Covalent organic frameworks (COFs) are an emerging class of designable porous materials that demonstrate tremendous potential for advancing food science. This Review systematically analyzes the linkage forms and synthesis strategies of COFs, focusing on their recent transformative applications in the food domain. Owing to their excellent physicochemical properties, COFs enable the highly sensitive detection of critical food hazards such as pesticide residues, environmental pollutants, and nitrites. Concurrently, COFs also exhibit broad application prospects in food preservation and lipase immo

This work primarily reviewed the response mechanism of fluorescent probes for H2S detection in foodstuffs in recent years, as well as the methodologies employed for detecting foodstuffs. Firstly, the significance of studying H2S gas as an important signaling molecule is introduced. Subsequently, a review of the response mechanism of the scientific community on how to detect H2S in foodstuffs samples by fluorescent probe technology is carried out. Secondly, the methods commonly used for detecting foodstuffs samples are discussed, including the test strip method and the spiking recovery methods.

Listeria monocytogenes, a causative agent of listeriosis, is a major foodborne pathogen. Among pathogens, L. monocytogenes stands out for its unique ecological and physiological characteristics. This distinct lifestyle of L. monocytogenes has a significant impact on food safety and public health, mainly through the ability of this pathogen to multiply at refrigeration temperature and to persist in the food processing environment. Due to a combination of these characteristics and emerging trends in consumer preference for ready-to-eat and minimally processed food, there is a need to develop eff

Ion mobility spectrometry (IMS) is an analytical separation and diagnostic technique that is simple and sensitive and a rapid response and low-priced technique for detecting trace levels of chemical compounds in different matrices. Chemical agents and environmental contaminants are successfully detected by IMS and have been recently considered to employ in food safety. In addition, IMS uses stand-alone or coupled analytical diagnostic tools with chromatographic and spectroscopic methods. Scientific publications show that IMS has been applied 21% in the pharmaceutical industry, 9% in environmen

Staphylococcal food poisoning (SFP) results from the consumption of foods containing sufficient amounts of one or more preformed staphylococcal enterotoxins (SEs). SEs are heat stable and can withstand heat at 121 degrees C for 10 min. Therefore, after SEs were produced in food, reheating of food is ineffective in preventing SFP. Among the SEs, SEA appears to be most frequently associated with food poisoning. SEA can be produced at the temperature range of 10-46 degrees C. Many researchers investigated SEA in various foods such as milk, cream, egg and mushroom at some temperatures. As the temp

Food hazards cause severe human illness and death worldwide every year. DNA walker possesses ingenious design and adaptable function. The structural advantage enables the DNA walker to accurately identify molecules and perform efficient mechanical movement. This feature provides a potential platform for food analysis. However, some reviews are roughly classified according to the structure of the walker, and some are only classified according to the biosensors used in analysis. Different from these, this review is the first time to show how DNA walkers achieve signal amplification in the analys

Changing consumer attitudes show an increased interest in non-chemical antimicrobials in food preservation and safety. This greater interest of consumers in more 'natural' or 'clean-label' food interventions is complicated by concurrent demands for minimally processed, ready-to-eat (RTE) foods with long shelf lives. Two viable interventions are bacteriophage (phage) and bacteriocins, a number of which have already been approved for use in food safety. Listeriosis is a serious foodborne infection which affects at-risk members of the population. Listeriosis incidence has increased between 2008 a

This review provides a comprehensive overview of strategies to mitigate pesticide residues in food, examining both household and industrial processing techniques alongside the emerging role of Artificial Intelligence (AI). Simple household methods, such as washing, peeling, and thermal processing (e.g., boiling, frying), are effective. For instance, washing with running water achieves a reduction of up to 77% in residue for some vegetables. Additionally, processes like jam-making or frying can significantly reduce specific residues. Industrially, advanced methods such as ozonated water washing

Resilient contamination formed by foodborne pathogens in food processing environments-including biofilms, persister bacteria, viable but non-culturable (VBNC) cells, and spores-are the root causes of persistent cross-contamination and recurrent food safety risks. However, existing studies primarily characterize individual contaminants phenotypically, lacking systematic integration of these four persistent states from shared mechanisms to targeted interventions. This review first establishes a comprehensive framework classifying these four states as "resilient contaminants" in food environments

Although many cases of Campylobacter and Salmonella enteritis have been attributed to the undercooking of poultry and other foods, cross-contamination between raw and cooked foods via food contact surfaces and worker contact has also been identified as a significant risk factor. Cross-contamination may be particularly important in relation to the high prevalence of contamination in raw poultry products and other foods and the low infectious doses that have been reported for Campylobacter species. Lag phase and decimal reduction times (D-values at 27 degrees C [81 degrees F] and 60 to 62% relat

Soil floors are common in low-income countries and can harbor contamination from unsafely managed human and animal fecal waste. Soil/dust ingestion directly from floors or indirectly via hands, drinking water and food can significantly contribute to children's ingestion of fecal organisms. We assessed if finished (e.g., concrete) floors are associated with lower E. coli contamination in the domestic environment in rural Bangladesh. We collected samples from 1864 households over 3.5 years, including stored drinking water, child and caregiver hand rinses, courtyard soil, food, and flies (n=24,11

Honey is a valuable natural product prized for its nutritional and therapeutic properties, including antioxidant, antimicrobial, and anti-inflammatory effects. However, in addition to health-promoting compounds, honey may also contain plant-derived toxins, contaminants, and degradation products. Certain phytotoxins-such as pyrrolizidine alkaloids, grayanotoxins, triptolide, celastrol, gelsedine-type alkaloids, and tutin-can be transferred to honey from specific plant sources and pose health risks, particularly at high doses or with long-term exposure. Furthermore, compounds like 5-hydroxymethy
