Impacts of food contact chemicals on human health: a consensus statement.

Food packaging is of high societal value because it conserves and protects food, makes food transportable and conveys information to consumers. It is also relevant for marketing, which is of economic significance. Other types of food contact articles, such as storage containers, processing equipment and filling lines, are also important for food production and food supply. Food contact articles are made up of one or multiple different food contact materials and consist of food contact chemicals. However, food contact chemicals transfer from all types of food contact materials and articles into

Dietary compounds as modulators of metals and metalloids toxicity.

A large part of the population is exposed to metals and metalloids through the diet. Most of the in vivo studies on its toxicokinetics and toxicity are conducted by means of exposure through drinking water or by intragastric or intraperitoneal administration of aqueous standards, and therefore they do not consider the effect of the food matrix on the exposure. Numerous studies show that some components of the diet can modulate the toxicity of these food contaminants, reducing their effect on a systemic level. Part of this protective role may be due to a reduction of intestinal absorption and s

Comparison of four different methods for the determination of sulfites in foods marketed in South Korea.

Sulfites in foods were analysed using four methods: optimised Monier-Williams (official method), modified Rankine, HPLC and ion-exchange chromatography (IEC). The modified Rankine and HPLC methods were performed according to the previously reported methods but with some modifications. The IEC method was carried out through a combination of a modified Rankine apparatus and an anion-exchange column for the first time. In false-positive response tests, false-positive results with acetic acid and propionic acid were not observed in the modified Rankine, HPLC or IEC methods, unlike the optimised Mo

Controlling Foodborne Antimicrobial-Resistant Bacteria: The Gen(i)e is Out of the Bottle.

As a conduit between the environment and human and animal populations, food sits at the nexus of One Health and is a major vehicle for the transmission of pathogenic and nonpathogenic antibiotic-resistant bacteria. To alleviate the associated public health burden, it is therefore critical to reduce human exposure to antibiotic-resistant bacteria via food consumption. The objective of this narrative literature review was to demonstrate that while reduction of antibiotic use in agriculture is necessary, it is not sufficient to protect humans from exposure to antibiotic-resistant foodborne infect

Probiotics as eco-friendlybio-preservatives: In vivo mechanisms of mycotoxin inhibition and emerging applications for food safety and human health.

Probiotics present a promising and sustainable solution for mitigating the harmful effects of mycotoxins in food thereby resolving a critical concern for global food safety. This review highlights probiotics' role as eco-friendly bio-preservatives that inhibit both the production and effects of mycotoxins in food systems. It explores the in vivo and in vivo mechanisms through which probiotics neutralize mycotoxins, prevent their carcinogenic effects and improve food safety. These findings indicate the potential of probiotics dual function in preventing mycotoxin contamination at the food level

Sampling the Food-Processing Environment: Taking Up the Cudgel for Preventive Quality Management in Food Processing (FP).

The Listeria monitoring program for Austrian dairies and cheese factories was established in 1988. The aim was to control the entrance of L. monocytogenes into the food-processing environment (FPE), preventing the contamination of food under processing. The Austrian Listeria monitoring program comprises four levels of investigation, dealing with routine monitoring of samples and consequences of finding a positive sample. Preventive quality control concepts attempt to detect a foodborne hazard along the food-processing chain, prior to food delivery, retailing, and consumption. The implementatio

Application of isotope ratio mass spectrometry (IRMS) for food authenticity and food fraud detection: a comprehensive review.

Food fraud costs the global food system an estimated USD 30-40 billion a year and affects roughly one in ten traded products (Haider et al., 2024; Visciano & Schirone, 2021), yet conventional chromatographic, spectroscopic, molecular, and elemental methods share a blind spot: none provides intrinsic markers of geographic origin or production practice that resist falsification. Isotope ratio mass spectrometry (IRMS) measures natural variation in 13C/12C, 15N/14N, 2H/1H, 18O/16O, and 34S/32S imprinted on food by climate, geology, photosynthetic pathway, and agricultural practice; these signature

Influence of peel morphology on pesticide distribution and metabolic responses in mango after postharvest immersion treatment.

Pesticide residues in agricultural products pose substantial food safety challenges, necessitating an improved understanding of pesticide behavior for optimized application. We examined the residue distribution patterns and metabolic responses of two non-systemic pesticides (thiram and tolfenpyrad) and three systemic ones (pyriproxyfen, pyraclostrobin, and tebuconazole) in two mango cultivars with distinct peel characteristics, thick-peel R2E2 and thin-peel Guifei, following postharvest immersion. The results demonstrated that peel morphology, fruit maturity, and pesticide properties collectiv

Multi-year monitoring of deoxynivalenol (DON) in wheat from Türkiye: occurrence and temporal trends.

Deoxynivalenol (DON) is one of the most frequently occurring mycotoxins in wheat and poses significant concerns for food safety. In this study, a total of 540 wheat samples collected between 2014 and 2024 were analyzed to evaluate the occurrence and temporal variability of DON contamination. DON was detected in 139 samples (25.74%), indicating a moderate level of contamination. The results revealed considerable inter-annual variability, with the annual prevalence of DON-positive wheat samples ranging from 16.1% to 35.0%. Despite the frequent occurrence of DON, only two samples (0.37%) exceeded

Hyperspectral Imaging for Mycotoxin Monitoring in Food: A Comprehensive Review of Technologies, Algorithms, and Applications.

