Dyes, preservatives and salicylates in the induction of food intolerance and/or hypersensitivity in children.

We present 25 patients, aged between 18 and 153 months, with clinical symptoms suggestive of allergy to food antigens. After undergoing exhaustive studies (including case histories, cutaneous tests for reactions to food antigen, peripheral eosinophils, secretory and humoral immunity, determination of total IgE and of specific RAST, exclusion-provocation diets) and without being able to identify an offender, patients were submitted to oral provocation with different food additives (tartrazine, sunset yellow FCF, new coccine, erythrosine, sodium benzoate, 4-methyl hydroxybenzoate and acetylsalic

Transformation-Aware Analytical Strategies for Food Preservatives and Their Byproducts: Challenges and Emerging Detection Approaches in Complex Food Matrices.

Food preservatives are essential for extending shelf life and maintaining food safety, but conventional analysis largely focuses on quantifying parent compounds and may overlook transformation during processing and storage. Changes in pH, light, temperature, available oxygen, and interactions with food matrix components can alter preservative stability and generate transformation products (TPs) with distinct analytical and toxicological characteristics. This review critically evaluates analytical strategies for food preservatives by integrating preservative chemistry, transformation pathways,

Science, practice, and human errors in controlling Clostridium botulinum in heat-preserved food in hermetic containers.

The incidence of botulism in canned food in the last century is reviewed along with the background science; a few conclusions are reached based on analysis of published data. There are two primary aspects to botulism control: the design of an adequate process and the delivery of the adequate process to containers of food. The probability that the designed process will not be adequate to control Clostridium botulinum is very small, probably less than 1.0 x 10(-6), based on containers of food, whereas the failure of the operator of the processing equipment to deliver the specified process to con

Multifunctional Metal-Phenolic Networks: A Game-Changer in Food Preservation Technologies.

Metal-phenolic networks (MPNs) represent a novel class of functional materials formed through coordination-driven self-assembly between polyphenolic compounds and metal ions, which exhibit synergistic properties by integrating the advantages of both components. These materials have garnered increasing attention in the food industry due to their straightforward preparation, environmental compatibility, and diverse raw material sources. Notably, MPNs not only preserve the intrinsic characteristics of metal ions but also capitalize on the exceptional surface affinity of polyphenols, facilitating

Research on Food Preservation Based on Antibacterial Technology: Progress and Future Prospects.

The nutrients present in food are not only prone to a series of physicochemical reactions but also provide conditions for the growth and reproduction of foodborne microorganisms. In recent years, many innovative methods from different fields have been introduced into food preservation, which extends the shelf life while maximizing the preservation of the original ingredients and properties of food. In this field, there is a lack of a systematic summary of new technologies emerging. In view of this, we overview the innovative methods applied to the field of food preservation in recent 3 years,

Plant nutraceuticals as antimicrobial agents in food preservation: terpenoids, polyphenols and thiols.

Synthetic food additives generate a negative perception in consumers. Therefore, food manufacturers search for safer natural alternatives such as those involving phytochemicals and plant essential oils. These bioactive compounds have antimicrobial activities widely proven in in vitro tests. Foodborne diseases cause thousands of deaths and millions of infections every year, mainly due to pathogenic bacteria such as Salmonella spp., Campylobacter spp., Escherichia coli, Bacillus cereus, Listeria monocytogenes and Staphylococcus aureus. This review summarises industrially interesting antimicrobia

Preservation of the gut by preoperative carbohydrate loading improves postoperative food intake.

BACKGROUND & AIMS: A carbohydrate (CHO) drink given preoperatively changes the fasted state into a fed state. The ESPEN guidelines for perioperative care include preoperative CHO loading and re-establishment of oral feeding as early as possible after surgery. An intestinal ischaemia reperfusion (IR) animal model was used to investigate whether preoperative CHO loading increases spontaneous postoperative food intake, intestinal barrier function and the catabolic response. METHODS: Male Wistar rats (n = 65) were subjected to 16 h fasting with ad libitum water and: A) sham laparotomy (Sham faste

Effectiveness of various food preservatives in controlling the outgrowth of Byssochlamys nivea ascospores.

Potassium sorbate, sodium benzoate, sulfur dioxide, and diethylpyrocarbonate (DEPC) were tested for their effectiveness in preventing the outgrowth of Byssochlamys nivea Westling ascospores. Sulfur dioxide was the most inhibitory of the test antimycotics, complete inhibition of colony formation occuring in acidified (pH 3.5) potato dextrose agar containing 50 ppm of the preservative. Complete inhibition of B. nivea ascospore outgrowth in grape juice stored for 60 days was noted in the presence of 300 ppm sulfur dioxide, 400 ppm potassium sorbate, and 600 ppm DEPC. Growth was observed in grape

Antioxidant mechanisms of polyphenols in the storage and preservation of marine foods: a comprehensive review.

