A systematic review and meta-analysis of randomized controlled trials examining the effect of ultra-processed food on energy intake and weight gain.

Ultra-processed food (UPF) may contribute to increased energy intake and weight gain, but evidence synthesis from randomized controlled trials (RCT) is lacking. A pre-registered systematic review and meta-analysis of RCTs was conducted comparing UPF with less processed food (LPF) on energy intake and/or body weight in humans. Secondary analyses (meta-regression and sub-group) examined effects of UPF on appetite sensations, eating rate, palatability and considered the role of nutrient profile in explaining results. Ten eligible studies were included. UPF trial arms tended to have higher energy

Product-specific microbial community dynamics in egg-based processed foods: Integrated analysis of processing facility environments and retail products.

Egg-based processed foods are widely consumed under refrigerated or frozen conditions; however, microbial community dynamics across products and processing environments remain poorly characterized. Here, we integrated culture-dependent enumeration and 16S rRNA gene sequencing to characterize microbial communities in commercially distributed egg garnish (n = 61) and rolled egg products (n = 109), as well as stage-resolved samples from a processing facility (n = 99). Both production lines originated from a common liquid whole egg input but diverged at the genus level along their respective proce

How food structure and processing govern metabolizable energy: a critical review of the food-matrix determinants of energy availability and the limits of the Atwater accounting.

Food energy is usually reported using Atwater factors: composition-based coefficients that treat metabolizable energy as a function of macronutrient mass rather than food structure. Yet a growing food-science literature shows that metabolizable energy can diverge materially from Atwater predictions according to the integrity of the food matrix and the processing applied to it. This review brings energy-accounting and food-structure science into direct contact. It defines where the Atwater system remains useful and where its structural blind spot becomes consequential; clarifies the frequent co

An optimised method for the rapid analysis of condensed phosphates in fishery and processed marine food products using ion chromatography and microwave sample processing.

Condensed phosphates are deliberately added to the fishery and processed marine food products on purpose to increase the weight of products. However, excessive intake overwhelming bodily homoeostasis can result in phosphate toxicity such as mineral and bone disorders, associated with chronic kidney diseases, and cardiovascular events. Rapid analysis for condensed phosphates is required to detect the illegal adulteration of processed marine products. We optimised an analytical method using ion chromatography for the rapid and selective detection of condensed phosphates in various kinds of fishe

Surface-Engineered Selenium Nanozymes for Food Safety: Photoregulated Catalysis, Multimodal Antibacterial Mechanisms, and Emerging Applications in Food Processing, Packaging, and Biosensing.

Selenium nanoparticles (SeNPs) are increasingly recognized as promising nanozymes for food safety because they combine enzyme-mimetic catalytic activity, broad-spectrum antimicrobial effects, and relatively favorable biocompatibility. However, current understanding remains fragmented across materials science, microbiology, and food application research, and a critical synthesis focused on their food-system relevance is still lacking. This review examines how surface engineering and photoactivation are transforming SeNPs from general antimicrobial nanomaterials into multifunctional platforms fo

Diet, ultra-processed foods, and gut dysbiosis: linking emulsifiers to colorectal cancer risk.

The rising intake of ultra-processed foods (UPFs) has raised concerns about their effects on gut microbiota and the risk of colorectal cancer (CRC). Emulsifiers, among the various additives in ultra-processed foods, have attracted considerable interest due to their possible involvement in gut dysbiosis, inflammation, and carcinogenesis. Emulsifiers, including polysorbates and carboxymethylcellulose, have the potential to compromise the intestinal barrier, modify microbial composition, and foster a pro-inflammatory environment that may facilitate the development of colorectal cancer (CRC). The role of microRNAs in cardiovascular disease associated with the consumption of ultra-processed foods: a comprehensive review.

Ultra-processed foods (UPFs) now dominate dietary intake in many countries and are consistently associated with higher risks of cardiovascular disease (CVD), including myocardial infarction, stroke, and heart failure. Beyond excess sodium, sugar, and unhealthy fats, UPFs may exert cardiovascular harm through food matrix disruption, processing-generated toxicants, additive exposure, and microbiome perturbation. These upstream insults converge on inflammatory, oxidative, and metabolic signaling pathways that regulate microRNAs (miRNAs), a class of small non-coding RNAs that orchestrate post-tran
