Thyme and oregano essential oils reduce adhesion of spoilage yeasts isolated from beverage processing environments.

AIMS: Essential oils (EOs) have emerged as promising alternatives to conventional sanitizers. Although their antifungal activity has been widely reported, studies on application as sanitizers in food processing environments remain limited. This study evaluated the adhesion capacity of seven yeast strains, specifically Wickerhamomyces anomalus and Pichia kudriavzevii, isolated from a beverage processing line. It also investigated the potential of oregano and thyme EOs, applied individually or in combination, to inhibit fungal growth and cell adhesion. METHODS AND RESULTS: Antimicrobial activit

Usefulness of Chromogenic Media in the Identification of Candida spp. Yeasts Compared to Mass Spectrometry.

Yeasts of the Candida genus are part of the normal human microbiota but can cause infections (candidiasis) under certain conditions. While Candida albicans remains the most common etiological agent, the prevalence of non-albicans Candida species-such as C. glabrata, C. tropicalis, C. krusei, C. parapsilosis, C. kefyr, C. lusitaniae, and the emerging multidrug-resistant C. auris-has been increasing. Effective treatment of candidiasis requires rapid and accurate identification of the causative species, particularly due to species-specific antifungal agent resistance patterns. The aim of this stu…

Revealing Non-Conventional and Thermotolerant Yeasts from Tropical Regions: Diversity and Potential Traits for Bioproducts.

The diminishing reserves of fossil fuels have spurred a global search for sustainable energy alternatives. Bioethanol, a renewable fuel derived from biomass, represents a promising alternative, particularly in tropical regions. Yeasts, key agents in ethanol fermentation, have attracted substantial attention for their ability to convert sugars into ethanol. However, the commonly used mesophilic yeast Saccharomyces cerevisiae is temperature-sensitive, limiting its effectiveness in tropical climates. Tropical countries such as Indonesia, Thailand, Vietnam, and Laos, harbor abundant non-convention…

Research progress on the fermentation characterization of non-Saccharomyces yeasts in fruit wines: a review.

This review highlights the pivotal role of non-Saccharomyces yeasts in enhancing fruit wine quality, addressing limitations of traditional Saccharomyces cerevisiae monocultures. It systematically elaborates their mechanisms in improving color stability (via anthocyanin derivatives and enzymatic actions), enriching aroma (through ethanol, esters, higher alcohol, terpenoids, and volatile acid regulation), and modulating mouthfeel (via glycerol, polysaccharides, and organic acid degradation). The findings underscore strain-specific metabolic traits and mixed fermentation dynamics, providing criti…

Energy conversion coupled to cyanide-resistant respiration in the yeasts Pichia membranifaciens and Debaryomyces hansenii.

Cyanide-resistant respiration (CRR) is a widespread metabolic pathway among yeasts, that involves a mitochondrial alternative oxidase sensitive to salicylhydroxamic acid (SHAM). The physiological role of this pathway has been obscure. We used the yeasts Debaryomyces hansenii and Pichia membranifaciens to elucidate the involvement of CRR in energy conversion. In both yeasts the adenosine triphosphate (ATP) content was still high in the presence of antimycin A or SHAM, but decreased to low levels when both inhibitors were present simultaneously, indicating that CRR was involved in ATP formation.…
