Reduction of ferulic acid as an electron acceptor under anaerobic conditions by the heterofermentative lactic acid bacterium Weissella cibaria.

When the heterofermentative lactic acid bacterium Weissella cibaria JCM12495 was cultivated anaerobically in medium supplemented with 3-hydroxy-4-methoxycinnamic acid (ferulic acid), all the added ferulic acid was converted to 3-(4-hydroxy-3-methoxyphenyl)propionic acid (HMPA, dihydroferulic acid) via reduction of the propenoic acid side chain. Complete conversion to HMPA was achieved within 16 h, even at an initial ferulic acid concentration of 10 mM. Concurrently, the production of typical heterolactic fermentation products, such as lactic acid and ethanol, was suppressed, while acetic acid

Chemo-enzymatic synthesis, in vitro antioxidant activities and positive effects on oil-in-water emulsion Stabilization of phenolic acid-esterified phosphatidylcholines.

The industrial application of phenolic acids (PAs) is significantly limited by their low solubility and poor bioavailability in lipid-rich systems. Lipophilization via esterification of PAs with lipid matrices offers a promising approach to address these challenges. In this study, an efficient lipase-chemical catalytic method was developed for synthesizing phenolic acid-esterified phosphatidylcholines (PA-EPCs) from PAs and phosphatidylcholine (PC). Three derivatives-caffeic acid-esterified phosphatidylcholines (CA-EPC), ferulic acid-esterified phosphatidylcholines (FA-EPC), and p-hydroxycinna

Salicylic acid treatment of pea seeds induces its de novo synthesis.

Salicylic acid (SA), which is known as a signal molecule in the induction of defense mechanisms in plants, could be a promising compound for the reduction of stress sensitivity. The aim of the present work was to investigate the distribution of SA in young pea (Pisum sativum L.) seedlings grown from seeds soaked in (3)H-labeled SA solution before sowing, and to study the physiological changes induced by this seed treatment. The most pronounced changes in SA levels occurred in the epicotyl and the seeds. Radioactivity was detected only in the bound form of SA, the majority of which was localize

Differential Activation of Ferulic Acid Catabolic Pathways of Amycolatopsis sp. ATCC 39116 in Submerged and Surface Cultures.

Amycolatopsis sp. ATCC 39116 catabolizes ferulic acid by the non-oxidative deacetylation and β-oxidation pathways to produce vanillin and vanillic acid, respectively. In submerged culture, vanillin productivity decreased more than 8-fold, when ferulic, p-coumaric, and caffeic acids were employed in pre-cultures of the microorganism in order to activate the ferulic acid catabolic pathways, resulting in a carbon redistribution since vanillic acid and guaiacol productivities increased more than 5-fold compared with control. In contrast, in surface culture, the effects of ferulic and sinapic acids

The Plant Pathogenic Bacterium Streptomyces scabies Degrades the Aromatic Components of Potato Periderm via the β-Ketoadipate Pathway.

The outer potato periderm layer consists of dead suberized cells. Suberin, a protective biopolymer, is made of a polyaliphatic portion covalently linked to polyaromatic moieties. Evidence accumulates that Streptomyces scabies, the main causal agent of potato common scab, can degrade the suberin aliphatic part but its ability to degrade the aromatic portion has not been documented. This polyaromatic portion is mainly composed of cinnamic acids. In this study, two cinnamates (trans-ferulic or p-coumaric acids) were added to the culture medium of S. scabies strains EF-35 and 87.22. HPLC quantific…

Comparative study of the phytochemical and mineral composition of fresh and cooked broccolini.

Broccolini is originated from crossing the regular broccoli with Chinese kale. Consequently, it has similar properties to these vegetables, but other very particular characteristics. Its consumption has increased in the last few years and, consequently, there have been some studies related to its quality parameters and the influence of different cooking methods. Nevertheless, changes on its phenolic composition and mineral content originated by its cooking have not been investigated in-depth so far. Here we report the phytochemical profile of broccolini before and after boiling, steaming, and

Advances in cereal-derived ferulic acid: Sources, extraction, purification, metabolism, and applications in the food industry.

Ferulic acid is an abundant hydroxycinnamic acid covalently bound with cereal cell wall matrices, representing a valuable natural phenolic compound known for its antioxidant capacity and potential biological activities. However, complex crosslinked structures with cereal matrices severely restrict its efficient release and extraction. Moreover, the biological effects of cereal-derived FA are influenced by its release from food matrices, gastrointestinal availability, and subsequent microbial transformation. In this review, we summarize the major cereal sources and recent advances in extraction

Integrated omics-based analysis reveals the role of ferulic acid activating a co-production of 4-vinyl guaiacol and fumaric acid by Rhizopus oryzae.

The efficient valorization of lignocellulose-derived phenolics remains a major challenge in sustainable biomanufacturing. Here, an integrated omics approach was employed to elucidate how ferulic acid (FA) activates the co-production of 4-vinyl guaiacol (4-VG) and fumaric acid by Rhizopus oryzae. Co-supplementation of FA with glucose significantly enhanced metabolic performance, increasing fumaric acid yield by 16.9% and inducing simultaneous 4-VG synthesis. Metabolomic profiling revealed that FA reprograms cellular metabolism by reinforcing the tricarboxylic acid cycle and redox pathways while

Pancreatic lipase exhibits selective esterase activity on carboxyl-linked hydroxycinnamic acid glucosides.

This study explores the susceptibility of phenolic acids (PAs) to digestion. 24 PAs were identified in apple, including 6 hydroxybenzoic acids (HBAs) and 18 hydroxycinnamic acids (HCAs), most of which were derivatives. PA derivatives showed distinct digestion patterns, clustering into groups. Group 1, with HBAs and HCAs esterified to glucose, had lower bioaccessible concentrations after the intestinal phase than Group 2, which included HCAs esterified to quinic acid or glycosylated via a β-O-glycosidic bond. Under different digestion conditions, the β-O-glycosidic bonds in ferulic acid 4-O-β-D

Regulation of peptide hydrophobicity by self-assembly of casein peptides with ferulic acid to potentially reduce peptide bitterness and improve in vitro digestive activity.

The main purpose of this study was to investigate the structural properties, mechanism of action, bitter taste changes, and γ-aminobutyric acid transaminase (GABA-T) inhibitory activity of CH-FA complexes in vitro digestion by self-assembly of casein hydrolysate (CH) and ferulic acid (FA). Structural analysis revealed that CH-FA was formed spontaneously, driven primarily by hydrophobic interactions and hydrogen bonding. The electron tongue results demonstrated that the bitter value of CH was reduced by 30.89 %, which may be due to the improvement of the hydrophobic amino acid microenvironment
