Technological Applications of Macrococcus caseolyticus and its Impact on Food Safety.

Macrococcus spp. are Gram-positive cocci that belong to the Staphylococcaceae family; they are closely related to staphylococci, but, unlike staphylococci, they are not considered as human pathogens. Macrococcus spp. are recognized as relevant veterinary pathogens, and their presence has been reported in food products of animal origin. Macrococcus caseolyticus, the most studied species of the Macrococcus genus, is associated with the development of aroma and flavor in fermented foods and is, thus, used as starter cultures in fermentations. However, certain important issues regarding food safet…

From diversity to dominance: how salt and CO₂ shape LAB-dominated ecosystems in vegetable fermentations.

UNLABELLED: Research on microbial ecosystems is often challenging due to the high diversity of microbial taxa present and the complexity of controlling environmental variables. Fermented foods offer simpler and more reproducible model ecosystems in which both community composition and environmental factors can be more precisely controlled and manipulated. In this study, we focused on fermented vegetables, which are typically dominated by lactic acid bacteria (LAB). However, it remains unclear why LAB consistently drive the spontaneous fermentation of vegetables and how factors such as vegetabl…

Effect of Chlorine Dioxide Bacteria-Reducing Pretreatment on Quality of Fermented Chili Paste.

Microorganisms play a critical role in determining the quality of fermented chili paste. However, spoilage microorganisms residing on the surface of chili peppers can compromise sensory attributes and reduce edibility. This study aims to adopt chlorine dioxide to reduce spoilage microorganisms prior to fermentation, and the effects on chili paste quality were systematically evaluated. The pretreatment (soaking in 75 mg/L chlorine dioxide solution for 10 min) significantly reduced microbial richness and abundance on chili surfaces. Physicochemical analysis indicated that this reduction facilita

Weissella confusa aortic valve endocarditis: A case report and literature review.

Weissella are Gram-positive coccobacilli found in fermented foods and considered to have probiotic potential. However, different species of this bacterial genus may be involved in human infections, particularly in cases of immunodepression. We report a rare case of Weissella confusa endocarditis in a 65-year-old man with myelodysplastic syndrome, combined with a review of other cases described in the literature. As identification to species level was challenging with the standard techniques, we resorted to whole genome sequence analysis.

Divergent metabolic shifts of lactic acid bacteria strains shape the quality and predicted antioxidant mechanisms of a fermented fish-rice matrix (Yucha).

The functional potential of fish-rice co-fermented high-protein matrices remains difficult to harness because of the unpredictability of spontaneous fermentation. This study employed metabolomics and network pharmacology to decode the metabolic reprogramming orchestrated by three lactic acid bacteria strains. Inoculation rapidly stabilized physicochemical properties and mitigated lipid oxidation. Metabolomic profiling revealed distinct strain-specific metabolite profiles: YC202 was associated with differences in carbohydrate-related metabolites and the antioxidant dipeptide carnosine; YDN29 sh

Viable metacercariae of Opisthorchis viverrini in northeastern Thai cyprinid fish dishes--as part of a rational program for control of O. viverrini-associated cholangiocarcinoma.

Among the various types of chronic helminthic infections, only schistosomiasis hematobium, opisthorchiasis, and clonorchiasis in a long-standing inflammation are found to be causative agents of cancer. Opisthorchiasis and Opisthorchis viverrini-associated bile duct cancer are prevalent among the residents in northeastern Thailand, who prefer consuming raw or improperly cooked cyprinid fish. Although numerous studies have reported on the presence of O. viverrini metacercariae in freshwater cyprinid fishes, none of the data has been derived directly from cyprinid fish dishes. Here, we have demon

Occurrence, persistence and pathogenic potential of Bacillus cereus sensu lato strains isolated during processing of two plant-based desserts.

Ensuring the microbiological safety of plant-based foods is challenging, particularly during the development of new products. This study aimed to map and identify Bacillus cereus sensu lato (s.l.) contaminants during the production of two plant-based desserts: one fermented and one non-fermented, in order to identify critical processing stages. A bacterial survey was conducted along the processing line of each dessert and 120 product samples were collected from raw materials, processing stages, and during product storage. Total bacterial counts ranged from <2.0 to 10.1 Log10 CFU/g during proce

[Inhibitory effects of "Goishi-tea" as a post-fermented-tea on dietary-induced hypercholesteremia and atherosclerosis in rabbits].

Since lipid oxidation is involved in the deterioration of hypercholesterolemia-related atherosclerosis, ingestion of drinks and foods with antioxidant actions is useful for preventing lipid oxidation. Goishi-tea is a post-fermented-tea manufactured by a unique method in Japan, and may be useful for preventing various disorders. However, there is no scientific evidence. In this study, we compared the radical scavenging activity of goishi-tea with that of other teas, and administered this tea to a rabbit model of hypercholesteremia to evaluate its usefulness in the inhibition of hypercholesterem

Incidence of Staphylococcus aureus and associated risk factors in Nham, a Thai fermented pork product.

Staphylococcus aureus is one of the most prevalent bacterial pathogens causing food-borne disease worldwide. Staphylococcal food poisoning is caused by ingestion of staphylococcal enterotoxins (SEs) pre-formed in the implicated food. In this study, the incidences of S. aureus and classical SEs (SEA-SEE) contamination in 'Nham', a traditional Thai fermented pork product, were determined. Among 155 Nham samples tested, as high as 39.35% of the samples were positive for S. aureus (2-3500 MPN/g), but none were positive for the SEs. The risk factors for S. aureus contamination were highly correlate
