Staphylococcal enterotoxin A gene-carrying Staphylococcus aureus isolated from foods and its control by crude alkaloid from papaya leaves.

Staphylococcus aureus is a known pathogen causing intoxication by producing enterotoxins in food. Staphylococcal enterotoxin A is one of the enterotoxins commonly implicated in staphylococcal food poisoning. The ability of crude alkaloid extract from papaya leaves to inhibit the growth of S. aureus and staphylococcal enterotoxin A synthesis was investigated. Staphylococcal enterotoxin A gene-carrying S. aureus was isolated from raw milk and ready-to-eat foods. Crude alkaloid was extracted from ground, dried papaya leaves using ultrasonic-assisted extraction, and a MIC of the alkaloid was deter

Changes in the frequency of food orders and food choices on meal delivery apps during the COVID-19 pandemic in a Brazilian metropolitan region.

BACKGROUND: The rise of the digital food environment, especially through meal delivery apps, reshapes food consumption habits amid convenience- and pandemic-driven changes. We aimed to describe changes in both frequency of food purchase and food choices made in meal delivery apps during the COVID-19 pandemic. METHODS: A web-based survey was conducted between May and September 2020 using virtual chain sampling with 986 adults residing in the metropolitan region of Rio de Janeiro, Brazil. The online questionnaire, developed in Google Forms, collected data on sociodemographic characteristics, sel

Food restriction-mediated adrenal influences on antigen-induced bronchoconstriction and airway eosinophil influx in the guinea pig.

The aim of this study was to measure the effects of food restriction on antigen-induced bronchoconstriction and inflammatory cell influx in guinea pigs and to determine the role of plasma cortisol and catecholamine concentrations. Ovalbumin (OA; 0.3 mg/kg, i.v.) was administered to OA-sensitized, anesthetized guinea pigs which had been allowed free access to food or had been food restricted for 18 h prior to OA challenge. In addition to higher plasma levels of epinephrine (30% increase) and cortisol (33% increase), fasted guinea pigs had significantly lower (60% decreased) maximal bronchoconst

The lack of influence of food and local alcoholic brew on the blood level of Mectizan(®) (ivermectin).

There is concern that extraneous factors, such as food and drink, may alter the pharmacodynamics of Mectizan(®) (ivermectin) in patients receiving this important anti-parasitic drug, and thus might put such individuals in danger of serious adverse events. The effects of a common local alcohol-containing beverage and a local food on plasma levels of ivermectin were studied in Sudanese volunteers after administration of the standard dose used in mass drug administration programs for onchocerciasis and filariasis. Plasma levels of ivermectin at various time points (0-48h) after administration of

Assessment of spoilage microbial communities in modified atmosphere-packed ready-to-eat salad during cold storage: A comparative study using MALDI-TOF MS identification and PacBio full-length 16S rRNA and ITS sequencing.

Effect of storage temperatures and modified atmosphere packaging (MAP) on the shelf-life and spoilage microbial dynamics of industrially produced mayonnaise-based potato salad was studied over two years (Spring 2021, Autumn 2021, Spring 2022). Three salad batches, stored at chilling and abuse temperatures ranging from 0 °C to 12 °C, were analyzed. Microbial communities were evaluated using ISO-standard microbiological methods, MALDI-TOF MS identification, and PacBio full-length 16S rRNA gene and fungal ITS amplicon sequencing. The results showed that sensory and microbiological quality strongl

Ultra-Processed Foods and Respiratory and Allergic Diseases in Childhood: Epidemiological Evidence and Mechanistic Insights.

Ultra-processed foods (UPFs) are increasingly consumed worldwide, particularly during childhood, raising growing concerns for health. Although UPFs have been associated with obesity and cardiometabolic disorders, emerging evidence suggests a potential role also in respiratory and allergic diseases. This review critically examines the epidemiological evidence and biological mechanisms linking UPF consumption to respiratory and allergic outcomes in children. To this end, a structured literature search was conducted in the PubMed database, including articles published between 2006 and 2025, selec

Occurrence & characterization of Staphylococcus aureus from ready-to-eat (RTE), and cooked food in Singapore: A retrospective analysis.

Staphylococcus aureus is one of the major foodborne pathogens that poses significant public health risk, particularly in ready-to-eat (RTE) food prepared under inadequate hygiene conditions. Staphylococcal food poisoning (SFP) is increasingly prevalent worldwide, yet it is not reportable in Singapore, leaving a knowledge gap regarding the clinical incidence and virulence of local strains. This study examined the genetic diversity, antimicrobial resistance (AMR), and virulence determinants of S. aureus in RTE, and cooked food using both conventional testing and whole-genome sequencing (WGS) too

Intermittent fasting ameliorates PM2.5 exposure-induced abnormalities in glycaemic control.

