The tongue map and the spatial modulation of taste perception.

There is undoubtedly a spatial component to our experience of gustatory stimulus qualities such as sweet, bitter, salty, sour, and umami, however its importance is currently unknown. Taste thresholds have been shown to differ at different locations within the oral cavity where gustatory receptors are found. However, the relationship between the stimulation of particular taste receptors and the subjective spatially-localized experience of taste qualities is uncertain. Although the existence of the so-called 'tongue map' has long been discredited, the psychophysical evidence clearly demonstrates

An unmet need: Patients with smell and taste disorders.

OBJECTIVES: There are large numbers of patients with olfactory disturbance in the UK and shortfalls in assessment and support amongst mainstream practice in both primary and secondary care leading to significant quality-of-life impairment and potential missed diagnoses. The aim of this study was to determine the key themes which can be identified from the accounts of anosmia sufferers and to identify important areas to target for future research or service development. DESIGN: Qualitative analysis of written patient accounts from patients corresponding with a tertiary smell and taste clinic i

[Changes in taste ability in patients with vestibular schwannoma].

Vestibular schwannomas (VS) are rare tumors that can cause different symptoms due to their anatomical relationship to the cranial nerves in the inner auditory canal. So far little data is known to the effect of VS on the somatosensory function of the intermediate nerve. This study aimed to investigate the taste function of patients suffering from single sided VS. Therefore the well validated psychophysical test "Taste Strips" has been used. 26 patients who consulted our outpatient clinic at a university hospital could be included in the study. All patients were asked carefully for their medica

[Changes in the innervation of the taste buds in diabetic rats].

INTRODUCTION: Abnormal sensations such as pain and impairment of taste are symptoms of approximately 10% of patients having diabetes mellitus. AIM: The aim of the study was to investigate and quantify the different neuropeptide containing nerve fibres in the vallate papilla of the diabetic rat. METHODS: Immunohistochemical methods were used to study the changes of the number of different neuropeptide containing nerve terminals located in the vallate papillae in diabetic rats. Diabetes was induced in the rats with streptozotocin. RESULTS: Two weeks after streptozotocin treatment the number o

The role of taste in cephalic phase of insulin secretion.

The effect of a short gustatory signal of a sweet solution was tested on 15 young male volunteers. The experiment consisted of mouth rinsing with either a sucrose or aspartate solution or pure water as a placebo. Blood was then taken in short intervals of 0, 5, 10, 15 and 20 min. Blood glucose, C-peptide, insulin and cortisol were determined. While C-peptide and glucose were unaffected, a short-term increase in insulin was observed after the sucrose, but not after the aspartate or placebo. The increase in insulin was significant, though it amounted to only 0.5 mIU/l and lasted approx. 15 min r

Evaluation of smell and taste in patients with Wegener's granulomatosis.

Although a reduced olfactory/gustatory function affects patients in all parts of life, this problem has not received much attention in Wegener's granulomatosis (WG). The aim of this study was to assess the smell/taste function of WG patients. Demographic data of 16 WG patients (9 males, 7 females) were obtained. They all subjectively assessed their taste/smell function on visual analogue scale. Olfactory/gustatory functions of the patients were tested with 'Sniffin' Sticks and 'Taste' strips, respectively. The results were then compared with those from sex and age-matched control group (n = 16

Cutting the chorda tympani: not just a matter of taste.

INTRODUCTION: Chorda tympani injury as a complication of middle-ear surgery has been extensively studied with regard to its effects upon taste. However, the chorda tympani also carries parasympathetic fibres to the salivary glands of the oral cavity. To date, little has been reported about the effect of chorda tympani section upon salivary function. SETTING: Tertiary care centre. MATERIAL AND METHODS: We report a case series of three patients with bilateral chorda tympani lesions. Chorda tympani function was assessed using 'taste strips' and unstimulated sialometry. A careful history of oral

A taste receptor required for the caffeine response in vivo.

Caffeine is a methylxanthine present in the coffee tree, tea plant, and other naturally occurring sources and is among the most commonly consumed drugs worldwide. Whereas the pharmacological action of caffeine has been studied extensively, relatively little is known concerning the molecular mechanism through which this substance is detected as a bitter compound. Unlike most tastants, which are detected through cell-surface G protein-coupled receptors, it has been proposed that caffeine and related methylxanthines activate taste-receptor cells through inhibition of a cyclic nucleotide phosphodi

Influence of sweet tasting solutions on opioid withdrawal.

