Research developments in the applications of radio frequency energy in muscle food processing and preservation: a review.

Radio frequency (RF) technology, characterized by rapid volumetric heating and deep penetration, has emerged as a promising strategy for muscle food processing and preservation. This review summarizes recent progress in RF applications in cooking, pasteurization, thawing/tempering, freezing, drying, and salt-reduction processing, with emphasis on heating mechanisms, energy absorption related to dielectric properties, and food matrix dependent processing responses. Beyond previous application specific summaries, this review provides an integrated analysis of RF-induced changes in proteins, lipi

Oral bio-accessibility of wheat allergens: the roles of food matrices and oral processing behaviors.

The oral mucosa is the first site of contact with food allergens, yet the influence of food matrices and oral processing on allergen release remains poorly understood. This study investigated the roles of bread matrix and mastication behaviors in the oral bio-accessibility of wheat allergens. Volunteers consumed breads with distinct structural profiles (baked, steamed, baguette; with/without shortening) under video monitoring. Results showed that the bread matrix did not alter the types of released proteins but significantly modulated their IgE-reactivity. The addition of shortening enhanced I

Response to: Debate in relation to "Ultra‑processed foods and human health: the main thesis and the evidence".

This response addresses criticisms by Ibsen and colleagues regarding the definition of ultra-processed foods (UPFs) by Nova, proposed mechanisms linking UPFs to health outcomes, and the choice of comparators in epidemiological studies. We argue that these critiques partially reflect a misunderstanding of Nova and how evidence on UPF has been generated. Nova classifies foods into four groups by the extent and purpose of industrial processing, not nutrient composition. Epidemiological studies primarily examine the health effects of the worldwide increasing exposure to the ultra-processed dietary

In vitro digestion and bioaccumulation of food-born processing contaminant 3-MCPD diesters in rats.

3-Monochloropropane-1,2-diol (3-MCPD) is a process-born contaminant formed during edible oil refining. While toxicity of free 3-MCPD is well established and strictly regulated, the digestive fate, absorption and tissue distribution of its fatty acid diesters remains insufficiently characterised. This study examined the hydrolysis and bioaccumulation of 3-MCPD diesters through in vitro gastro-intestinal digestion, their absorption/transport in lymph and plasma as well as their bioaccumulation in rat tissues. We showed that both, gastric and pancreatic lipases can hydrolyze 3-MCPD diesters, reac

Ultra-processed Foods and Gastrointestinal Cancer: Epidemiologic Evidence, Mechanistic Pathways, and Clinical Implications.

Ultra-processed foods (UPF), which the NOVA classification defines as industrial formulations composed largely of refined ingredients and additives, now account for a majority of caloric intake in many high-income countries. Epidemiologic evidence suggests that high UPF consumption may contribute to gastrointestinal (GI) malignancies independent of traditional nutrient-based dietary metrics. This review examines associations between UPF intake and colorectal, gastric, esophageal, and pancreatic cancers, integrating mechanisms that support biological plausibility. The association between UPF co

Ultra-Processed Foods and Mental Health in Children and Adolescents: Evidence from a Systematic Review.

Background/Objectives: The increasing consumption of ultra-processed foods (UPFs) has been associated in recent years with negative effects on both physical and mental health. Ultra-processed products have been increasingly linked with poorer mental health outcomes, with research suggesting associations with higher rates of depression, anxiety, and cognitive difficulties. The aim of this systematic review was to determine whether and to what extent UPF intake is linked to metal health in children and adolescents. Methods: The methodological approach involved a systematic review of 20 recent ep

When Ultra-Processed Foods are Eaten: The Missing Dimension in Exposure Measurement for Obesity Research.

PURPOSE OF REVIEW: Almost every study linking ultra-processed foods (UPFs) to obesity measures exposure as the proportion of energy or weight derived from Nova group 4 foods, averaged across days. This scalar is commonly treated as though it were the exposure itself, yet it embodies an untested assumption: that the timing and context of intake carry no information beyond total amount. This review examines what is lost when occasion-level intake is collapsed to a daily average and how that loss may affect epidemiological inference. RECENT FINDINGS: Controlled circadian-misalignment protocols a

Occurrence and Nationwide Risk Assessment of Typical Food Processing Contaminants in Human Milk in China.

