Proteolysis and peptide release during in vitro digestion at infant conditions of bovine casein ingredients in comparison with human milk.

The present study evaluated in vitro gastrointestinal digestion behavior and peptide generation in infant conditions of simplified milk protein blends composed of micellar casein isolates (MCI) and whey protein concentrate (WPC) blends (40,60, 1.2% w/w total protein). Standard MCI, plasmin-treated (PMCI), and calcium-reduced (CaMCI) forms of MCI were compared, alongside pure WPC and human milk (HM) as references. During gastric digestion, caseins were rapidly hydrolyzed, whereas whey proteins remained largely intact until intestinal digestion. Plasmin pre-hydrolysis generated peptides and expo…

Interface synergy in aqueous Pickering foams: Effects of food gums and sodium Caseinate on the interfacial properties of fat crystal.

Aqueous Pickering foams offer promising opportunities in the aerated food sector but are often limited by low foaming efficiency and poor long-term stability. Fat crystal (SLPs) derived from fully hydrogenated soybean oil (FH), stabilized with either Tween 40 (FH-T40-SLPs) or sodium caseinate (FH-SC-SLPs), were developed to address these challenges. To better mimic real food systems, food gum (FG), sodium caseinate (SC), and their combinations were incorporated to investigate their effects on particle characteristics, interfacial behavior, and foam performance. FH-T40-SLPs (271.7 ± 1.90 nm) ex

Microstructural and rheological properties of camellia oil emulsion stabilized by sodium caseinate and konjac glucomannan with different concentration of ethanol.

In this study, effects of ethanol on camellia oil emulsions stabilized by sodium caseinate (CAS) and konjac glucomannan (KGM) were investigated through rheological and microstructural properties. For camellia oil emulsions stabilized by CAS (0.3 g/kg) and KGM (0.03 g/kg), the interfacial protein adsorption rate increased from 69.63 % to 82.37 % with ethanol concentration increased. Meanwhile the droplet size reduced from 2.18 μm to 1.54 μm. The alcohol-containing camellia oil emulsions exhibited significant shear-thinning and elastic behaviors. The oil droplets became smaller and more densely

Casein-liposome complex loading basil essential oil: Preparation, antibacterial effect, and preservative effect on braised beef.

Liposomal encapsulation enhances the stability of essential oils, while simple liposomes are plagued by lack of targeting and low release rate. Herein, bacteria-secreted protease-triggered liposomes (BEO-clip) were prepared from basil essential oil-loaded liposomes (BEO-lip). The physiochemical properties, antibacterial effect and mechanism against Staphylococcus aureus of the prepared liposomes were investigated, the liposomes were also utilized for the preservation of braised beef. BEO-clip presented higher storage and thermal stabilities. In addition to a stronger bactericidal effect agains

Casein Kinase 1 Alpha 1 Is Over-expressed in Pancreatic Adenocarcinoma Tissues and Correlates With Shorter Patient Survival.

BACKGROUND/AIM: A quarter of a century has passed since the start of the 21st century, and cancer, once considered an incurable disease, has become manageable thanks to the development of various treatments. However, pancreatic adenocarcinoma (PAAD) remains one of the deadliest cancers in the world, with over 95% of patients dying within five years. This is because the anatomical location of the pancreas makes it very difficult to detect with imaging, and symptoms often do not appear until the cancer invades the nerve plexus in its terminal stages, meaning that by the time it is diagnosed, it

Casein Kinases 2-dependent phosphorylation of the placental ligand VAR2CSA regulates Plasmodium falciparum-infected erythrocytes cytoadhesion.

Placental malaria is characterized by the massive accumulation and sequestration of infected erythrocytes in the placental intervillous blood spaces, causing severe birth outcomes. The variant surface antigen VAR2CSA is associated with Plasmodium falciparum sequestration in the placenta via its capacity to adhere to chondroitin sulfate A. We have previously shown that the extracellular region of VAR2CSA is phosphorylated on several residues and that the phosphorylation enhances the adhesive properties of CSA-binding infected erythrocytes. Here, we aimed to identify the kinases mediating this p

Synergistic action of chaotropic agents on the partial casein unfolding and solution stabilization for improved electrospinnability and herb extract loading.

