concentrations in the culture medium. The presence of 2% fetal calf serum was capable of delaying, but not of preventing, the onset of cytotoxic effects only in MRC-5 cultures. A peptic-tryptic-cotazim digest obtained from durum (tetraploid) wheat gliadins and tested unde…

Whole wheat bread improves postprandial glucose tolerance in adults with prediabetes: a controlled-feeding randomized crossover trial with microbiome-associated variation in response.

BACKGROUND/HYPOTHESIS: Whole grain intake is associated with reduced risk of type 2 diabetes, yet inconsistent findings from randomized trials and substantial interindividual variability suggest that gut microbiota may influence glycemic responses. We hypothesized that whole wheat bread would improve glucose tolerance compared with refined white bread under controlled feeding conditions in adults with prediabetes, and that gut microbial features would be associated with variability in glycemic response. METHODS: In this randomized, controlled crossover trial, adults with prediabetes (n = 39; …

Development of low-temperature air-blast-dried non-Saccharomyces yeast starters for rice flour-added bread and their potential in industrial bakery applications.

Non-Saccharomyces yeasts have attracted increasing attention in bakery fermentation due to their potential to diversify bread aroma profiles. However, their industrial application remains limited because of a lack of storage-stable starter formats. In this study, low-temperature air-blast-drying was applied to develop ready-to-use Wickerhamomyces anomalus JK04 and Torulaspora delbrueckii JK08 starters, and their performance as co-starters with Saccharomyces cerevisiae was evaluated in rice flour-added bread. Antioxidant supplementation during drying improved yeast viability during four months …
