Effect of chromium(III) gallate complex on stabilization of collagen.

To improve the stability of the collagen, here we studied the interaction of chromium(III) polyphenolic complex, [Cr(GA)2] (GA: Gallic acid) with collagen using various spectroscopic techniques. Circular dichroism studies show that the [Cr(GA)2] and gallic acid did not induce any structural perturbations on the triple helix of the collagen. Both differential scanning calorimetric(DSC) data and micro-shrinkage temperature studies showed that [Cr(GA)2] stabilized the collagen by 6±1°C compared to gallic acid. Hydrodynamic studies revealed that the viscosity of collagen drastically reduced in the…

SG-HQ2 inhibits mast cell-mediated allergic inflammation through suppression of histamine release and pro-inflammatory cytokines.

In this study, we investigated the effect of 3,4,5-trihydroxy-N-(8-hydroxyquinolin-2-yl)benzamide) (SG-HQ2), a synthetic analogue of gallic acid (3,4,5-trihydroxybenzoic acid), on the mast cell-mediated allergic inflammation and the possible mechanism of action. Mast cells play major roles in immunoglobulin E-mediated allergic responses by the release of histamine, lipid-derived mediators, and pro-inflammatory cytokines. We previously reported the potential effects of gallic acid using allergic inflammation models. For incremental research, we synthesized the SG-HQ2 by the modification of func…

Effects of polyphenols on the functional properties, digestibility, and iron bioavailability of potato protein-iron complexes.

We hypothesized that polyphenol addition (gallic acid, caffeic acid, quercetin) to potato protein-iron complexes could modulate protein digestibility and iron bioavailability, addressing iron deficiency risks exacerbated by low-bioavailability iron in plant-based diets. Quercetin increased protein digestion in the stomach and small intestine, while gallic and caffeic acids only increased its digestion in the stomach. Quercetin and caffeic promoted nearly iron release at all polyphenol-to-complex levels studied (0.5:1 to 3:1), whereas gallic acid only promoted iron release at higher ratios (3:1…

Criegee mechanism as a safe pathway of color reduction in sugarcane juice by ozonation.

The production of crystal sugar is based on sugarcane juice clarification through sulphitation, that is, heat treatment with sulfur dioxide. The use of ozonation as an alternative to sulphitation aims to eliminate the disadvantageous presence of residual sulfite in crystal sugar. Both treatments are used to reduce color of sugarcane juice. The objective of this work was to evaluate two process parameters (temperature and pH) to reduce gallic acid, a low molecular weight pigment (MW 170gmol-1) widely found in sugarcane. Gallic acid was used as a model compound in sucrose solutions. The results …

Complexing of toxic hydrolysable tannins of yellow-wood (Terminalia oblongata) and harendong (Clidemia hirta) with reactive substances: an approach to preventing toxicity.

Ruminants consuming either tannic acid or hydrolysable tannins from the Australian yellow-wood tree (Terminalia oblongata) and the Indonesian shrub Clidemia hirta are intoxicated by simple phenolics liberated in the gut. The affinity of these tannins and of the simple phenolic gallic acid for the two proteins casein and pepsin, polyvinylpyrolidone (PVP), activated charcoal and Ca(OH)2 was examined in vitro. The studies were undertaken to predict the effect of these phenolics on digestion and to identify substances that would act as antidotes by precipitating phenolics. Tannins but not gallic a…

Phenolic Acids Inhibiting Lysinoalanine Cross-Linking in Soybean Protein Isolate via Covalent Site Blocking and Conformational Stabilization.

Alkali-heat treatment is widely used to functionalize protein-based food materials but inevitably induces lysinoalanine (LAL), a harmful nonnatural cross-linked amino acid. Herein, p-hydroxybenzoic acid, 3,5-dihydroxybenzoic acid, and gallic acid were covalently grafted onto alkali-heat-treated soy protein isolate (SPI) models to elucidate the topology-dependent inhibition of LAL formation. The inhibitory effect increased with the hydroxyl number, with gallic acid showing the highest inhibition rate (68.25%). Covalent conjugation stabilized SPI conformation by reducing reactive-site exposure, …
