Traditional diets and cultural beliefs affecting diabetes prevention and control in Africa.

The burden of type 2 diabetes mellitus in Africa is growing rapidly due to socio-economic changes, urbanization, and substitution of traditional and nutritious, high-fiber diets with ultra-processed, high-energy foods. This review explains the protective value of traditional African diets that contain native grains and fermented foods, but are under threat of westernization and cultural transitions. Moreover, cultural beliefs, social practices, dietary limitations, and gender roles strongly influence diabetes prevention and management practices on the continent. Community-based programs, schoo…

Generation of bioactive peptides during food processing.

Large amounts of peptides are naturally generated in foods through the proteolysis phenomena taking place during processing. Such proteolysis is carried out either by endogenous enzymes in ripened foods or by the combined action of endogenous and microbial enzymes when fermented. Food proteins can also be isolated and hydrolysed by peptidases to produce hydrolysates. endo-peptidases act first followed by the successive action of exo-peptidases (mainly, tri- and di-peptidylpeptidases, aminopeptidases and carboxypeptidases). The generated peptides may be further hydrolysed through the gastrointe

Perspective: Assessing Tolerance to Nondigestible Carbohydrate Consumption.

Human intestinal enzymes do not hydrolyze nondigestible carbohydrates (NDCs), and thus, they are not digested and absorbed in the small intestine. Instead, NDCs are partially to completely fermented by the intestinal microbiota. Select NDCs are associated with health benefits such as laxation and lowering of blood cholesterol and glucose. NDCs provide functional attributes to processed foods, including sugar or fat replacers, thickening agents, and bulking agents. Additionally, NDCs are incorporated into processed foods to increase their fiber content. Although consumption of NDCs can benefit

Yogurt Production.

Yogurt is a widely consumed dairy product that is obtained through the fermentation of lactic acid bacteria. During fermentation, these bacteria produce lactic acid, which lowers the pH and causes the coagulation of milk proteins. Metabolites of lactic acid bacteria, such as carbonyl compounds, nonvolatile or volatile acids, and exopolysaccharides, significantly affect the quality of yogurt. The production method also greatly influences yogurt characteristics. Yogurt can be produced in various forms, including solid, fluid, and soft-drinking types, depending on the manufacturing method employe

Kombucha-Derived Bacterial Cellulose for Active and Biodegradable Food Packaging: Production, Modification, Performance, and Current Challenges.

Kombucha fermentation generates two fractions of potential relevance to food-packaging applications: a fermented liquid containing organic acids, polyphenols and other metabolites, and a cellulose-rich pellicle formed by cellulose-producing acetic acid bacteria. However, the fermented beverage, raw pellicle and purified kombucha-derived bacterial cellulose (KBC) differ substantially in composition, functionality and food-contact suitability and should not be treated as interchangeable materials. This review critically examines bacterial cellulose formation during kombucha fermentation, purific

L: (+)-Lactic acid production from non-food carbohydrates by thermotolerant Bacillus coagulans.

Lactic acid is used as an additive in foods, pharmaceuticals, and cosmetics, and is also an industrial chemical. Optically pure lactic acid is increasingly used as a renewable bio-based product to replace petroleum-based plastics. However, current production of lactic acid depends on carbohydrate feedstocks that have alternate uses as foods. The use of non-food feedstocks by current commercial biocatalysts is limited by inefficient pathways for pentose utilization. B. coagulans strain 36D1 is a thermotolerant bacterium that can grow and efficiently ferment pentoses using the pentose-phosphate