The effect of the ingestion of palatable fluids on the suppression of opioid withdrawals in the opioid-dependent rats was studied. Physical dependence was induced by administration of morphine over a period of 6 days. Withdrawals were precipitated with naloxone (1 mg/kg, s.c.) 4 h after the last morphine injection on the 6th day. Test drugs (10-30% sucrose solution) were given orally for 2 h prior to naloxone-induced withdrawal in 14 h water deprived rats. Somatic signs of withdrawals were scored by using the global Gellert-Holtzman rating scale. Animals pretreated with low doses of sucrose so

Changes in taste associated with intravenous administration of pentamidine.

In this pilot study the authors set out to: (a) describe the incidence of taste changes associated with intravenous (i.v.) pentamidine treatment; and (b) determine the factors that are related to making the taste changes better and worse. A convenience sample (N = 18) of adult male outpatients with AIDS participated in this study. One hundred percent of the participants experienced an unpleasant taste after the administration of pentamidine. The largest percentage of patients had a metallic taste (89%, n = 16); while 67% (n = 12) experienced a bitter taste. These data suggest that healthcare p

The effect of taste on gastric and pancreatic responses in dogs.

Six mongrel dogs with gastric and esophageal fistulas (n = 4) or with gastric and pancreatic fistulas (n = 2) were studied to determine the role of taste on gastric and pancreatic secretion. Stimulation of the back of the throat with a range of tastants produced gastric acid, bicarbonate, protein, and pancreatic polypeptide levels that were statistically equivalent to those produced with stimulation of the entire tongue. This suggests that the vagus nerve is the primary mediator of the cephalic phase response to tastants. There were marked individual differences among dogs in the responses to

Correction of taste abnormality of malignancy with intravenous hyperalimentation.

A complete remission of widely metastatic bladder carcinoma was obtained with chemotherapy in a 41-year-old man. Severe persistent anorexia led to a 33% weight loss. The anorexia correlated with an elevated sucrose recognition threshold. Following 16 days of intravenous hyperalimentation, taste sensation returned to normal, anorectic symptoms cleared, and weight gain and positive nitrogen balance resulted. There was no stimulation of tumor growth. Restoration of nutritional deficits with intravenous hyperalimentation can improve taste function and appetite so that adequate oral alimentation ca

Control of polydipsic drinking by a taste aversion procedure.

Rats were given daily sessions with free access to food and saccharin flavored water. After fluid consumption had stabilized food was delivered once every minute. Water was always available in the home cage. All rats showed the marked increase in fluid consumption known as schedule-induced polydipsia. The rats were then poisoned with lithium chloride after each of three sessions in an attempt to condition a taste aversion to the saccharin. On recovery from the toxicosis all rats showed first a reduction and then a recovery in saccharin intake. To establish the nature of this effect, the rats w

Identification of key taste active compounds and potential umami peptides in soft-boiled chicken based on taste recombination and virtual screening.

Soft-boiled chicken, a traditional Chinese delicacy renowned for its distinct umami and overall taste, was investigated to identify key taste-active compounds and potential umami peptides. Using taste recombination combined with omission/addition tests, six compounds (sodium ion, chloride ion, inosine-5'-monophosphate (IMP), lactic acid, succinic acid and glutamic acid) were identified as key taste-active compounds. Through the mass spectrometry and virtual screening 14 potential umami peptides were identified, with 13 being reported for the first time. Molecular docking analysis revealed that

FAHFA promotes intracellular calcium signaling via activating the fat taste receptor, CD36 and Src protein kinases in mice taste bud cells.

Two lipid sensors, CD36 and GPR120, are crucial for the orosensory detection of fat taste and for mediating fat preference. However, the mechanism by which endogenous lipid (FAHFA) binds to CD36 to initiate intracellular signaling remains unexplained. Hence, the primary objective of this study is to investigate the binding mechanism of FAHFA to CD36 and its role in isolated mouse taste bud cells (mTBCs). The Schrodinger platform was used to assess the molecular dynamics of protein and ligand interactions, and an in vitro experiment was used to validate the findings. Based on the docking score