Mycotoxin contamination represents one of the most pressing food safety challenges worldwide, with millions of tons of agricultural commodities affected annually. Conventional detection methods, while accurate, are labor-intensive, destructive, and unsuitable for large-scale screening. Hyperspectral imaging (HSI) has emerged as a transformative non-destructive analytical technique capable of simultaneously capturing spatial and spectral information across hundreds of contiguous wavelengths. This review critically evaluates the current state of HSI technology for mycotoxin detection in food pro

Fungi and mycotoxin types, toxicity, mechanisms, and control of mycotoxin contamination: a review.

Fungi are diverse and have important applications; however, mycotoxins produced by certain fungal species pose a major global challenge to food safety. These secondary metabolites mostly exhibit stable physicochemical properties, allowing them to persist throughout various stages of production and processing, posing a serious threat to human and animal health. This review first establishes the theoretical foundation by reviewing the types of fungi, types of mycotoxins, their physicochemical properties, and biosynthetic pathways. It then conducts a systematic literature review on the beneficial

Migration of endocrine and metabolism disrupting chemicals from plastic food packaging.

Plastics constitute a vast array of substances, with over 16000 known plastic chemicals, including intentionally and non-intentionally added substances. Thousands of chemicals, including toxic ones, are extractable from plastics, however, the extent to which these compounds migrate from everyday products into food or water remains poorly understood. This study aims to characterize the endocrine and metabolism disrupting activity, as well as the chemical composition of migrates from plastic food contact articles (FCAs) from four countries as significant sources of human exposure. Fourteen plast

Recent advances and trends in innovative biosensor-based devices for heavy metal ion detection in food.

Low-cost, reliable, and efficient biosensors are crucial in detecting residual heavy metal ions (HMIs) in food products. At present, based on distance-induced localized surface plasmon resonance of noble metal nanoparticles, enzyme-mimetic reaction of nanozymes, and chelation reaction of metal chelators, the constructed optical sensors have attracted wide attention in HMIs detection. Besides, based on the enrichment and signal amplification strategy of nanomaterials on HMIs and the construction of electrochemical aptamer sensing platforms, the developed electrochemical biosensors have overcome

Zygosaccharomyces rouxii is the predominant species responsible for the spoilage of the mix base for ice cream and ethanol is the best inhibitor tested.

A mix base for ice cream (MBIC) is used to produce artisanal or industrial ice creams and desserts and consists of a mixture of different ingredients, including sugar, egg yolk, natural flavors, starch and milk proteins. MBICs, which have chemical-physical characteristics that include a pH of 5.61 and an activity water (Aw) less than or equal to 0.822, are packaged in tin boxes and stored at ambient temperature. Despite the low Aw, MBIC can support osmotolerant and osmophilic yeast growth. The aim of our work was to study the behavior of Zygosaccharomyces rouxii, the main microorganisms respon

Isolation of saturated alkylresorcinols from rye grains by countercurrent chromatography.

Alkylresorcinols (5-alkyl-1,3-dihydroxybenzenes) are amphiphilic phenolic lipid compounds that are abundant in cereals with highest contents in rye. Alkylresorcinols are suspected to show a wide range of favourable biological activities. For such and further testing, highly pure alkylresorcinol standards are required. Especially, purities >> 98% were partly difficult to obtain in the past. Here, we aimed to isolate the most abundant (saturated) alkylresorcinols from rye using countercurrent chromatography. To achieve very high purity, alkylresorcinol-containing extract (∼7.14 g) of rye grains

Characterisation, release and migration of phenolic compounds from resoles used in polyester-phenol coatings intended for food contact materials.

Resoles are multifarious pre-polymeric resins produced by the condensation of basic chemicals phenols, formaldehyde and optionally aliphatic alcohols like butanol. They are widely used as cross-linkers to form resistant internal coatings on metal surfaces of cans, containers or closures. Although the application of resoles is common in food contact, usually little is known about their exact composition, the toxicological hazards of their individual constituents and the migration of phenolic compounds, e.g., of the potentially endocrine-disrupting chemical bisphenol F. Our study fills major gap

Effects of processing and storage on pesticide residues in foods.

Pesticides are chemicals frequently used in agriculture to obtain maximum yield and improve product quality. Thousands of active ingredients and formulations of different pesticides are commercially available. Besides their advantages, a major disadvantage of pesticides is their residues, even though strict maximum residue limits have been set for each pesticide and permitted agricultural commodity. Permanence of pesticide residues on agricultural products depends on several factors such as the properties of pesticide, formulation, and applied concentration. Light, temperature, plant morpholog

[Arsenic Intake: Impact in Human Nutrition and Health].

Arsenic is an element that is widely distributed throughout the environment. Its compounds are mainly in the state of pentavalent and trivalent oxidation; and in inorganic and organic forms. Arsenical species vary in their degree of toxicity, with inorganic compounds being more toxic than organic and trivalent compounds more toxic than pentavalent compounds. There would be interconversion between the less toxic species and other more toxic species and the cooking and processing methods could affect it. Arsenic is a carcinogenic agent and causes multiple negative effects on human health in the