This study presents a synergistic strategy to enhance caseinate electrospinning and incorporation of plant-derived antioxidants, employing chaotropic agents to modulate protein conformation. Sodium dodecyl sulfate (SDS) and ethanol were used to disrupt the protein hydrophobic interactions and to promote unfolding of caseinate in highly concentrated (20 wt%) solutions. A minimal amount of polyvinyl alcohol (24 wt% relative to caseinate) was included to improve electrospinning while preserving the protein-dominant character of the matrix. Methanol and water extracts from rosemary and oregano wer

Casein-quaternary chitosan complexes induced the soft assembly of egg white peptide and curcumin for ulcerative colitis alleviation.

Soft assembly of peptide and curcumin (Cur) molecules enables functional integration by finding dynamic equilibrium states through non-covalent interactions. Herein, we developed two soft assembly systems, curcumin-egg white peptides (Cur-EWP) aggregations (AGs) and Cur-EWP-casein-quaternary chitosan (Cur-EWP-CA-QC) nanoparticles (NPs) to comparatively investigate their therapeutic effects on ulcerative colitis in mice and elucidate their underlying mechanism. Results revealed that Cur-EWP AGs, despite gastrointestinal tract instability, exhibited a propensity for swift accumulation within the

Layer-by-layer coated probiotics with tannic acid-Ca2+ and casein phosphopeptide complexes for caries prevention and enamel remineralization.

Dental caries is a common disease resulting from tooth demineralization caused by bacterial plaque. Probiotics have shown great potential against caries by regulating the balance of oral flora. However, obstacles such as poor colonization and lysozyme sensitivity in oral cavity hinder their further application. In this study, an efficient layer-by-layer surface coating of tannic acid (TA)-Ca2+ and casein phosphopeptide (CPP) was applied to the probiotic Bifidobacterium infantis (BI) with potential anti-caries activity. Multi-functionalized probiotics thus prepared (called BI@TA-Ca2+@CPP) exhib

The effect of arginine on inhibiting amyloid fibril derived from β-casein and the binding studies with multi-spectroscopic techniques.

In general, β-casein is a stable molecular chaperone. However, the fact that amyloid fibrils derived from β-casein has been reported in some cases, which were usually associated with some malignant breast diseases. As an important amino acid, arginine not only exhibits the significance in casein synthesis in mammary gland, but also has great potentiality in inhibiting the amyloid fibril formation. Therefore, the influence of arginine on the amyloid fibrils formed by β-casein and further molecular mechanism were studied firstly with multi-spectroscopic techniques in the present work. The result

Insulin- and cholic acid-loaded zein/casein-dextran nanoparticles enhance the oral absorption and hypoglycemic effect of insulin.

Diabetes mellitus is the most common metabolic disease in the world. Herein, insulin- and cholic acid-loaded zein nanoparticles with dextran surfaces were fabricated to enhance the oral absorptions of insulin in the intestine and in the liver which is the primary action organ of endogenous insulin. In the nanoparticles, zein acted as cement to embed insulin, cholic acid and casein by hydrophobic interactions. The hydrophilic dextran conjugated to casein by the Maillard reaction was located on the nanoparticle surface. The nanoparticles had an insulin loading efficiency of 74.6%, a cholic acid

Casein kinase 1α decreases β-catenin levels at adherens junctions to facilitate wound closure in Drosophila larvae.

Skin wound repair is essential to restore barrier function and prevent infection after tissue damage. Wound-edge epidermal cells migrate as a sheet to close the wound. However, it is still unclear how cell-cell junctions are regulated during wound closure (WC). To study this, we examined adherens junctions during WC in Drosophila larvae. β-Catenin is reduced at the lateral cell-cell junctions of wound-edge epidermal cells in the early healing stages. Destruction complex components, including Ck1α, GSK3β and β-TrCP, suppress β-catenin levels in the larval epidermis. Tissue-specific RNAi targeti
