Assessment of peanut allergen Ara h1 in processed foods using a SWCNTs-based nanobiosensor.

The goals of this research were to develop a rapid single-walled carbon nanotube (SWCNT)-based biosensor and to employ it to commercial food products for Ara h1 detection. The SWCNT-based biosensor was fabricated with SWCNTs immobilized with antibody (pAb) through hybridization of 1-pyrenebutanoic acid succinimidyl ester (1-PBASE) as a linker. The resistance difference (ΔR) was calculated by measuring linear sweep voltammetry (LSV) using a potentiostat. Resistance values increased as the concentration of Ara h1 increased over the range of 1 to 105 ng/L. The specific binding of anti-Ara h1 pAb

Modeling optimal process conditions for UV-heat inactivation of foodborne pathogens in liquid foods.

The combination of ultraviolet radiation and heat (UV-H treatment) has been demonstrated as a promising strategy to overcome the limited UV germicidal effect in fruit juices. Nonetheless, there are so far no data regarding the efficacy of the combined process for the inactivation of bacterial foodborne pathogens in other liquid foods with different pH and composition. In this investigation, the optimum UV-H processing conditions for the inactivation of Escherichia coli, Salmonella Typhimurium, Listeria monocytogenes, and S. aureus in chicken and vegetable broth, in addition to juices, were det

Pathogenic psychrotolerant sporeformers: an emerging challenge for low-temperature storage of minimally processed foods.

Sporeforming bacteria are a significant problem in the food industry as they are ubiquitous in nature and capable of resisting inactivation by heat and chemical treatments designed to inactivate them. Beyond spoilage issues, psychrotolerant sporeformers are becoming increasingly recognized as a potential hazard given the ever-expanding demand for refrigerated processed foods with extended shelf-life. In these products, the sporeforming pathogens of concern are Bacillus cereus, Bacillus weihenstephanensis, and Clostridium botulinum type E. This review article examines the foods, conditions, and

Hazard and control of group II (non-proteolytic) Clostridium botulinum in modern food processing.

Group II (non-proteolytic) Clostridium botulinum poses a safety hazard in modern food processing, which consists of mild pasteurization treatments, anaerobic packaging, extended shelf lives and chilled storage. The high risk is reflected in the relatively large number of botulism cases due to group II C. botulinum in commercially produced foods during the past decades. Because of the high prevalence of group II C. botulinum in the environment, food raw materials may carry spores. Although group II spores are less heat-resistant than group I (proteolytic) spores, they can tolerate the heat trea

Safety evaluation of a natural tomato oleoresin extract derived from food-processing tomatoes.

Experimental and epidemiological studies indicate that consumption of tomato products containing high amounts of lycopene is associated with lowered cancer risk. The protective effects of lycopene may be related to its antioxidant potential. Lycopene has been demonstrated to inhibit oxidation. A proprietary, natural tomato oleoresin extract (NTOE), is a purified tomato oleoresin containing 6% lycopene produced from tomatoes. NTOE was evaluated for toxicological effects, and found the 50% lethal dose (LD(50)), derived from the acute oral toxicity study, was greater than 5000 mg/kg body weight.

Bridging food processing and human health: Bioavailability enhancement and redox-based modulation of proanthocyanidins.

Proanthocyanidins are a widely distributed class of natural polyphenols that have shown considerable potential in food nutritional fortification, foodborne hazard control, and chronic disease intervention owing to their pronounced antioxidant, antiglycation, and other biological activities. However, their structural instability and limited bioavailability in vivo substantially constrain the extent to which these bioactivities can be realized. Moreover, existing studies have largely focused on individual stages of the proanthocyanidin life cycle, with insufficient attention paid to the interact

Ultra-processed foods and continuous glucose monitoring metrics in adults with type 2 diabetes.

AIM: We examined associations between ultra-processed foods (UPFs) consumption and continuous glucose monitoring (CGM)-derived metrics using individual- and food-level measures of UPFs in adults with T2D. METHODS: Adults with T2D (n = 190) completed two 24-hour dietary recalls and wore blinded CGM devices for 14 days. Foods were classified by the NOVA system. Individual-level UPF intake was defined as the proportion of total energy or grams derived from UPFs (energy-weighted). Food-level intake was assessed as Mean UPF Energy (%) and Mean UPF Gram (%) across all reported food items (item-weig

Food-derived extracellular vesicles: processing sensitivity, structural integrity, and implications for dietary bioactivity.

Food-derived extracellular vesicles (FDEVs) are nanoscale membrane-bound structures naturally present in plant- and animal-derived foods, carrying diverse bioactive components including lipids, proteins, small RNAs, and metabolites. Increasing evidence suggests that FDEVs may contribute to dietary bioactivity; however, their physiological relevance remains difficult to establish due to the limited understanding of how food processing and gastrointestinal conditions influence their biological functions. Recent studies have highlighted that food processing can reshape multiple aspects of FDEV pr

Dissociating the hierarchical processing of perceptual and food category information under different task demands.

