Forty-five percent of young adults who ate roast wild pig at a barbecue in Hawaii experienced an illness compatible with trichinosis. Eosinophilia was present in all of those who were ill and in none who remained well. There were no positive results in skin tests with commercial skin-test antigen. Mineral-organic matter associations (MOAs) are predominant in soil environments and encompass a range of soil minerals and organic matter. This study characterizes changes in the structure and chemical composition of MOAs in the presence of metal ions of high (Cu) and low (Ni) affinity towards organic matter. It shows that MOAs are highly dynamic in terms of size, composition, and structure during their interactions with Cu- and Ni-bearing solutions. MOAs are synthesized using montmorillonite and ferrihydrite as the mineral components and polymerized fulvic acid (FA) as the organic component.
