The success of tooth replantation following traumatic avulsion depends to a large degree on the vitality of periodontal ligament cells which remain on the root surface. Loss of vitality promotes root resorption. In this study 124 freshly extracted teeth, only front teeth and premolars, were stored in dry environment for periods of 10 to 150 min. The vitality of the residual periodontal ligament tissue was tested by means of the fluorescein-diacetate reaction. The composition of milks usually fed to 25 infants admitted to hospital with a dehydrating illness was studied. 15 hypernatraemic babies had been given feeds of greater sodium concentration and osmolality than those fed to the 10 infants whose plasma sodium was below 150 mEq/l. Hypernatraemic dehydration may be followed by death or permanent brain damage. Most infants in the survey were receiving milk with a sodium content greater than that advised by the manufacturers. Suggestions are made for reducing the sources of error commonly made in the reconstitution of dried milk formulae.

The dehydration of lactic acid bacteria for technological purposes induces multilevel damage to bacterial cells. This chapter provides protocols for analyzing functional and structural alterations following the dehydration of Lactobacillus delbrueckii subsp. bulgaricus CIDCA 333 using vacuum drying technology. Protocols involving conventional microbiological assays (plate counting, metabolic activity), fluorescence (membrane integrity), and Raman spectroscopies (DNA conformational analysis) are presented, along with experimental tips and suggestions.