To clarify whether food category selectivity in the ventral visual pathway arises from genuine category-specific processing or low-level perceptual differences-a core premise of the diagnostic feature encoding hypothesis-and how it is modulated by task demands, this study assigned participants to perform either a perceptual (color-matching) or categorical (food/nonfood) one-back task. Using multivariate pattern analysis (MVPA) and cross-task representational similarity analysis (RSA) of EEG data, we found that perceptual features dominated early processing (100-200 ms), whereas food category i

Participatory Design Process of a Supportive Digital Platform to Enhance Local Urban Food Systems.

Digital tools have emerged as one promising strategy for supporting local food systems and strengthening access to food. However, top-down approaches often encounter resistance or low uptake of digital platforms among underserved users because of limited digital literacy, mistrust, or misalignment with on-the-ground realities. We employed a four-phased participatory design process for AgriShare NYC, a digital platform that documents diverse forms of food production across New York city. Through in-depth interviews with 17 growers and three participatory design workshops (n = 21), and the devel

Physiological Functions of the By-Products of Passion Fruit: Processing, Characteristics and Their Applications in Food Product Development.

The by-products of passion fruit are typically discarded during processing, contributing to resource waste and environmental harm. These residues are rich in dietary fiber and polyphenols, compounds linked to health benefits, including blood sugar regulation, improved lipid profiles, gut microbiome balance, and weight management. Beyond their nutritional value, these by-products possess dual functional roles in food systems: their bioactive components act as natural fortifiers and health-promoting agents. Recent studies indicate they can enhance food quality by improving water retention and te

The evidence is in: accountability needs to be injected into the policy-making process for household food insecurity reduction.

As the problem of household food insecurity perseveres, effective evidence-informed responses are badly needed. The systematic reviews of evidence compiled by the Public Health Agency of Canada provide an important foundation for such action, but they also indicate the need for accountability, so that precious public funds do not continue to be spent on initiatives with no evidence of impact. We need targets for food insecurity reduction and some accountability for policy interventions that come with significant public investments. Household food insecurity rates and the related adverse conseq

Evaluation of color photostability and structure of thylakoids in isolation and after undergoing food processing treatments.

Improving the photostability of natural chlorophyll remains a substantial challenge for its application in the food industry. Thylakoids in chloroplasts are pouch-like compartments contain over 90 % of total chlorophyll. In this study, the color photostability of thylakoids were evaluated. Accelerated photodegradation experiments were conducted at 5 °C under an intense illumination model (15,000 lm). Thylakoids exhibited a green retention rate of 79.2 % after five days of illumination, comparable to sodium copper chlorophyllin (78.1 %), a commonly used synthetic chlorophyll derivative. The lig

Association between ultra-processed foods and female infertility: a large cross-sectional study.

BACKGROUND: Infertility is a significant challenge in women's reproductive health, but the relationship between ultra-processed food (UPF) intake and female infertility remains unclear. This study aims to investigate the association between UPF intake and female infertility. METHODS: Using data from 3601 women in the NHANES database, UPF intake was defined as the percentage of energy consumed by UPF in each participant's daily total food intake energy. Propensity score matching (PSM) and logistic regression were applied to control for potential confounders and analyze the relationship between

The consequences of ultra-processed foods on brain development during prenatal, adolescent and adult stages.

Ultra-processed foods (UPFs) are highly refined formulations of non-nutritive compounds containing elevated amounts of sugar, fat, sodium, food additives, and dietary emulsifiers. Consumption of UPF is robustly linked to a range of non-communicable diseases, including obesity, type 2 diabetes, cardiovascular disease, and mental disorders in adults. While substantial research highlights the negative health impacts of UPFs in adulthood, their effects on brain development during critical periods of biological vulnerability, pregnancy, childhood, and adolescence, remain underexplored. During pregn

Toxicity of formaldehyde, and its role in the formation of harmful and aromatic compounds during food processing.

Formaldehyde is a highly reactive compound known to pose several health risks, including carcinogenic, neurotoxic, reproductive, allergic, immunological, genetic, and respiratory toxicity. While its free concentration in processed foods is typically low even it can be formed through various biochemical and chemical pathways in foods. This study aims to investigate the fate of formaldehyde in food processing from two key perspectives: (1) its role in the formation of other harmful compounds, such as heterocyclic aromatic amines, methylimidazole, advanced glycation end-products, and N-nitrosamin

Advancement in Technologies and Practices to Control Listeria monocytogenes Contamination within the Food Processing Environment.

In the expanding food processing environment, humans still face risks from certain harmful organisms that cause food contamination. One such ubiquitous organism is Listeria monocytogenes (L. monocytogenes), a facultative anaerobe, one of the infectious bacteria that can cause contamination in food processing settings. Food processing environments have inherent challenges in implementing preventive measures, including sanitation protocols, hygiene practices, advanced detection technologies and regulatory compliance. Advanced technologies and best practices are applied to control and prevent L.

Recent Advances in Physical Processing Techniques to Enhance the Resistant Starch Content in Foods: A Review.

The physical modification of starch to produce resistant starch (RS) is a viable strategy for the glycemic index (GI) lowering of foods and functionality improvement in starchy food products. RS cannot be digested in the small intestine but can be fermented in the colon to produce short-chain fatty acids rather than being broken down by human digestive enzymes into glucose. This provides major health advantages, like better blood sugar regulation, weight control, and a lower chance of chronic illnesses. This article provides a concise review of the recent developments in physical starch modifi