Marine foods deteriorate during frozen storage, driven by protein and lipid oxidation and manifesting as colour browning, texture softening, and flavour loss. Polyphenols, multi-target natural antioxidants, offer considerable potential for preservation. The review summarises deterioration patterns, emphasising oxidation mechanisms, evaluates current preservation technologies, and examines advances in polyphenol application. Polyphenols act via radical scavenging, metal chelation, enzyme modulation, and target protein protection, and exert synergistic effects when combined with packaging or phy

Kimchi friend or foe: preserving cultural foods developed pre-refrigeration.

OBJECTIVE: In this commentary, we examine whether kimchi acts primarily as a risk factor or a protective dietary component for gastric cancer. METHODS: By breaking kimchi down into individual ingredients, we summarize evidence on the potential protective and carcinogenic effects. RESULTS: Epidemiologic findings on kimchi and gastric cancer remain inconsistent, likely due to variation in sodium content, fermentation practices, and overall dietary patterns. CONCLUSIONS: We propose that reducing sodium content while preserving traditional fermentation methods may enhance the health benefits of

Do Food Preservatives Affect Staphylococcal Enterotoxin C Production Equally?

Staphylococcal enterotoxins (SEs), particularly enterotoxin C (SEC), are potent superantigens primarily known for causing food poisoning, but recent studies have highlighted their potential role in immune-mediated intestinal diseases. Despite the widespread use of food preservatives, their influence on SEC production-especially from coagulase-negative staphylococci (CNS)-remains poorly understood. In this study, we evaluated the effects of commonly used preservatives, including sodium chloride, potassium nitrate, and sorbic acid, on the expression and production of SEC3 and SECepi in Staphyloc

Corrosion inhibition with different protective layers in tinplate cans for food preservation.

BACKGROUND: In this work the influence of essential onion oil (EOO) on the protection of tinplates was compared with dioctyl sebacate oil (DOS) and epoxy phenolic lacquers, which are frequently used in the food canning industry. RESULTS: When EOO as the protective layer instead of DOS oil was used, tinplate porosity, measured electrochemically (7.58 ± 1.97 µA cm(-2) and 23.0 ± 1.3 µA cm(-2), respectively), and iron coating mass, calculated from AAS data (1.52 ± 0.15 mg m(-2) and 3.14 ± 0.42, respectively), was much lower indicating better corrosion protection. At higher storing temperature (3

Food allergy-induced anaphylaxis impairs adrenal adrenergic biosynthesis despite preserved vagal afferent-adrenal sympathetic reflex function.

Food-induced anaphylaxis is a life-threatening allergic reaction in which endogenous sympathoadrenal responses play a critical role in maintaining physiological homeostasis. However, the functional status of autonomic pathways regulating adrenal catecholamine output during anaphylaxis remains unclear. Using a mouse model of food allergy-induced anaphylaxis, we examined the vagal afferent-medullary C1 neuron-adrenal sympathetic pathway and adrenal adrenergic function. Ovalbumin challenge induced hypotension, hypothermia, metabolic acidosis, and elevated plasma catecholamines. Despite severe sys

Bioprotective cultures as a clean label strategy for food preservation: From concept to market.

Bioprotective cultures and their derived antimicrobial agents represent a promising clean label strategy to enhance food safety and extend shelf-life while aligning with consumer demand for minimally processed products. This review critically analyses the scientific foundations and mechanisms of action of bioprotective agents, with a particular focus on lactic acid bacteria. It elucidates how they inhibit spoilage and pathogenic microorganisms through different strategies (competitive exclusion, acidification, and the production of bacteriocins and other compounds). This work also evaluates in

Comprehensive investigation of Lpt-targeting antimicrobial peptide Thanatin for sterilization and preservation in foods.

Foodborne pathogenic and spoilage bacteria, particularly Gram-negative species, pose significant challenges to food safety and quality. Developing antimicrobial strategies that simultaneously ensure microbial control and product integrity is therefore of great importance. Thanatin, an antimicrobial peptide targeting the lipopolysaccharide transport (Lpt) system, has shown potent activity against Gram-negative bacteria, yet its applicability in food systems remains insufficiently explored. In this study, the antibacterial efficacy and food preservation potential of Thanatin were systematically

Rational design of a sulfonium-stabilized cyclic temporin-SHf as a potential food preservative.

Food safety is increasingly threatened by contamination with foodborne pathogenic microorganisms, particularly in the context of escalating antimicrobial resistance. Natural antimicrobial peptides, such as temporin-SHf, are considered promising candidates for food preservation; however, their practical application is often limited by poor stability and insufficient antimicrobial efficacy. Herein, a sulfonium-stabilized cyclization strategy was employed to improve the stability and antimicrobial activity of temporin-SHf. By conformationally constraining the peptide, its resistance to serum prot