Typical environmental exposure and food processing contaminants, including acrylamide (AA) and monochloropropanediols (MCPDs), are widely present in the national Total Diet Survey. Nevertheless, the dietary exposure to and associated health risk of AA and MCPDs for breastfed infants remain unclear. Here, we assess the occurrence of AA, 3-monochloropropane-1,2-diol (3-MCPD), and 2-monochloropropane-1,2-diol (2-MCPD) in 3344 human milk samples collected from 24 provinces in China and further characterize their geographic distribution profiles and potential health risk to breastfed infants. A biomimetic hybrid soft/rigid robotic masticator simulating Oral processing of solid foods.

Promoting healthy ageing becomes increasingly crucial with the growth in both the size and the proportion of older people in the worldwide population. In vitro models are advancing dietary solutions for older adults by enhancing food development and understanding the effect of masticatory impairments in food oral processing. However, current masticatory simulators lack replication of tongue biomechanics, critical for food manipulation and bolus formation. This study introduces a novel Biomimetic Hybrid Soft/Rigid Robotic Masticator (BioSRM), combining soft and rigid-bodied robotics to simulate

Excessive ultra-processed foods exposure aggravates ulcerative colitis via macrophage ferroptosis.

Ulcerative colitis (UC), a chronic inflammatory disease with global prevalence, is increasingly associated with environmental exposure to modern dietary hazards, particularly ultra-processed foods (UPFs) containing oxidized phytosterols. While industrial food processing techniques and repeated oil reuse are known to amplify formation of phytosterol oxidation products, their biological impacts on intestinal inflammation remain unexplored. This study focuses on 7-ketositosterol (KS), the most abundant phytosterol oxide found in UPFs, and its role in UC. Clinically, dietary analysis revealed a po

Progress in Low-Impact Processing Technologies to Deliver More Sustainable and Healthy Food Tomorrow.

Following the debate on food processing, resulting in a negative definition of ultra-processed products, the improvement of the food system could be pursued through the co-creation of new food solutions aimed at enhancing human health and increasing safety and sustainability, in particular by using neglected foodstuff, crops or by-products, and applying mild processing technologies. The proper management of mild/non-thermal processing technologies, such as dynamic and hydrostatic high-pressure, vacuum impregnation, ultrasound, pulsed electric field and cold plasma applications, can result in a

Ultra-processed foods and dietary habits of oncology patients: Risk factor or survival strategy.

The consumption of ultra-processed foods (UPFs) is continuously increasing, and there is growing evidence that these foods contribute to the development and progression of cancer. For oncology patients alone, maintaining nutritional status is crucial for tolerating treatments and improving survival. The aim of this paper is to review the role of UPFs in the diet of oncology patients, highlighting their potential health-damaging effects (e.g., increased inflammation, microbiome disruption, nutrient deficiencies) and potential benefits (e.g., easy accessibility, high energy content, specially fo

Ultra-Processed Foods and Respiratory and Allergic Diseases in Childhood: Epidemiological Evidence and Mechanistic Insights.

Ultra-processed foods (UPFs) are increasingly consumed worldwide, particularly during childhood, raising growing concerns for health. Although UPFs have been associated with obesity and cardiometabolic disorders, emerging evidence suggests a potential role also in respiratory and allergic diseases. This review critically examines the epidemiological evidence and biological mechanisms linking UPF consumption to respiratory and allergic outcomes in children. To this end, a structured literature search was conducted in the PubMed database, including articles published between 2006 and 2025, selec

Influence of different processing method on lignan content of selected Malaysian plant-based foods.

This research assessed the influence of pickling, fermentation, germination, and tea brewing on lignan content of a variety of food highly consumed in Malaysia. Lignans have been measured by a validated LC-MS/MS method. Secoisolariciresinol (SECO) was the most abundant compound in fermented and germinated samples. Pickling significantly decreased larisiresinol content by approximately 86 %. Fermentation increased lignan content in a mixture of flaxseed and mung beans (799.9 ± 67.4 mg/100 g DW) compared to the unfermented counterpart (501.4 ± 134.6 mg/100 g DW), whereas the fermentation of soyb

Effect of high pressure processing on migration characteristics of polypropylene used in food contact materials.

The migration of small molecular mass organic compounds from polypropylene (PP) copolymer films into food simulants during and after high pressure processing (HPP) was studied. An overlapping temperature profile was developed to isolate the pressure effect of HPP (700 MPa, 71°C, 5 min) from equivalent thermal processing (TP) at atmospheric pressure (0.1 MPa). Chloroform, toluene, methyl salicylate, and phenylcyclohexane were chosen as surrogate compounds, and were spiked into test polymer films at concentrations of 762-1152 mg kg-1 by a solvent soaking technique.