Exposure to ambient fine particulate matter (PM2.5) elicits various abnormalities in glycaemic control and thus correlates with type 2 diabetes. Intermittent fasting is an emerging treatment for type 2 diabetes. This study, therefore, tested whether intermittent fasting ameliorates PM2.5 exposure-induced abnormalities in glycaemic control. To this end, C57Bl/6 J mice were exposed to filtered air (FA) or concentrated ambient PM2.5 (CAP) for 16 weeks and concurrently subject to ad libitum feeding or intermittent fasting. The food intake assessment showed that CAP exposure transiently reduced foo

Avian cerebrospinal fluid: repeated collection and testing for a possible role in food intake regulation.

The objective of this study was to determine if a factor(s) involved in the regulation of food intake exists in the cerebrospinal fluid (CSF) of the domestic fowl. A technique was developed that allows blood-free CSF samples to be collected repeatedly from the cisterna magna for up to 6 weeks. Using this technique, CSF was collected from free-feeding and 24-hour fasted broiler cockerels and injected into the lateral cerebral ventricle of 8-week old Leghorn cockerels and 4-week old broiler cockerels. The free-feeding birds received 10 microliter intracerebroventricular injections of CSF either

Variation in spatial organization of the gut microbiota along the longitudinal and transverse axes of the intestines.

Elucidation of the mechanisms by which the microbiota-gut-brain axis influences behavior requires understanding the anatomical relationship of bacteria with mucosal elements. We herein report that microbes were mainly associated with food or fecal matter in the intestinal lumen. In the small intestine, bacterial density increased from proximal-to-distal levels and was much higher in the large intestine. A mucus layer was present between the mucosal epithelium and fecal boluses in the large intestine, but not between food and the mucosal epithelium in the small intestine. In contrast, in all in

Effect of timing of food deprivation on host resistance to fungal infection in mice.

Mice were deprived of food for a period of 72 h at varying times relative to the time of infection with Paracoccidioides brasiliensis. Host resistance was diminished profoundly when the period of food deprivation was from 48 h before to 24 h after infection (group B). When food deprivation was initiated immediately after infection (group C), host resistance was reduced less profoundly. When food deprivation was initiated at 24 and 48 h post-infection, reductions in host resistance were only moderate or not observed respectively. These results suggest that the earlier in the course of infection

Anticipatory metabolic reprogramming distinguishes caloric restriction from fasting-refeeding cycles.

Interest in fasting-based dietary interventions to improve metabolic health is growing. Caloric restriction (CR) with one meal per day includes an extended fasting component that contributes to its metabolic and longevity benefits, yet the specific role of fasting within CR remains unclear. Here, we compared mice under CR with those subjected to a fasting-refeeding-fasting (FRF) regimen while controlling pre-fasting food intake and fasting duration. Simultaneous comparison of diet induced changes in plasma insulin and free fatty acids, hepatic mTOR signaling and ketogenesis, total body metabol

Influence of food on the absorption of acetylsalicylic acid from enteric-coated dosage forms.

The absorption of acetylsalicylic acid (ASA) from two different enteric-coated dosage forms, tablets (Premaspin) and granules (Reumyl), was studied in healthy volunteers under fasting and non-fasting conditions by following the plasma concentration and urine recovery of salicylates after single doses of ASA 1 g. Conventional tablets (Aspirin) were used as the reference. Under fasting conditions the absorption of ASA from the two different enteric-coated preparations was complete. Taken with food the enteric-coated tablets gave much lower plasma concentrations than under fasting conditions, and

Ultra-Processed Foods and Metabolic Dysfunction-Associated Steatotic Liver Disease (MASLD): What Is the Evidence So Far?

Ultra-processed foods (UPFs) are foods that have undergone extensive industrial processing, with the addition of emulsifiers and sweeteners together with various chemicals originating during preparation and the packaging procedures. UPFs are intended to be more palpable, long lasting, and easier to find and consume. However, their widespread use has been linked to various disorders, including insulin resistance, type 2 diabetes (T2D), obesity, and lately metabolic dysfunction-associated steatotic liver disease (MASLD). Given that MASLD is primarily driven by excessive fat accumulation in the l

Intermittent Fasting and Metabolic Health.

Given the ongoing strain that the obesity epidemic has placed on public health outcomes, new and effective approaches to weight control are needed. One approach to improving weight and metabolic outcomes is intermittent fasting, which consists of multiple different timing schedules for temporary food avoidance, including alternate-day fasting, other similar full-day fasting patterns, and time-restricted feeding (where the day's food is consumed over a 6-h period, allowing for 18 h of fasting). These feeding schedules have favorable metabolic effects by intermittently inducing the metabolism of

The Impact of Ultra-Processed Food Consumption on Frailty and Sarcopenia: A Systematic Review.

BACKGROUND AND AIM: Ultra-processed foods (UPFs), foods with high levels of artificial additives and preservatives, often low in protein and essential nutrients despite being calorie-dense, have been associated with a range of adverse health outcomes, including cardiovascular and kidney diseases, obesity, Type 2 diabetes, and frailty. Despite growing evidence on the adverse effects of UPFs, no systematic review has comprehensively assessed their association with frailty and sarcopenia. This review synthesizes current evidence on UPF intake and frailty prevalence and severity in older adults wh
